CARIBBEAN PINEAPPLE UPSIDE-DOWN CAKE
We reimagined this classic cake with a kick. The chiles (which get candied) are reminiscent of the maraschino cherries that would typically top a traditional version of this sweet.

- For the caramel topping: Preheat the oven to 350 degrees F. Butter just the sides of a 9-inch round cake pan.
- Stir the sugar and 1/3 cup water in a medium saucepan over medium heat until the sugar dissolves. Cook, no longer stirring, but gently swirling the saucepan occasionally until the mixture is the color of light amber, 4 to 5 minutes. (If needed, brush any sugar crystals off the side of the pan with a pastry brush dampened with water.) Remove the saucepan from the heat, and carefully whisk in the butter (use caution; the mixture can bubble up considerably). Pour the caramel into the prepared cake pan, tilting the pan to cover most of the bottom (be careful; the pan will be very hot from the caramel). Lay the pineapple rings in the pan and fill each hole evenly with the chiles. Set aside.
- For the cake: Whisk together the flour, baking powder, baking soda, salt and crushed red pepper flakes in a medium bowl; set aside. Combine the coconut milk, buttermilk and vanilla in a small bowl; set aside.
- Beat the butter and sugar together in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 4 minutes. Add the eggs 1 at a time, beating after each addition and scraping down the side of the bowl as needed. Reduce the mixer speed to low and add the flour mixture in 3 batches, alternating with the milk mixture and mixing until just incorporated.
- Pour the batter over the pineapple in the cake pan and spread evenly. Bake until the cake is golden brown and bounces back when pressed and a toothpick or cake tester comes out clean when inserted in the center, 50 to 60 minutes. Run a knife around the edge of the cake to separate it from the pan. Let the cake cool in the pan on a wire rack until just cool enough to handle, about 30 minutes. Invert a serving platter over the cake pan and, while holding them together, quickly flip them over so the cake unmolds, pineapple-side up. Let cool completely. Cut into wedges, and serve.

- On a plate, mix together the peppercorns, allspice, cinnamon and salt. Sprinkle the spice rub evenly over the pineapple or roll the pineapple in it so it is evenly coated.
- Heat a medium Dutch oven over medium heat. Add the oil and place the pineapple in the pan. Cook, rotating the pineapple regularly, until light brown all over, about 3 minutes. Cover the pan and transfer to the oven. Roast until tender to the core when pierced with the tip of a knife, about 45 minutes. Uncover and allow the pineapple to cool to room temperature in the pan.
- Meanwhile, in a medium bowl, combine the cream, sugar and rum. Using a handheld mixer, beat on high speed until soft peaks form, about 3 minutes.
- Slice the pineapple into 1-inch-thick rounds. Place 1 slice on each plate. Dollop with a spoonful of cream and a crumble of gingersnaps. Drizzle any remaining juice over the top.
CARIBBEAN BAKED PINEAPPLE
Grown only in the New World tropics, pineapples belong to the bromeliad family. Bromeliads are epiphytes, or air plants, which means they absorb water and nutrients from their environment through microscopic hairs at the base of their leaves.Their roots function only as an anchoring support. - Preheat oven to 425°F Remove all but about 1 inch of green leaves from top of pineapple. Cut pineapple in half lengthwise. With a serrated knife, carefully cut around the perimeter of each half pineapple. With a large serving spoon, carefully scoop out pineapple, separating it from the shell - be sure to keep the shell intact.
- Cut the flesh (not the shell) of each half pineapple in half again, lengthwise. Cut out the tough inner core. Cut the pineapple in 1-inch bite-size pieces (about 3 cups). Drain one pineapple shell on paper toweling. Discard the other shell.
- Melt 4 tablespoons butter in a large skillet over medium-high heat. Add pineapple, lime segments, sugar and red pepper flakes. Cook for 5 minutes, stirring frequently. Transfer pineapple mixture, including all butter, to pineapple shell. Set aside.
- Melt remaining 4 tablespoons butter in a medium skillet over medium-high heat. Add breadcrumbs and saute, stirring frequently, until crumbs are toasted and browned. Top pineapple with tasted breadcrumbs.
- Place pineapple shell in an appropriately sized baking dish. Bake for 12 to 15 minutes. (You can prepare this recipe early in the day, cover with plastic wrap and refrigerate until baking. Bake for 20 to 25 minutes.).
- NOTE: In the tropics, fruit is quite often cooked like a vegetable and served as a side dish. If you want an even more peppery kick to this dish, add 1/8 teaspoon cayenne pepper to the breadcrumb-butter mixture.

I must start by saying, I do NOT like pineapple. However, the first time I had this, I was hooked. I've taken it to several breakfast potlucks and it's always a hit. Great for holiday and church potlucks. I've given this recipe to so many people I've lost count.

- Preheat oven to 350 degree F. Peel the pineapple but do not remove the core. Slice pineapple 1/4 inch thick and set aside. Reserve any juice release while slicing the pineapple
- In a saucepan under medium to low heat, add butter and sugar. Stir until sugar has melted. Add pineapple juice if you have, ginger and cayenne pepper and stir. Slowly add rum and stir to mix. Add water and continue to stir until well blended. Slit and scrape the vanilla pods removing the seeds. Add the vanilla seeds and the cut pods to the saucepan. Add lime juice and bring to a boil. Once the mixture starts to boil, add mashed banana and continue to boil for 5 - 7 minutes
- In a baking dish, large enough to hold slices, place the pineapple slices - try not to overlap. Pour alcohol and banana mixture on top of pineapple slices. Bake in the oven for 20 minutes. Remove and turn the slices over and return to oven. Continue to bake for 15 to 20 until liquid has thicken a bit and pineapple are cooked. Remove and let cool for 5 to 10 minutes before serving.
