CARAMELIZED BACON TWISTS
A friend gave me this recipe to use at a bridal shower brunch, and the sweet chewy bacon strips were a big hit. Lining the pan with foil before baking helps cut down on cleanup. -Jane Paschke, University Park, Florida

- Preheat oven to 350°. Line a 15x10x1-in. pan with foil., In a shallow bowl, mix brown sugar and cinnamon. Cut bacon strips crosswise in half; dip in sugar mixture to coat. Twist 2 or 3 times, then place in prepared pan. Bake until browned and crisp, 15-20 minutes. Freeze option: Freeze cooled bacon twists in freezer containers, separating layers with waxed paper. If desired, reheat in a microwave oven or on a foil-lined baking sheet in a preheated 350° oven before serving.

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper or nonstick aluminum foil. Take each strip of bacon and twist it along the length being careful to not stretch, just twist. Place the twisted strip on the prepared baking sheet and repeat with the rest, nestling them close together on the baking sheet.
- In a small bowl, add the brown sugar, thyme, dry mustard, paprika, garlic powder and plenty of black pepper. Mix with a fork until combined.
- Sprinkle the sugar mixture all over the bacon. Bake for about 40 minutes. The twists will be slightly flimsy. Let the bacon cool on the baking sheet for 30 minutes, loosening every 10 minutes so they don't stick to the baking sheet. They will firm up once cooled down.
SPICY BROWN SUGAR BACON
Inspired by the millionaire's bacon at the restaurant Sweet Maple, these sweet, spicy, caramelized strips are perfect for a special breakfast or brunch gathering.

- Preheat the oven to 300 degrees F.
- Cut bacon lengthwise into nine 1/4- to 1/2-inch-thick slices.
- Line a baking sheet with foil and place a cooling rack into the baking sheet. Coat the cooling rack with cooking spray.
- Whisk together the sugar, cayenne, paprika, 2 teaspoons pepper and 1/2 teaspoon salt in a pie dish. Pour 1/2 cup of the maple syrup into a small bowl.
- Brush both sides of each slice of bacon with maple syrup. Press the bacon, one slice at a time, into the brown sugar mixture to coat. Arrange on the greased wire rack. Sprinkle the bacon with the leftover brown sugar mixture.
- Bake, rotating halfway through, until the bacon is cooked and the sugar is dark and caramelized, about 1 hour 30 minutes.
- Transfer the bacon to a parchment-lined baking sheet. Let cool completely. (Bacon can be stored in an airtight container at room temperature for up to 3 days.)
- Meanwhile, whisk together the red pepper flakes and remaining 1/4 cup maple syrup in a small bowl. Drizzle the bacon with the red pepper-maple syrup or serve on the side for dipping.

- Preheat oven to 350 degrees F; soak 12 bamboo skewers in warm water (so they won't burn in oven).
- Line the bottom of broiler a pan with foil for ease of cleaning, then top with broiler-pan rack.
- Mix together brown sugar (or heat-stable sugar substitute, for diabetics and lowcarbers), mustard powder, cinnamon and nutmeg.
- Pour onto waxed paper and lightly shake paper to spread mixture evenly.
- One strip at a time, press the bacon into the sugar mixture to coat.
- Twist each piece of coated bacon into a bamboo skewer and place on broiler-pan rack.
- Bake 25 to 30 minutes at 350 degrees F, until almost crisp and sugar coating is bubbly.
