GLUTEN-FREE SPAGHETTI WITH BABY BROCCOLI, MUSHROOMS AND WALNUTS
This week I was really into adding nuts to many of my pasta dishes. They contribute substantial "meaty" texture and wonderful flavor. Baby broccoli is more elegant than regular broccoli, with long wispy florets and thin stems.

Steps:
- Begin heating a large pot of water. Trim the very bottoms away from baby broccoli and slice stalks. Keep sliced stalks and florets separate. Fill a bowl with cold water.
- When the water comes to a boil add salt to taste, drop in broccoli stalks and set the timer for 4 minutes. After 2 minutes add florets and blanch for 2 minutes. Using a Chinese skimmer, a strainer or a slotted spoon, transfer all of the baby broccoli to the cold water, then drain. Set aside in a bowl.
- Heat 1 tablespoon of the olive oil over medium-high heat in a large, heavy skillet or a wide, heavy saucepan and add mushrooms. Don't stir for 30 seconds to a minute so that mushrooms sear, then stir and cook, stirring often, until they have begun to soften and sweat, about 3 minutes. Add garlic and red pepper flakes. Cook, stirring, until fragrant, 30 seconds to a minute, until garlic is fragrant, and add thyme, walnuts and salt and pepper to taste. Continue to cook until mushrooms are tender, fragrant and juicy, another 3 to 5 minutes. Stir in broccoli and parsley, add salt and pepper to taste, and cook, stirring, for another minute. Remove from heat, taste and adjust seasoning. Keep warm.
- Bring water in pot back to a boil and add pasta. Cook al dente, using timing instructions on the package as a guide but checking pasta a minute before the time indicated is up. When pasta is ready, use a ladle to transfer 1/4 to 1/2 cup of the pasta cooking water to pan with the broccoli and mushrooms. Drain pasta and toss at once with broccoli and mushroom mixture and the remaining tablespoon of olive oil. Serve hot, passing Parmesan at the table.

It was awesome! UPDATE: Made this again & had no almonds but did have cashews, so I used them and they were even better! 09/15/07

TOFU HOISIN WITH BROCCOLI, RED PEPPER AND WALNUTS
This recipe takes a little more prep time than most of my other recipes but it's so delicious I don't mind. This is adapted from a recipe in Jeanne Lemlin's "Vegetarian Pleasures." I modified it so it is more in keeping with our Nutritarian eating style. To shorten prep time, you can use frozen broccoli and jarred garlic. You can serve it over whole grain rice if you wish. Pressing tofu: Cut it into 1/2 inch slices. Lay the slices out on a clean kitchen towel that has been folded in half or a couple of layers of paper towel. Fold the kitchen towel over the tofu slices or place additional paper towels on top. Cover with a small cutting board and place 6 to 8 cans on top to weight it down. Let tofu sit at least 30 minutes before cutting it into 1/2 inch cubes.

Steps:
- Preheat the oven to 400°F. Put the broccolini on a baking sheet, drizzle with 2 tablespoons of the oil, sprinkle with 1/2 teaspoon of the salt, and toss to coat evenly, then spread in a single layer. Roast the broccolini, turning once with tongs, for 10 to 15 minutes, until crisp-tender. If the broccolini stems are not uniform in size, remove thinner ones as they are done. Transfer the broccolini to a platter. (The broccolini can be cooked several hours ahead of time and kept at room temperature.)
- In a large (12 inches or wider), deep frying pan, heat the remaining 2 tablespoons oil over medium heat. Add the onion and cook, stirring occasionally, for about 5 minutes, until starting to soften. Raise the heat to medium-high, add the mushrooms and the remaining 1/2 teaspoon salt, and cook, stirring occasionally, for 7 to 10 minutes, until the mushrooms are golden brown. (The mushrooms will release a lot of liquid before reabsorbing it and browning. Be patient, as the flavor is in the browning.) Add the wine and cook for about 2 minutes more, until the pan is dry. Stir in the pepper.
- Spoon the mushrooms over the broccolini, then scatter some Parmesan over the top. Serve warm or at room temperature.
