- 1. Beat pudding mix (dry), milk and coffee in medium bowl with wire whisk about 1 minute or until smooth. Fold in whipped topping. 2. Spoon half of the pudding mixture into each of 4 glasses. Sprinkle evenly with cookie crumbs. Top with remaining pudding mixture. Cover and refrigerate about 3 hours or until set. Garnish with additional shipped topping and cookie crumbs if desired. Steps:
- Sprinkle gelatin over 1/2 cup cold water in small saucepan; let stand one minute.
- Cook gelatin mixture over low heat for 2 minutes, stirring until gelatin dissolves.
- Stir in sugar, 1 1/2 cups water and coffee granules until dissolved.
- Pour into 1 quart bowl; chill 4 hours until firm.
- Once coffee mixture is set, beat whipping cream at medium speed with electric mixer until foamy.
- Gradually add 2 tablespoons sugar and coffee liqueur, beating until soft peaks form.
- Pull fork through set gelatin mixture, breaking into small pieces.
- Spoon 1/2 cup gelatin each into 4 parfait glasses.
- Top evenly with half of whipped cream mixture, repeating with second layer.
- Garnish with grated chocolate.

Steps:
- Dissolve coffee in hot water in medium bowl.
- Add milk, pudding mix and cinnamon.
- Beat with whisk about one or two minutes.
- Let stand for at least five minutes or until thickened.
- Gently stir in whipped topping.
- Scoop 1/2 pudding mixture into 5-6 dishes.
- Sprinkle with crushed cookies.
- Spoon remaining pudding mixture over crushed cookies.
- If you want you can put spoon some more cool whip over the top.

- In a food processor, puree ricotta, sugar, and espresso powder until very smooth, scraping down sides of bowl as needed, 1 to 2 minutes.
- Dividing evenly, spoon mixture into four glasses or serving dishes. Refrigerate, covered, until ready to serve, at least 30 minutes and up to 1 day.
- Just before serving, crumble cookies over parfaits.

Even as a child coffee was one of my favorite flavors in a dessert. Came across this recipe in one of the magazines you pick up at the supermarket. Posting here for safe keeping. According to the publication, these are 240 cal/0g fib/2g fat or 5 points. Cooking time stated is really chilling time.

Steps:
- Crush the cookies using a mini chopper or by rolling a pin over the cookies. If you do the later, save cleanup time by putting the cookies in a plastic bag.
- In a medium bowl combine the pudding, milk and coffee. (Add the extract if using.) Whisk together to make sure their are no lumps and the ingredients are well mixed. Fold in the whipped topping.
- Take 1/2 the cream and place it in the bottom of four parfait glasses. Sprinkle cookie crumbs over top, reserving a tablespoon or so for garnish.
- Divide the remaining cappuccino cream on top of the cookie crumbs and chill at least 3 hours and until you are ready to serve.
- To serve, place a small dollop of topping on the parfait, garnish with a light sprinkling of cookie crumbs.

- In a microwave, melt 1/2 cup chocolate chips and shortening; stir until smooth. Dip rims of four parfait glasses in chocolate; sprinkle with jimmies. Let stand until set., In a small saucepan, combine the cream, egg yolks, vanilla, coffee granules and remaining chocolate chips. Cook and stir over medium heat until mixture reaches 160° or is thick enough to coat the back of a metal spoon. Cool, stirring several times., In a small bowl, dissolve coffee granules in 1 tablespoon whipping cream. Add remaining cream; beat cream mixture until it begins to thicken. Add confectioners' sugar; beat until soft peaks form. Fold 1-1/2 cups of cream mixture into cooled chocolate mixture. , Spoon about 1/4 cup chocolate mousse into each parfait glass; spoon or pipe about 1/4 cup cream mixture over mousse. Repeat layers. Refrigerate for at least 2 hours.
