  • Puree two 14-ounce cans black beans (drained and rinsed), 2 minced garlic cloves, 1/4 cup each olive oil and lemon juice, 1 tablespoon white wine vinegar, 1 teaspoon ground cumin and a pinch each of salt and pepper in a food processor until almost smooth. Let sit 15 minutes before serving.

  • Combine beans, water, lemon juice, garlic, cumin, chili powder, onion powder, and salt in a food processor; process until thick and smooth, adding more water if needed to reach desired thickness.

Steps:

  • For the green goddess white bean dip: In a food processor, puree the white beans, olive oil, basil, chives, tarragon, lemon juice, anchovy paste and salt together until smooth, scraping down the sides with a rubber spatula as needed. Refrigerate until ready to use.
  • For the Gorgonzola-cucumber dip: In a medium bowl, fold together the sour cream, Gorgonzola, cucumbers, dill, lemon zest and salt. Refrigerate until ready to use.
  • To serve, place white bean dip, Gorgonzola-cucumber dip and the guacamole in separate bowls. Surround the dips with vegetable crudites, pita chips, tortilla chips and pretzels.

  • In a food processor, cover and process cream cheese until smooth. Add half of the beans; cover and pulse until blended.   • Heat bacon fat in a frying pan, and add black beans.
  • Simmer until beans are soft, about 10 minutes, and smash some until you get a thickened consistency.
  • Add cream cheese and gorgonzola cheese and mix until well blended and cheeses are melted.
  • Add the garlic cloves and Tabasco sauce or Louisiana hot sauce to taste.
  • Refrigerate. When ready to serve heat in a 350 degree oven or nuke until hot and bubbly.
  • Add sliced green onions and cilantro and serve immediately.
