- Preheat oven to 375°F with racks in upper and lower thirds.
- Arrange bacon slices in 1 layer (not overlapping) on racks of 2 large broiler pans (if you only have one, use a large rectangular metal rack set inside a large baking pan for the second). Bake until fat is rendered but bacon isn't crisp, about 20 minutes. Drain on paper towels.
- Arrange all of bacon in 1 layer on rack of 1 broiler pan. Brush top with syrup and sprinkle with pepper. Bake until bacon is crisp and deep golden, 20 to 25 minutes. Drain, glazed side up, on paper towels.
BLACK PEPPER MAPLE BACON

- Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil then a wire rack.
- Whisk together the maple syrup, pepper, and mustard. Lay the bacon on the rack being careful not to overlap. Brush the bacon with the syrup mixture.
- Put the baking sheet on the top rack of the oven and bake until golden and crisp, 18 to 20 minutes. Remove from the oven and let cool slightly before serving.
GLAZED BLACK PEPPER BACON

- Preheat the oven to 350 degrees F. Line a rimmed baking pan with 3 layers of foil.
- Arrange the bacon on the prepared baking pan in a single layer, then sprinkle evenly with the sugar and pepper. Bake until well browned, 35 to 40 minutes. Drain on paper towels and serve.

Steps:
- Cut bacon in half lengthwise and then crosswise into 1/4-inch pieces; fry in a skillet over medium heat until crisp, 5-7 minutes. Transfer pieces to a paper towel and cool.
- Adjust oven rack to middle position and heat oven to 475ºF. Line a large baking sheet with parchment paper.
- Whisk flour, baking powder, baking soda, sugar, salt and pepper in a large bowl. Stir in bacon pieces.
- In a medium bowl, combine cold buttermilk and 8 tablespoons melted butter, stirring until butter forms small clumps.
- ***This may look like a mistake, but it's one of the secrets of this recipe. The clumps of butter are similar to small bits of cold butter in biscuits prepared by the traditional method. As the butter melts during baking, the steam helps the biscuits rise and gives them a light and fluffy interior.
- Add buttermilk mixture to dry ingredients and stir until just incorporated and batter pulls away from sides of bowl.
- Using a 1/4-cup dry measure, scoop level amounts of batter and drop onto baking sheet (biscuits should measure about 2 1/4-inches in diameter and 1 1/4-inch high). Space biscuits 1 1/2-inces apart.
- Bake until the tops are golden brown and crisp, 12-14 minutes.
- Remove from oven and brush tops with melted butter. Let cool 5 minutes before serving.
- Bring on the gravy!
- ### Other variations - omit the bacon and pepper and add:.
- Cheddar Scallion - 1/2 cup grated cheddar cheese and 1/4 cup thinly sliced scallions.
- Parmesan Rosemary- 3/4 cup grated Parmesan cheese and 1/2 teaspoons finely minced rosemary.

- Heat oven to 400 degrees F.
- Put the bacon on a rack over a roasting pan.
- Lightly sprinkle the bacon with brown sugar& the black pepper.
- Bake apprx 15 minutes or until done.
- It should be golden& crispy.
- Serve really hot.
BLACK PEPPER BACON-MAC AND CHEESE
Steps:
- Heat oven to 400°F.
- Cook Macaroni as directed on package.
- Meanwhile, melt butter in large saucepan on low heat. Add flour; cook and stir 2 min. or until bubbly. Gradually stir in milk; bring to boil on medium heat, stirring constantly. Simmer on medium-low heat 3 to 5 min. or until thickened, stirring constantly. Add Cheese Sauce; cook and stir 2 min. Remove from heat.
- Drain macaroni; set aside. Chop bacon. Reserve 1 Tbsp. bacon for later use. Add remaining bacon to cheese sauce in saucepan along with the macaroni; mix lightly.
- Spoon into 1-1/2-qt. casserole sprayed with cooking spray; sprinkle with bread crumbs.
- Bake 10 min. or until hot and bubbly. Top with reserved bacon.
