Steak Fajitas image

Steps:

  • Combine the olive oil, cilantro, cumin, chipotles, garlic, lime juice, orange juice and 1 teaspoon salt in a 2-cup measuring cup or similar vessel. Using an immersion blender, puree the marinade until smooth. Transfer to a resealable plastic bag. Add the steak to the bag, then seal and shake to coat. Refrigerate for 2 to 4 hours.
  • Preheat a ridged grill pan over medium-high heat (or prepare an outdoor grill).
  • Drain the marinade from the steak and sprinkle liberally with salt and pepper. Lightly oil the grill pan. Grill the steak for 4 minutes per side for medium-rare. (Depending on the size of your grill pan, you may need to cook in batches.) Transfer to a cutting board to rest.
  • Toss the bell peppers and onions with some olive oil and lime juice. Grill the vegetables until barely limp, 7 to 8 minutes.
  • Turn any free burners to a medium-low flame. Place a tortilla on each flame and let char for 30 seconds to 1 minute. Flip and repeat on the second side. Wrap the tortillas in a clean tea towel to keep warm while you continue with the remaining tortillas.
  • Thinly slice the steak on a diagonal, against the grain. Serve with the warm tortillas and grilled vegetables.

Carne Picada (Spicy Ground Beef) image

Steps:

  • Saute onion in oil in a large skillet over medium low heat until translucent. Add jalapeno and cook about 10 minutes more. Remove onion and peppers and set aside.
  • Raise heat to medium and quickly brown ground beef. Drain off fat and return onions and peppers. Add tomatoes, garlic, bouillon, salt and pepper to taste.
  • Saute over low heat for 15 minutes.
  • This can also be prepared using beef broth rather than the bouillon. You would add it at the same time, just cook until desired consistency.

  • Heat a large nonstick skillet over high heat. Add the bacon and onion and cook, stirring often, until bacon begins to brown. With a spatula, slide the onion and bacon to the back side of the skillet.
  • At this point the skillet should be very hot. Add the meat and generously season with salt and pepper.Brown on one side and turn over, add the lime juice.
  • Reduce heat to medium-low and cover the skillet. Cook until the meat is tender and serve with accompaniments.

  • In large skillet, cook the bacon over medium heat until crisp; remove to paper towels to drain. Reserve the fat in the pan. Cut the bacon crosswise into 1-inch strips and put in a bowl. In the same skillet, saute the onions until golden brown. Using a slotted spoon, transfer the onions to the bowl with the bacon, add the honey and ancho and chipotle powders, and season to taste with salt.
  • Fill a deep-fat fryer with oil, or add enough oil to a deep skillet to measure about 1 inch deep, and heat to 375 degrees F on an instant-read thermometer.

  • Combine flour, paprika, salt, pepper, and garlic powder in a large bowl, mix to combine. Toss meat in flour mixture until well coated.
