SUPER EASY: ZUCCHINI SIDE DISH

I created this easy side dish for my DH who is very picky with regards to what vegetables he will eat.

Super Easy: Zucchini Side Dish image

Steps:

  • Slice up zucchini cross wise in thin slices about 1/8" thick.(Does not have to be precise). Set aside.
  • In skillet on medium low heat, add 1 tablespoon butter and saute onion, stirring frequently until tender about 3-5 minutes.
  • Add zucchini stirring frequently to lightly saute for 2 minutes.
  • Add 1 tablespoon butter and then sprinkle dill weed. Stir the dill evenly throughout.
  • Remove from heat and serve. Enjoy!

2 tablespoons butter
1/2 cup vidalia onion (sliced or diced)
1 zucchini (medium sized)
3 tablespoons dill weed (freeze dried or fresh)
1 dash salt (to taste)
1 dash black pepper (to taste)

Easy Zucchini-Tomato Side Dish image

Steps:

  • Heat olive oil in a large skillet and cook onion until soft and translucent, about 5 minutes. Add garlic and cook for 30 seconds. Add zucchini and cook until softened, about 3 minutes. Stir in tomato paste and tomato. Season with herbes de provence, salt, black pepper, and sugar. Stir in basil and serve.

This is a great and simple summer recipe as I am always looking for new things to do with all the zucchini out of my garden. I actually owe this one to my good buddy Mike, as he came up with it first.

Grilled Zucchini image

Steps:

  • Slice the zucchini into 1/4 inch fillets - longways.
  • Mix the olive oil and all the seasonings in a one cup mixing container or small bowl.
  • Coat all of the zucchini pieces in the mixture and place on a plate to take out to the grill.
  • Make sure the grill is pre-heated and place the seasoned zucchini slices on the grilling surface.
  • Cook for 5-7 minutes on each side.
  • Note: The zucchini should be soft throughout when poked with a fork and have nice grill marks on each side when they are done. Some pieces made need to be rotated and cooked a little longer if they are on the edge of the grill or out of "the sweet spot". Now you have a great side dish, or something special to treat your vegetarian friends that you can cook along side the dogs and burgers at your next cookout or family gathering.

BONNIE'S EASY ZUCCHINI SIDE DISH image

Steps:

  • Wash and trim the zucchini, peeling about half of a zucchini and leaving the rest of the peeling on. Slice the zucchini in half lengthwise into two pieces, then slice each half again. Now take each of the four pieces and cut into 1/2 inch slices. Make as uniform as possible. Prepare the second zucchini the same way.
  • Take a ziplock bag and put the oils, sesame seeds, cheese, and spices in it, add the zucchini slices. Press the air out of the bag , close it, and knead the zucchini and the oil mixture until all the zucchini slices are covered evenly.
  • Pre-heat oven to 400 degrees. Prepare a cookie sheet with parchment paper. Don't grease it. Spread the zucchini in a single layer on the parchment paper.
  • Bake the zucchini in the oven for about 20 minutes. The time will depend on your oven, climate and personal preference on how done you want it. After 15 minutes, check every two minutes until it is to your liking. Serve immediately.
  • Enjoy!
  • Optional ingredient: Add 1 small diced tomato, room temperature to the bowl of zucchini, toss before serving.
