APPLE PIE BY GRANDMA OPLE
This was my grandmother's apple pie recipe. I have never seen another one quite like it. It will always be my favorite and has won me several first place prizes in local competitions. I hope it becomes one of your favorites as well!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
- Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
- Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

MAIDA'S BIG APPLE PIE

Steps:
- For the filling, melt the butter in a large pan with a cover. Add apples and sprinkle with the sugar and cinnamon. Cover pan and cook over medium heat for 5 minutes, until apples have exuded juices. Uncover and continue cooking, stirring occasionally, until apples are tender. About a third will have disintegrated, and the rest of the apple slices should remain intact. Cool the filling. May be made several days in advance and stored, covered, in the refrigerator.
- To form the pie, preheat the oven to 375 degrees and set a rack in the lowest level. Roll dough to about a 16-inch diameter and center on pan. Spoon filling into center of disk of dough and fold overhanging dough in toward center of pie. Brush the top of the folded-over dough with the egg wash and sprinkle with the sugar.
- Bake the pie about 40 minutes, until the dough is a deep golden color and the filling is bubbling. Cool slightly before serving. Or cool completely and reheat before serving
BIG APPLE PIE
Steps:
- Preheat oven to 425 degrees. Peel and core the apples, and cut them into slices. Place in a large bowl. Add sugar, apple cider or vinegar, cinnamon, salt, pepper and flour. Mix well.
- Line a deep-dish 9- or 10-inch metal pie pan with half the pastry, leaving a generous top edge. Prick the bottom of the pastry all over with the tines of a fork. Transfer apples to pie tin, mounding slightly in center. Cut butter into bits, and distribute over apples.
- Cover apples with the other half of the pastry. Trim around edges, and pinch the top and bottom pastry together. Using a pastry brush, paint the top of the pastry with the egg wash. With a sharp knife make a small hole in the center of the pastry. Make five cuts, each about three-inches long, radiating from the center hole.
- Put the pie pan on a baking sheet, and bake on the lower level of the oven for 10 minutes. Reduce the heat to 325, and bake for about 50 minutes longer, until the crust is deep golden brown. Remove to a rack, and cool. Serve warm or at room temperature with whipped cream, creme fraiche or ice cream.
MILE-HIGH APPLE PIE
If you've ever prayed for an apple pie recipe with a substantial, luscious, juicy apple filling, but without a flood of juice when you cut it, then this tall, majestic creation is for you. Potato starch keeps the filling inside the pie where it belongs, but without the chalky, pasty texture often caused by using flour. The juices here are thick and clear, without that thick, sticky 'supermarket' feel. They coat the apple slices lightly and beautifully with no soupiness.

- Preheat oven to 425 degrees F (220 degrees C). Position an oven rack in the lower part of the oven and place a baking stone on it.
- Place the apples into a large mixing bowl, and toss with the lemon juice.
- Stir the potato starch, 3/4 cup sugar, cinnamon, and nutmeg together in a bowl.
- Roll out half of the pie crust pastry on a lightly floured surface and fit it into a 10 inch pie plate. Pile half the apples into the crust, and dot with half the butter pieces. Sprinkle half of the potato starch-cinnamon sugar mixture over the apples. Pile the remaining apples into the pie plate. Sprinkle with the remaining butter pieces and sugar mixture. Roll out the remaining pie crust pastry, and place carefully over the apples. Pinch and crimp the edges to seal the crusts. Use a fork to poke holes in the top crust in a few places. Brush the top crust with milk, and sprinkle with 1 tablespoon sugar.
- Place the pie in the preheated oven on the baking stone. Immediately lower the heat to 350 degrees F (175 degrees C). Bake until the crust is golden brown, about 60 minutes. Check half way through the baking time, and cover the edges with aluminum foil for the last 30 minutes if necessary to prevent over-browning. Cool 3 hours on a wire rack before serving.

APPLE PIE
Baking a pie from scratch takes a little patience, but watching your friends and family enjoy the results makes it all worthwhile.

- Lightly flour a large piece of waxed paper; place a disk of dough in center. Rolling from center outward, form into a 12-inch circle. (Use paper to rotate dough, and flour rolling pin and paper as necessary to prevent sticking.) Transfer dough (still on paper) to a baking sheet; cover and refrigerate. Repeat with second disk of dough.
- Preheat oven to 450 degrees with a rack set in lowest position. Remove first circle of dough from refrigerator; wrap around rolling pin (discarding paper), and carefully unroll over a 9-inch pie plate. Gently lift edges and lower dough into the pie plate so it hugs bottom and sides. Avoid stretching the dough, which will make it shrink during baking. Refrigerate.
- Place lemon juice in a large bowl. Peel, core, and cut apples into 1/4-inch-thick slices; halve crosswise, and add to lemon juice (to keep them from turning brown) as you work. Add sugar, flour, cinnamon, and salt; toss to combine.
- Remove dough-lined pie plate from refrigerator. Fill with apple mixture, gently packing apples and mounding slightly in center; dot with butter. Lightly brush rim of pie shell with water. Remove remaining circle of dough from refrigerator. Lay over apples; press along moistened rim to seal. Using kitchen shears, trim overhang to 1 inch.
- With floured fingers, fold overhang under itself to form a thick rim; pinch between thumb and forefinger to form a uniform edge around the rim of the pie plate.
- To crimp edges: With thumb and index finger of one hand, gently press dough against knuckle of other hand; continue around pie. (Deep indentations anchor dough on rim and prevent it from sliding down sides of pie plate during baking.)
- With a floured paring knife, cut 5 to 6 slits in top of pie, radiating from center; place pie plate on a rimmed baking sheet. Bake 20 minutes; reduce heat to 375 degrees and bake until crust is golden and juices are bubbling, 50 to 60 minutes more. If edges brown too quickly, cover with aluminum foil. Cool completely, at least 6 hours, before serving.
TRADITIONAL APPLE PIE
From Mark Bittman's "How to Cook Everything" I usually don't thicken the filling for a simple apple pie, but if you want to make sure the juices don't run, add 1 1/2 Tablespoons cornstarch or instant tapioca when you toss the apples with the spices. I also keep spices to a minimum, since I'd rather taste the apple; you could safely double their quantity if you like a spicy pie, and add a pinch of all spice and/or cloves if you like.

- Toss together the sugars, spices, and salt. Peel and core the apples and cut them into 1/2 to 3/4 inch slices. Toss the apples with the lemon juice and the dry ingredients, adding the cornstarch or the tapioca if you want a less runny pie.
- Pile the apples into the rolled out bottom crust, making the pile higher in the center than at the edges. Dot with butter. Cover with the top crust. Decorate the edges with a fork or your fingers, using any method you choose. Refrigerate while you preheat the oven to 450.
- Place the pie on a cookie sheet and brush the top lightly with milk; sprinkle with sugar. Use a sharp paring knife to cut two or three 2 inch long vent holes in the top crust. This will allow steam to escape. Place in oven for 10 minutes. Reduce oven temperature to 350 and bake another 40 to 50 minutes, or until the pie is golden brown. Do not underbake. Cool on the rack before serving to room temperature.
