Canned Nectarines in Honey Syrup image

Steps:

  • Combine water and ascorbic acid powder until dissolved; place nectarines in liquid immediately after cutting each one. In a Dutch oven, combine water, sugar and honey. Bring to a boil, stirring to dissolve sugar. Drain nectarines and add to the canning syrup; return just to a boil. Remove from heat. , Carefully ladle hot mixture into 8 hot wide-mouth 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and, if necessary, adjust headspace by adding hot cooking liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring they are completely covered with water. Bring to a boil; process for 20 minutes. Remove jars and cool.

This year I wanted to do something that the kids could eat spooned over ice cream, so it was this simple, but not boring, cherries in syrup.

Sweet Cherries in Honey-Vanilla Syrup image

Steps:

  • Combine honey, sugar, and water in a large pot or Dutch oven. Stir over low heat until sugar and honey have dissolved. Add cherries and vanilla bean.
  • Cook over medium-low heat until cherries are warmed through.
  • Remove vanilla bean. Ladle hot cherries into jars and cover with syrup, leaving ½ inch headspace.
  • Remove air bubbles. Wipe jar rims with a damp paper towel.
  • Top with two-piece lids and rings, and process in a water bath for 10 minutes.

Mixed Fruit in Light Honey Syrup image

Steps:

  • Peel peaches and pears and cut into large pieces.
  • Soak in a lemon juice/water combination if desired to reduce color change (optional).
  • In a large pot, combine honey and water. Bring to a boil, stirring until well combined.
  • Reduce heat to a simmer.
  • Drain fruit and add to syrup mixture. Continue simmering until fruit is heated through.
  • Spoon fruit into clean pint jars.
  • Fill each jar with the hot syrup leaving ½ inch head space.
  • Remove the bubbles (I use the handle of a rubber spatula, but there is an actual tool for this process. Just don't use anything metal).
  • Wipe the tops of the jars with a damp paper towel, and cover with two-piece caps. Process in a water bath for 20 minutes.
  • Makes 6 pints with some syrup left over (use it for another batch or to make sorbet or to sweeten iced tea).
