Steps:
- Remove the core and thinly slice apples.
- Place apple slices in a large bowl and gently mix in sugar, cornstarch, and cinnamon. Set aside.
- Preheat oven to 350˚F (180˚C).
- In another bowl, combine flour, oats, brown sugar, baking soda, salt, and butter. Mix until crumbly.
- Line a 9x13-inch (23x33 cm) baking dish with parchment paper and pour ⅔ of the oats mixture in the bottom of the pan, pressing firmly to pack it down to make a crust.
- Pour apples over the crust and spread in an even layer. Pour the remaining oat mixture over the top and spread evenly.
- Bake for 30 minutes, or until golden brown.
- Cool completely before cutting.

- For the base and streusel topping: Preheat the oven to 350 degrees F. Butter the bottom of an 8-inch-square baking pan.
- Put the flour, oats, sugars, baking soda and salt in the bowl of a food processor fitted with a metal blade. Pulse 6 times, about 3 seconds per pulse, until some of the oatmeal is finely chopped and some still large or whole. Drizzle in the melted butter, toss with a fork and then pulse until the mixture comes together, about 8 times.
- Press two-thirds of the oat mixture into the prepared pan. Squeeze spoonfuls of the remaining mixture in your palm to make chunks - some larger, some smaller - and place in a small bowl.
- Cover with plastic wrap. Refrigerate both the base and the chunks for 30 minutes.
- For the filling: Put the apple butter, dried fruit, cinnamon and 2 tablespoons water in the cleaned bowl of the food processor and pulse to a chunky paste. Spread the filling over the chilled base. Scatter the streusel topping over the filling, leaving some of the filling showing through. Bake until the streusel is toasty and crisp, about 30 minutes. Cool completely on a rack, about 2 hours, before slicing into 16 squares.

APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

- 1. Sift flour, measure and add salt, soda, and brown sugar. Sift again. Add rolled oats. Cut shortening into mixture until it is crumbly.
- 2. Spread 1/2 of mixture into a greased pan 7 X 10 inches. Arrange sliced apples over crumb mixture. Dot with butter and sprinkle with granulated sugar. Cover with remaining crumbs.
- 3. Bake @ 350 d/f for 40 minutes. Cut into squares while still warm. Makes 18-20 squares.

BROWN SUGAR AND OATMEAL CRUMBLY APPLE BARS
I haven't tried this yet, but with all the apples falling from my tree in my front yard, I had to post it to make sure my shopping list this week includes rolled oats, which I usually don't have around. This just sounds like the best thing to make for my two voraciously hungry boys, now that the Sacramento heat is being tempered by those cool Delta breezes of autumn. - Preheat oven to 350 degrees.
- Line a nine inch square pan with foil or parchment paper.
- In a large bowl, combine brown sugar, oats, flour, soda, and salt.
- Cut in 9 tablespoons butter. (This can also be done in a food processor.)
- Reserve 3/4 cup of the mixture and pat the rest into prepared pan. It will be dry.
- Toss apples with half of lemon juice and arrange over crust in pan.
- Sprinkle with cinnamon.
- In a saucepan, combine sugar, cornstarch and hot water.
- Turn heat to medium and cook, whisking constantly until mixture begins to boil and thicken.
- Remove from heat and stir in vanilla, remaining 1 tablespoon butter and remaining teaspoon of lemon juice.
- Pour over apples.
- Sprinkle with remaining crumb mixture and nuts, if using.
- Bake at 350 degrees for 35-45 minutes, or until lightly browned.

- To make the crust: in a large bowl, using an electric mixer on medium speed, beat together the butter and flour until crumbly and well combined.
- Transfer the mixture to an ungreased 13x9 inch baking pan.
- Using your hands, pat the crust firmly and evenly into the pan.
- Bake in a 350° oven for 20 minutes; remove from oven a let cool completely, about 45 minutes.
- To make the topping: in a large bowl, mix the flour, sugar, oats, and cinnamon together.
- With a pastry blender, cut in the butter until the mixture resembles coarse crumbs; then using your hands, toss until all the ingredients are well combined; set aside.
- When the crust is cooled, evenly spread the apple filling over the crust, leaving a 1/4-inch edge all around.
- Sprinkle the crumb topping over the apple filling; sprinkle the additional 3 tablespoons rolled oats over the crumb topping.
- Bake for 45 minutes; allow to cool to room temperature.
- To make the glaze: In a bowl, combine the sugar and water; beat until smooth.
- Cover until ready to use.
- When the bars are completely cooled, drizzle the glaze decoratively over the crumb topping.
- Allow the glaze to set for 15-20 minutes before cutting into bars and serving.
