KATHYJO'S BAKED BANANA SQUASH
I love yellow squash, of any kind. My mother used to make it for me and I just fell in love with that vegetable. Wish my own children liked it as well as me, so once in a while I will make one for me. I gave up trying to get them to try it, they will like it!!! It didn't work.. all the more for me!

Steps:
- 1. Take your pieces of squash and wash them. Place in sprayed pan with the inside facing up. With fork, make small punctures over the inside of squash
- 2. Melt butter and brush it over the squash flesh, and sprinkle the cinnamon over the butter.
- 3. Place in oven at 350 degrees and bake, for about 40 minutes. Baste it several times with more butter.
- 4. Test the squash with a fork or knife inserted and if it goes through and is all soft, then it is done. The outside layer of squash will be soft too. If not, bake a few more minutes until it is. I like mine to just begin to get a nice crust on the top.
- 5. Take out of oven and let it cool a bit. It has a nice sweet flavor to it and the butter with cinnamon just makes it better. Delicious!!
BAKED BUTTERNUT SQUASH

- Preheat oven to 350 degrees F (175 degrees C).
- Place squash, cut sides down, in a 9x13 baking dish. Pour water into dish around squash halves.
- Bake in the preheated oven until tender and easily pierced with a fork, about 1 1/2 hours. Carefully remove the skin with a fork; it should be very easy to remove. Top squash halves with butter and season with salt and pepper to taste.

- Preheat oven to 450°. Place squash in a large bowl. Add oil and seasonings; toss to coat., In a shallow bowl, mix bread crumbs and cheese. Dip squash in crumb mixture to coat both sides, patting to help coating adhere. Place on parchment-lined baking sheets. Bake 20-25 minutes or until golden brown, rotating pans halfway through baking.

BOHANAN'S BAKED SQUASH
Steps:
- Heat oven to 350 degrees. Trim and discard ends of squash, cut lengthwise into fourths and crosswise into 1/2 inch pieces. Place squash into a large saucepan, cover with water, add a big pinch of salt, bring to a brisk simmer and cook until tender, about 10 minutes. Drain thoroughly. Place saucepan with squash back on stove (with burner turned off/or very low) and allow any excess moisture to evaporate (about one minute). Stir in 1/2 stick butter and American cheese. Mix sugar, mayonnaise, salt and black pepper together and stir into squash mixture. Beat egg and then stir into squash mixture and place in greased oven proof baking dish (8X8). Use unsalted butter for greasing. For topping, mix 1/2 stick unsalted melted butter and crushed club crackers together. Sprinkle cracker topping evenly over casserole and bake until squash mixture is firm and the top is browned, about 30 - 35 minutes.
