FRIED BROWN RICE
This is delicious! The original recipe came from the Desperation Dinners column in my newspaper. I used garlic oil instead of peanut oil. You could add some cooked chicken, cooked pork, cooked shrimp or cooked beef to make a main dish.

Steps:
- Spray a deep skillet or wok with cooking spray (I used some garlic oil) and heat on medium.
- Beat eggs lightly, pour into pan, and cook without stirring until they are almost dry.
- Remove to a plate and set aside.
- Heat oil in same pan over medium high heat and add the onions and carrots and cook, stirring from time to time, for about 2 minutes.
- Ad mushrooms and garlic and cook and stir for 2 more minutes.
- Add the sherry, soy sauce, and cooked rice. Continue to cook, stirring from time to time, for about 3 minutes.
- Add green onions, peas and sesame oil.
- Cut the eggs into thin ribbon strips, add to pan, and toss well to mix all ingredients.
- Serve at once with extra soy sauce if desired.

BREAKFAST FRIED RICE
A fried-rice twist on bacon and eggs! My dad used to make this for me on Saturday mornings when I was a kid; it's an easy and tasty brunch option. You can substitute 1 bunch broccoli for the frozen peas, if desired.

Steps:
- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid is absorbed, 20 to 25 minutes.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to a paper-towel lined plate to drain and crumble into bite-size pieces; reserve rendered bacon fat in skillet.
- Cook and stir eggs in the same skillet over medium heat until slightly set, 1 to 3 minutes. Stir yellow onion, peas, green onion, and 1 1/2 teaspoons soy sauce into eggs; cook and stir until yellow onion is translucent, about 5 minutes more. Reduce heat to low; stir rice, crumbled bacon, and remaining soy sauce into egg mixture until well-combined and heated through, 1 to 3 minutes.

My cousin started this recipe when we were Tweens and I kept on making it when I moved away. Now I work as a cook and I have to make this everytime I work for co-workers and customers.

- In a frying pan over medium heat cook bacon until 1/2 cooked, drain off the fat. You only want to drain when half cooked because it add so much flavor to the end dish.
- Add mushrooms, green pepper and green onion. Saute a couple minutes, stirring from time to time.
- When you are ready to add the rice the bacon should be almost fully cooked Add rice, sprinkle on garlic powder, and soy sauce, add beaten egg, and stir occasionally until rice is hot and egg is cooked.
- Don't be too shy with the garlic powder, It adds a lot of flavor, actually when I make it for myself I prefer more garlic powder than my serving dish. One cashier likes it with out the soy and garlic another with out soy. The one who likes it plain eats hers with tabasco sauce. I usually shake it all over the rice, then same with the soy.

- Heat a large skillet or wok over low heat and add the bacon. Cook until the fat is rendered and the bacon is crispy, then remove the bacon with a slotted spoon and place it on a paper towel to drain the extra grease. Remove the bacon fat from the skillet, setting it aside in a bowl to use later. Leave about 1 tablespoon of fat in the skillet and heat it over medium-low heat.
- Add in the eggs and stir constantly with a wooden spoon until the eggs are just scrambled. Remove them and set aside. Pour the remaining bacon fat in the skillet and increase the heat to high. Add in the rice, tossing to coat, then let it sit for 1 to 2 minutes to crisp up and get golden. Stir, breaking apart any pieces, and repeat for another 1 to 2 minutes. Repeat another 1 or 2 times until the rice is a bit crispy and golden. At this point, taste the rice and if it needs seasoned a bit more, stir in the soy sauce. Add the bacon and eggs back in to the skillet and toss in the green onions. Stir well and let sit over low heat while you cook the eggs for topping.
- Cook eggs as desired and season them with a tough of salt, pepper and crushed red pepper. Spoon the rice into a bowl or a plate and add the egg on top along with the sliced avocado. Finish with a sprinkle of chives and EAT!

- Brown rice is easy to cook. We have detailed instructions in our post on How to Make Perfect Brown Rice, either on the stove, or in any rice cooker.
- If using beef, chicken, or pork, add 1 tablespoon water, 1¼ teaspoons dark mushroom soy sauce, and 1 teaspoon vegetable oil to the meat. Mix until all the liquid is absorbed by the meat to tenderize and add moisture. If you’re using shrimp, just omit the dark mushroom soy sauce.
- Mixing your sauce ahead of time is much easier than adding everything individually to a hot wok. In a small bowl, mix 2 teaspoons hot water and ¼ teaspoon granulated sugar until dissolved. Stir in ⅛ teaspoon ground white pepper, ½ teaspoon sesame oil, 1 teaspoon dark soy sauce, 1 tablespoon light soy sauce, and ½ teaspoon MSG if using. Set aside.
- Heat the wok until just smoking. Spread two tablespoons of vegetable oil evenly around the wok, and add the beaten eggs. Turn the heat down and stir the eggs until scrambled. Transfer back to the same bowl, and set aside.
