Champagne Salad image

Steps:

  • In a large bowl, cream together the cream cheese and sugar. Fold in the pineapple, whipped topping and strawberries and mix well. Stir in bananas and walnuts.
  • Freeze for 4 to 6 hours or overnight. Remove from freezer 1 to 2 hours before serving. Enjoy!

Simple Green Salad with Champagne Vinaigrette image

Steps:

  • Combine the cherry tomatoes, onions, green leaf lettuce, red leaf lettuce, bell peppers and cucumbers in a large salad bowl.
  • In small bowl, whisk together the vinegar and mustard. Gradually whisk in the oil to emulsify. Season with 1/2 teaspoon salt and a few grinds of pepper.
  • Toss the salad with vinaigrette and season with additional salt and pepper as needed.

1 cup cherry tomatoes, halved or quartered if large
1/4 cup thinly sliced red onion
1 small head green leaf lettuce, torn or cut into bite-size pieces
1 small head red leaf lettuce, torn or cut into bite-size pieces
1 orange, yellow or red bell pepper, thinly sliced

Steps:

  • Combine the marmalade and sugar in a small saucepan. Mix well, place over low heat and cook, stirring, until the sugar dissolves.
  • Cut the peel from the oranges, cut into slices and then quarter each slice, removing the white center pith from each. Put into a medium bowl.
  • Pour the sugar/marmalade mixture and Champagne or grape juice over the sliced oranges. Refrigerate for 8 hours.
  • Sprinkle with almonds before serving and add a sprig of mint.

This should be called Wedding Salad instead of Champagne Salad. My sister-in-law's mother made it for Sunday brunch after their wedding, and my Mother made it for a similar brunch after my sister's wedding as well as my daughter's. It's wonderfully easy to make and can be made in individual cups that can be taken out of the freezer as you need them.

Steps:

  • Cream sugar and cream cheese together; add strawberries, pineapple and bananas. Fold in cool whip. Place in 9X13 pan, freeze 8 hours or overnight. Thaw 1/2 hour before serving.
  • Note: Instead of freezing in a pan you can also use individual size serving cups. This works well if you are increasing the recipe for a large gathering.
