ONE-PAN BRATS AND CABBAGE

Steps:
- Place a large cast-iron skillet over medium-high heat. Add vegetable oil and heat until shimmering.
- Carefully place the brats in the skillet and cook, turning occasionally, until browned on all sides, 6 to 8 minutes. Add apple juice and reduce heat to medium-low. Cover the skillet and cook until the sausages are cooked through, about 10 minutes more. Remove the sausages and set aside, leaving any cooking liquids in the skillet.
- Add the onions and cook, stirring occasionally, until they have softened and browned slightly, about 5 minutes. Add the coleslaw mix, apple cider vinegar, caraway seeds and red pepper flakes, then season with salt and pepper and stir to combine. Cook, stirring occasionally, until the coleslaw is wilted, about 5 minutes more. Stir in the sliced apples and let cook until warmed through, another 2 minutes.
- Return the cooked sausages to the skillet and serve.
BRATS N RICE
Basic in ingredients, but full of flavor. This is one of those recipes that is quick to put together with ingredients you have on hand. Possibly it would cook more quickly with Minute Rice, but you might not want to brown it as long as the vegetables.

Steps:
- Melt bacon grease in large skillet.
- Add brat pieces and brown over medium heat.
- Remove when they are no longer pink and set aside.
- Add additional bacon grease if necessary and add rice, carrots, garlic and onions and brown slightly. Rice should be brown, carrots beginning to soften and onions should be translucent.
- Add the the chicken broth, 1/2 can water and brats. Stir and cover. Simmer over med-low heat for 30-45 minutes, or until broth is absorbed and rice is fully cooked.
BRATS N' GREENS

- Preheat the oven to 200°F. Turn the electric griddle to medium-low and heat the oil. Add the onions and sprinkle with some salt and pepper. Add the bratwurst around the onions and cook until the onions are slightly charred on the bottom, 3 to 4 minutes. Turn the onions (don't worry if the rings come apart), sprinkle with some salt and pepper and cook until the second side is charred and the onions are crisp-tender, 4 minutes. Transfer the onions to a medium bowl and set aside.
- Keep an eye on the brats while the onions are cooking; turn them frequently until they are deep brown all over and an instant-read thermometer inserted in the center registers 165°F, about 20 minutes total. Transfer the brats to a small rimmed baking sheet and keep warm in the oven. While they are browning, butter the insides of the buns.
- Put the kale on the griddle and turn once or twice with tongs to coat with the brat drippings. Season lightly with salt and keep turning until the kale is tender, about 2 minutes. Transfer to the bowl with the onions.
- Wipe the griddle clean with a paper towel. Add the buns butter-side down and cook until golden and toasted, about 2 minutes. To serve, spread mustard on the buns, add the brats and top with the kale and onions.
BRATS N' TOTS BAKE
This recipe calls for bratwurst with casings removed but I actually found bratwurst patties that save you the trouble! From Taste of Home

- Crumble bratwurst into large skillet; add onion.
- Cook over medium heat until meat is no longer pink; drain.
- Stir in the soup.
- Transfer to a greased 13 in x 9 in baking dish.
- Top with tater tots and sour cream.
- Sprinkle with cheese.
- Bake, uncovered at 350 degrees for 35-40 minutes.
BBQ BRATS 'N BEER
I made this recipe last night for the first time and they are good! This is great if you are having a gang in and want a "do it yourself" style dinner (whatever) have baked beans on the side.

- Put the brats, onions, peppercorns, cloves, garlic in a saucepan, pour in the beer.
- Bring to a boil and simmer the brats 15 minutes.
- Drain (you can do this early in the day and then just have the BBQ step to do before serving).
- BBQ the brats about 10 minutes.
- Spray with water while BBQing to form a crisp skin.
- Serve on the roll with mustard and hot peppers or other relish or serve them as your meat for dinner.

- 1.first season the neck bones really well with salt/pepper. Sit aside.
- 2.bring big pot of water to a boil, then add neck bones.
- 3.Boil for around an hour, until ½ the water or a little more is gone.
- 4.Reserve 3 ½ - 4 cups of the boiled water, discard the rest.
- 5.Put the reserved water back in the pot and bring to a boil.
- 6.Add the rice, stir, and leave on the heat for 1 minute.
- 7.Remove from heat and put a lid on it. Let it stand 5-8 minutes. Then fluff the rice with a fork.
- 8.Serve.
