BUTTERMILK CHEDDAR BISCUITS
Steps:
- Preheat the oven to 425 degrees F.
- Place 2 cups of flour, the baking powder, and salt in the bowl of an electric mixer fitted with the paddle attachment. With the mixer on low, add the butter and mix until the butter is the size of peas.
- Combine the buttermilk and egg in a small measuring cup and beat lightly with a fork. With the mixer still on low, quickly add the buttermilk mixture to the flour mixture and mix only until moistened. In a small bowl, mix the Cheddar with small handful of flour and, with the mixer still on low, add the cheese to the dough. Mix only until roughly combined.
- Dump out onto a well-floured board and knead lightly about 6 times. Roll the dough out to a rectangle 10 by 5 inches. With a sharp, floured knife, cut the dough lengthwise in half and then across in quarters, making 8 rough rectangles. Transfer to a sheet pan lined with parchment paper. Brush the tops with the egg wash, sprinkle with salt, if using, and bake for 20 to 25 minutes, until the tops are browned and the biscuits are cooked through. Serve hot or warm.
RED LOBSTER® CHEDDAR BISCUITS
I made these with baked potato soup and loved it. Great addition! I gave them to a friend and he said they tasted just like the ones at Red Lobster®. The recipe will yield more if made into smaller biscuits. They are best served fresh out of the oven.

- Preheat the oven to 450˚F (230˚C).
- In a large bowl, combine the Bisquick and butter until crumbly.
- Add the milk, dried parsley and shredded cheddar and mix to combine. The dough will be sticky.
- Take a handful of dough, flatten, and place a cube of cheese in the middle. Roll the dough around the cube of cheese. Place on a parchment-lined baking sheet and repeat with the remaining dough and cheese.
- Bake for 10-15 minutes, until golden brown.
- While the biscuits are baking, make the butter topping. Combine the melted butter, garlic powder, and Old Bay seasoning.
- Once the biscuits are done baking, brush the butter topping over each biscuit.

- Preheat oven to 400F degrees.
- Combine first 6 ingredients in food processor and blend.
- Add butter and cut in, using pulse, until fine meal forms.
- Transfer to large bowl, mix in cheese.
- (Can be prepared 4 hours ahead, cover and chill).
- Mix enough buttermilk into flour mixture to bind dough.
- Turn out onto floured surface and knead gently until combined, about 10 turns.
- Pat out dough to 3/4" thickness.
- Using 3" biscuit cutter, cut out biscuits.
- Gather scraps, pat out to 3/4" thickness and cut additional biscuits.

- Position a rack in the upper third of the oven and preheat to 425 degrees. Lightly mist a large baking sheet with cooking spray.
- Make the biscuits: Pulse the flour, baking powder, sugar and salt in a food processor. Add the shortening and pulse until combined. Add the butter; pulse 4 or 5 times, or until the butter is in pea-size pieces. Add the cheese and pulse 2 or 3 times. Pour in the milk and pulse just until the mixture is moistened and forms a shaggy dough. Turn out onto a clean surface and gently knead until the dough comes together. - 1. Preheat your oven to 425 deg F. Line a dark baking tray with parchment paper. Alternatively, you can butter a cast iron skillet. Set it aside.
- 2. Place flour, baking powder, salt, both chopped garlic and garlic powder, parsley, chili flakes and sugar in a mixing bowl. Add cold and cubed butter to the bowl. Cut and mix butter into dry ingredients using a pastry cutter/fork. Combine till coarse crumbs form.
- 3. Add in cheddar cheese and add 1/2 cup of cold buttermilk. Stir it all together till all ingredients combine well. Do not over work the dough. It will appear very crumbly!
