MAMA'S BEST BROILED TOMATO SANDWICH

- Preheat oven to broil.
- In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally.
- Meanwhile, in a small bowl, combine mayonnaise, parsley, oregano, black pepper and 4 teaspoons Parmesan cheese. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese.
- Place on a baking sheet and broil for 5 minutes, or until cheese turns golden brown. Serve immediately, open faced or closed.

Steps:
- Core the tomatoes and slice each tomato and each ball of mozzarella into 1/4-inch thick slices.
- Place the sliced ciabatta loaves on a work surface, and spread each half evenly with 1/8 cup pesto. Place 4 slices of tomato and 3 slices mozzarella side by side on the top of each half loaf and sprinkle with salt and pepper. Place 4 basil leaves on top of each sandwich.
- Slice each half loaf crosswise into 4 serving portions, making sure that each piece has a slice of tomato, mozzarella and a basil leaf.
GRILLED CHEESE & TOMATO SANDWICH
I started liking grilled cheese & tomato sandwiches years ago at a little restaurant near my office. I would go about three times a week to order a grilled provolone cheese & tomato sandwich. Steps:
- Spread both slices of bread with a light layer of mayo.
- Put slice of cheese on one piece of bread.
- Add tomato slices.
- Sprinkle with salt, pepper& Italian Seasoning.
- Cover tomato slices with other slice of cheese, then cover with other piece of bread.
- In the meantime, heat griddle or pan with butter and garlic power or minced garlic.
- Also spread butter on top of each side of bread.
- Grill until sandwich is brown on both sides and cheese is melted.

- Top 2 slices of bread with a slice of cheese each; layer each with 2 tomato slices, 2 bacon strips, half of the basil and another cheese slice. Top with remaining bread. BROILED TOMATO CHEESE SANDWICH
I love the combination of tomato and cheese. The short marination of the tomatoes in the olive oil and the balsamic vinegar gives it a nice kick. Other vinegar is not as nice. If I have it in the fridge I add an extra topping of mozzarella and you can please the meat eaters by adding slices of crunchy bacon. You can make it a closed sandwich by just toasting 4 more slices of bread to top the sandwich.

- Preheat broil/grill.
- In a shallow bowl whisk together the olive oil and balsamic vinegar, add the tomatoes and mix gently, set aside.
- In a small bowl mix together: mayonnaise, cheese, basil, oregano and black pepper.

BROILED TOMATO SANDWICH
Fresh, ripe tomatoes are marinated in olive oil and balsamic vinegar, then broiled with Parmesan cheese on toast. Serve warm with a bowl of soup, if desired. This takes a plain 'ol tomato sandwich to a whole new level with a nice Italian twist! I toasted some thick slices of Italian bread and added a bit of salt to the tomatoes. I decreased the amount of herbs in the mayo mixture a bit to taste. I also added some fresh basil over top of the tomatoes and a bit of mozzarella cheese along with the Parmesan. The balsamic marinade on the tomatoes really adds a nice tang to the sandwich.

- My Note: I made it in August when tomatos are at their peak flavor, but I can see making it in the winter with fresh plum tomato. Also because it was summer I added fresh chopped herbs to the mayo mixture, parsley, rosemary and basil. As it was a poolside lunch, I put the prepared sandwiches on a foil lined, thick cookie sheet and put it on the grill and closd the lid for about 5 minutes. But broiling would give it a bubbly top. Also, THICK DENSE bread is a MUST! And remember to toast the bread first. My grandaughter the vegetarian even asked for the recipe. She marinated thinly sliced red onion along with the tomatoes, used a little less of the Parmesan, and added a thin slice of Swiss cheese. Also, since her husband loves BLT's, added a few pre-cooked slices of bacon to his before adding the tomato/onion topping and the cheese -- he loved it!
- I loved the fresh taste. A good quality, dense bread is a must. Next time I play with my food I will try a mixture of tomatoes and roasted red peppers.

- Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
- Remove the cores of the tomatoes then cut them in half (horizontally).
- Place cut side up: then rub Olive oil over cut side (use fingertip).
- Sprinkle bread crumbs on next.
- Sprinkle Herb seasonings on and salt/pepper.
- Then place 1/4 teaspoon of unsalted butter on each half.
- Broil until tomato is hot completely.

- Cut away and discard the core of each tomato. Cut the tomatoes crosswise through the center. Discard the seeds. Sprinkle with salt and pepper.
- Combine the bread crumbs, garlic, parsley and olive oil. Blend well.
- Top each tomato half with an equal portion of the crumb mixture, pressing down with your fingers to distribute the topping evenly. Place the tomatoes under the broiler, and broil for about 5 minutes or until lightly browned and hot.

- Pre-heat broiler.
- Place bread on a broiler safe pan. Top each slice of bread with a slice of cheese then a slice of tomato. Depending on how big your tomato slice is you may want to put on two but keep it a single layer of tomato. Cut each slice of bacon into 2 pieces. Then lay 3 of the pieces on each sandwich. Broil until bacon is crisp and cheese melted. Bread and cheese may get a little burnt. That makes it better!
- Note: Originally I put raw bacon on the sandwich and cooked it all the way under the broiler. Now I cut the strips in half and partiality cook in micro-wave and then put on sandwich and broil to finish cooking.
