French White Bean and Cabbage Soup image

Steps:

  • Heat the oil in a large saucepan over medium heat.
  • Add in the onion, carrot, and garlic; cover and cook 5 minutes or until softened.
  • Transfer the cooked vegetables into a 6-quart slow cooker.
  • Add in the cabbage, potato, beans, stock, and thyme; season to taste with salt and pepper.
  • Cover and cook on LOW for 8 hours.
  • Just before serving, stir in the liquid smoke (if using), and parsley; taste to adjust seasonings.

2 tablespoons olive oil
1 medium yellow onion, chopped
1 medium carrot, chopped
3 garlic cloves, minced
1 small green cabbage, cored and shredded
1 large yukon gold potato, peeled and diced
1 (15 1/2 ounce) can cannellini beans, drained and rinsed (or other white beans)
6 cups vegetable stock
3/4 teaspoon dried thyme
salt
fresh ground black pepper
1 teaspoon liquid smoke (optional)
1 tablespoon minced fresh parsley leaves

Bibianne's French Canadian Cabbage Soup image

Steps:

  • Boil beef bone and onion in soup pot filled half way with water for 20 minutes.
  • Add barley and simmer for another 15 to 20 minutes.
  • Remove beef bone and cut off cooked meat.
  • Chop meat into small pieces and return to pot.
  • Add carrot and cabbage.
  • Simmer until carrot is tender.

My cousin gave me a cookbook with some French recipes in it for Christmas one year. This recipe was in it and has been a hit with my family ever since. We even sold it to the pool hall for their daily soup special and it was a hit with the general public too. I like a piece of warm french bread served with it.

French Cabbage Soup image

Steps:

  • Chop up all vegetables.
  • Place butter in soup pot over medium heat.
  • Once melted, add the cabbage, leeks, carrot, turnip, onion, celery and garlic.
  • Stir occasionally until the vegetables are tender, but not browned.
  • Peel potatoes and cut into large pieces.
  • Add potatoes and drained beans to pot.
  • Add the water and broth.
  • Season to taste with salt & pepper.
  • Simmer for 1 hour.
  • Cut smoked sausage into small pieces and fry until browned.
  • To serve, place a few pieces of sausage in the bottom of your soup bowl and ladle the soup over them.

Steps:

  • Place split peas, carrots, celery, leeks, onion, garlic, bacon, thyme, parsley and stock to cover in a large pot. Put lid on, bring to the boil and simmer rapidly for about 1 hour, or until the peas are very tender.
  • Blend the soup and season to taste. Serve sprinkled with a little pepper with warm crusty rolls.
  • Chef's Notes: Terrill has commented in her review that split peas do not need to be soaked. From my experience of using split peas, I would agree: I have never soaked split peas before, but that's what Huey specified in his recipe, and that bit I retained, though I have modified the recipe in other ways. Some people always salt eggplant before using it; others don't etc. etc.! So if you are making this recipe, feel free to decide on this point for yourself!
