Caribbean Chicken (Marinade) image

Steps:

  • Combine the jalapeño pepper, garlic, vinegar, soy sauce, cinnamon, nutmeg, cloves, salt and pepper. Coat the chicken breasts and let marinate overnight.
  • Choose your favorite cooking method to prepare the chicken. We like kabobs on the grill with fruit and veggies.

4 -6 eight-ounce boneless chicken breasts or 4 -6 chicken thighs
3 jalapeno peppers, seeded and sliced
3 garlic cloves, sliced
1/2 cup vinegar
1/2 cup soy sauce
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • Combine all ingredients in a heavy-duty Ziploc bag or glass pan.
  • Add your choice of pork, beef, chicken or fish.
  • Marinate for at least two hours.
  • Prepare in your preferred method of cooking.

Steps:

  • Puree all ingredients except chicken in food processor. Add marinade and chicken to re-sealable plastic bag, mix thoroughly and let marinate, refrigerated, for 4 to 8 hours.
  • Preheat oven to 350 degrees F.
  • Heat grill to high, remove excess marinade from chicken and place on grill. Grill each side of chicken for 3 to 4 minutes then place on a pan and finish in the oven for 15 minutes.
  • Squeeze a lime wedge over each piece of chicken and serve.

Caribbean Marinated Flank Steak With Coconut Rice image

Steps:

  • Drain pineapple, reserving 1/4 cup juice for Marinade; discard excess juice. Reserve crushed pineapple for Coconut Rice.
  • Combine reserved pineapple juice with the lime juice, 2 T cilantro and the jerk seasoning in a small bowl. Place beef steak and marinade in food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator for 6 hours or as long as overnight, turning occasionally.
  • Prepare Coconut Rice. Combine water and rice in medium saucepan; bring to a boil Reduce heat, cover and simmer 35 to 45 minutes or until rice is tender. Remove from heat. Stir in reserved pineapple, coconut, almonds and 1 T of cilantro. Season with salt, as desired.
  • Meanwhile, remove steak from marinade and discard marinade. If using charcoal grill, you will want medium, ash-covered coals. If using a gas grill, preheat to medium heat. Grill steak, covered, for 11 to 16 minutes on charcoal grill, 16 to 21 minutes on gas grill. Grill to medium rare (145 degrees) to medium (160 degrees) doneness, turning occasionally. Season with salt, as desired.
  • Carve steak across the grain into thin slices. Serve with rice.

This recipe comes from the cookbook, "Eat Caribbean" by Jamaican, Virginia Burke. Jerk is a style of cooking developed by the "maroons" (run away slaves ) of Jamaica. There are very many versions of Jamaican Jerk Marinades. It can be used on on pork, chicken or fish. A blender or food processor can be used to make quick work of all the chopping.

Brilliant Jamaican Jerk Marinade image

Steps:

  • In a bowl, combine scallion greens, shallots, garlic, ginger, and Scotch Bonnet pepper.
  • In another bowl, combine allspice, black pepper, cayenne, cinnamon, nutmeg, thyme, dark-brown sugar, salt and pepper.
  • Mix thoroughly.
  • Whisk in orange juice, vinegar, lime juice, and soy sauce.
  • Slowly drizzle in oil, whisking constantly.
  • Add the reserved scallion mixture; stir to combine.
  • Let rest at least one hour.
  • Wash chicken, pork, or fish well, pat dry and place in a bowl.
  • Add sauce; rub in well.
  • Cover and refrigerate overnight.
  • Before cooking, scrape paste off of the meat.
  • Grill over charcoal.
  • You may add water-soaked allspice berries to the coals for smoke and additional flavor.
  • Serve with Jamaican "rice and peas".

Steps:

  • In a blender, combine the orange juice, orange peel, olive oil, lime juice, ginger, garlic, hot pepper sauce and oregano. Blend into a marinade.
