CAULIFLOWER & CURRY PUREE

This recipe was designed to show how salt can affect the finished item more than imagined, "how salt can reduce bitterness and enhance sweetness." Salt is added in increments, and again at the end until perfection is reached.

Cauliflower & Curry Puree image

Steps:

  • Chop the cauliflower fairly small.
  • Discard core.
  • Cook the cauliflower in 1 Tablespoon of the butter over medium heat until golden brown.
  • Add the curry powder.
  • Saute for five minutes, stirring regularly.
  • Add the milk and bring to the boil, stir regularly.
  • Add pinch of salt and generous pepper.
  • Drop the heat, and simmer for six minutes.
  • Remove from the heat.
  • Taste.
  • Add a pinch of salt, and retaste.
  • When cool enough, process in a blender or food processor until smooth.
  • Strain.
  • Stir in the remaining butter.
  • Taste.
  • Continuing tasting and salting until all traces of bitterness are gone, and the puree tastes flavorful and sweet.
  • Thin with milk, if necessary.

  • Bring a 4-quart pot of salted water to a boil; add cauliflower and simmer until tender, 7 to 10 minutes. Drain cauliflower, reserving 1 cup cooking liquid.
  • Blend cauliflower and 1/4 cup cooking liquid in a blender until smooth, adding more water until desired consistency is reached. Add butter and pulse until incorporated; season with salt.

Steps:

  • Set oven to 350 degrees.
  • Grease a casserole dish large enough to hold the cauliflower mixture (I use an 8x8-inch baking dish).
  • Cook the cauliflower until firm-tender (cook only to JUST tender, do not over cook the cauliflower).
  • Place the cauliflower in a prepared baking dish.
  • In a bowl, combine the undiluted chicken soup, milk, 2 tablespoons melted butter, mayo, cheese and curry powder, salt (or seasoning salt if using) and pepper; mix to combine.
  • Pour the soup mixture over the cauliflower in the dish (do not mix).
  • In a small bowl, combine the cracker crumbs with melted butter.
  • Sprinkle over the soup mixture in the baking dish.
  • Bake for about 30 minutes.

Steps:

  • For the cauliflower: In a large saute pan over medium-high heat, add the olive oil and butter to melt. Once melted, add the cauliflower florets, a nice sprinkle of salt and cook until golden on the bottom, about 3 minutes. Give a good toss and let cook for 3 more minutes. Repeat tosses until most of the cauliflower is coated with the butter and golden on parts, about 4 tosses or so. Cauliflower should still be crunchy at this point, but tender enough to eat a smaller floret. Go ahead, take a bite! Then, pour the rest of the florets into a large bowl and quickly cover tightly with plastic wrap. Cook in batches if the florets won't fit into one pan.
  • While the cauliflower continues to steam in the bowl, make the sauce. In the same pan over medium heat, add the butter. Once the butter is melted, add the onions, curry powder, turmeric and season with salt. Cook until tender, about 5 minutes, and then add the garlic and cook a bit more. Once the garlic is fragrant, add the chicken stock and bring to a simmer. Cook until the stock is reduced by half, and then add the heavy cream and raise to a simmer. Cook until the sauce is reduced and thickened. With a slotted spoon, remove the cauliflower from the bowl and add to the pot. Raise the heat and simmer 5 minutes more. Serve warm.

  • Set up a collapsible steamer or bamboo steamer over a pot of water. Toss the cauliflower, potato, and zest together and put in the steamer. Season with the salt and pepper, to taste. Cover, and cook over medium heat until the potatoes and cauliflower are completely tender, about 15 minutes. Cool slightly.

  • Add cauliflower to a large pot, add enough water to cover, and set over high heat and bring to a boil.
  • Cook until cauliflower is fork tender, roughly 12 minutes. Drain thoroughly. Return cauliflower to pot, add butter and let it melt and blend.
  • Add half the milk and blend. Pour roughly blended pot mixture into a blender and puree.
  • Add more milk, blending constantly, until desired texture is reached. Season with salt and pepper or creole seasoning.

Steps:

  • Trim off leaves and cut out central core of cauliflower; break into florets. Peel the core and slice. Halve the florets lengthwise.
  • Bring 1/2 cup water to a boil in a 2-quart saucepan over medium heat, add the core and florets and cook, covered, until tender, about 5 minutes.
  • Drain the cauliflower pieces, reserving cooking water, and place in food processor. Add 1/4 cup cooking water, butter, curry powder, salt and pepper and purée to desired consistency, adding more cooking liquid or more butter, if desired. (I like this purée a bit rough, but you can purée until smooth and add a bit of heavy cream for a richer and more elegant looking purée.)   • Cut the cauliflower into tiny florets.
  • In a large skillet over medium heat, stir-fry ginger puree and turmeric for 2 minutes, adding a few drops of water if mixture begins to stick.
  • Add chili, and/or red chili powder, and cilantro, stir-frying an additional 2 minutes.
  • Add cauliflower and cook for 5 minutes, adding a teaspoon of water if mixture starts to dry.

Steps:

  • Chop one of the onions and cook gently in half of the oil.
  • Add the chilli and spices and cook for a minute.
  • Add the salt and cauliflower to the pan, turn in the mixture then pour in the stock and the tomato puree.
  • Bring to a simmer, cover and cook for about 10 minutes until almost tender.
  • While the cauliflower is cooking in the curry sauce, slice the remaining onions into rings.
  • Heat the rest of the oil in a frying pan and cook the onion rings until crisp and deep golden.
  • Drain on kitchen paper.
  • Add the tomatoes to the pan and cook for a further 3 minutes.
  • Serve topped with the onion rings and garnish with fresh coriander.

  • Heat the oil in a saucepan. Cook the onion for 10 mins until soft, then add the ginger, garlic, turmeric, cumin and curry powder. Cook for 1 min more. Stir in the tomatoes and sugar. Steps:

  • Heat a wok over a high heat. Add the fenugreek, coriander, cardamom seeds and curry leaves, and toast for 2 mins or until starting to brown and release their aromas. Remove and grind to a powder using a pestle and mortar or spice grinder.
  • Return the wok to the high heat and add the oil. Add all the spices (including the ones you just ground) and cook for 1 min, then add the ginger, garlic, chilli, onion and 1 1/2 tsp salt, and stir-fry for 5 mins.
  • Add the cauliflower, toss with the other ingredients so it's well coated, then stir-fry for 7-10 mins or until it starts to soften. Add the tomatoes and stir-fry for another 3-5 mins or until they start to break down.
  • Pour in the coconut milk and cook over a medium heat, stirring, for 15-20 mins until the cauliflower is tender and the sauce has reduced. Squeeze over the lime juice and check for seasoning. Can be made a day ahead - pour in the coconut milk, reduce by half, then leave to cool and keep in the fridge.
