Broccoli Madaline is a great salad. It is already loved by thousands of people. I should know because I used to make it almost every day for Piccadilly. I would have customers beg me for the recipe. It would fly off the serving line. I did cut the recipe down form the original. Also I made sure to put it into my own words. I don't want any one to get into trouble with the copyright. I hope everyone enjoys this.

Broccoli Madaline Salad image

Steps:

  • Wash and drain broccoli.
  • Cut broccoli into bite size pieces.
  • Put broccoli into a bowl.
  • Add shredded sharp cheddar cheese.
  • Chop purple onion fine.
  • Add to above ingredients.
  • Add raisins and bacon bits and mix all ingredients well.
  • Dressing: Mix mayo, sugar, and white vinegar well.
  • Pour dressing over salad and mix well.

1 lb broccoli floret
8 ounces shredded sharp cheddar cheese
1/2 cup purple onion
1/2 cup raisins
1/3 cup bacon bits
1 cup mayonnaise
3 tablespoons sugar
1 tablespoon white vinegar

Healthy Broccoli Roman Style image

Steps:

  • Cook the broccoli in a large pot of salted boiling water until just bright green, about 3 minutes. Drain and cool under cold running water. Drain again and pat dry with paper towels.
  • Heat 2 teaspoons of the oil over medium-high heat in a small saucepan. Add the panko and cook, stirring, until the panko is just lightly toasted, 2 to 3 minutes. Set aside.
  • Heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the garlic and cook, stirring, until it just turns golden around the edges, about 3 minutes. Stir in the wine, pepper flakes and broccoli. Sprinkle with salt and cook, stirring frequently, until the broccoli is heated through and the wine has evaporated, about 5 minutes. Transfer to a platter and sprinkle with the panko and lemon zest.

Steps:

  • Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Drain immediately and immerse in a bowl of ice water.
  • Melt the butter in a large saute pan. Add the lemon zest and garlic and stir. Drain the broccolini and add it to the garlic mixture and heat for 2 minutes. Add the lemon juice, 1/2 teaspoon salt and the pepper, and toss well before serving.

  • Cut the brocolli into small pieces, I use some of the tender stems also.
  • Combine the bacon bits, broccoli, cheese, rasins, and onion.
  • For the Dressing:.
  • Mix together in a small bowl the mayonaise, sugar and vinegar. Pour this mixture over the Brocolli mixture. Chill before serving.
