CHAYOTE SQUASH WITH RED PEPPERS AND GINGER
This is a combination of several recipes I found. Thought it turned out well, so here it is. Great easy side dish with a little kick of spice.

Steps:
- Heat a large skillet over medium heat, melt butter in the hot skillet, and stir chayotes, sugar, garlic, red pepper flakes, and ginger into butter. Cook, stirring frequently, until chayotes are tender, about 15 minutes; season with salt and black pepper.

CHAYOTE SQUASH AND JICAMA SLAW
Steps:
- Toss all the ingredients with the Orange Cilantro Dressing and serve.
- Juice the oranges through a strainer. Place about 1/2 cup of orange juice in a blender; add the ginger and shallot. Puree. After ginger and shallot are blended add the rest of the orange juice and blend again. Add the balsamic vinegar and rice wine vinegar. Taste and adjust the seasoning. Finish with cilantro just before you are ready to serve.

Steps:
- Wash chayotes & bring to a boil in salted water. Reduce heat to moderate, cover & boil about 1 hour, or until fork tender.
- In a heavy pot, heat oil. Add next 4 ingredients & stir constantly over high heat until meat losses it's red color.
- Reduce heat to moderate. Add next group of ingredients, mix, cover & cook for 45 minutes, stirring occasionally.
- Drain chayotes, remove cores & fibrous part under core. Scoop out the pulp, being careful not to break the shells. Place shells on an aluminum cookie sheet. Mash the pulp immediately & add to pot. Mix & cook at low heat for 15 minutes.
- Fill chayote shells with the mixture. Sprinkle with crumbs & dot with butter. Bake in preheated 375 deg oven until crumbs are golden brown.
- (Note: To me chayote squash taste a bit like apples, after it's cooked.).

- 1. in a pan with medium fire add butter, onion and celery and sautee until onions are translucent .
- 2. add garlic, chayote, serrano pepper and cumin seeds stir well.
- 3. cover the pan with a lid and let cook for 5 minutes.
- 4. add two cups of water and salt and let cook for more 10 minutes or until the chayote is soft.
- 5. remove from stove and carefully blend all the mix adding the mint leaves and avocado.
- serve in bowl and garnish it with a little ghee, pumkin seeds and one or two mint leaves.
- note : remove the ceanter cap of the blender and put a cloth on top to prevent accidents, pur the mix back in to the pan and mix awell making sure the mix has a good consistency you can add more water if need it.

PRAWNS WITH CHAYOTE IN TURMERIC SAUCE
Chayote is similar to squash and can be found in many supermarkets now. This dish is spicy and wonderful over rice. Fresh turmeric can be found in Asian markets. This recipe is from Indonesia and the shrimp turns a beautiful color.

- Peel the chayotes, remove the seeds and cut into strips.
- Grind the fresh red chillies, onion, ginger, sliced lemon grass and fresh turmeric to a paste in food processor. Add water to the paste mixture, with a squeeze of lemon juice and salt to taste.
- Pour into a pan. Bring to a boil and cook for 1-2 minutes. Add chayote and cook for 2 minutes. Stir in coconut milk.
- Stir in prawns and cook gently for 2-3 minutes. Serve over rice.

- Pare and seed the chayote.
- Cut lengthwise into 1/2-inch thick slices.
- Cut onions lengthwise into halves.
- Cut halves lengthwise into 1/4-inch slices and separate into slivers. Heat butter and oil in a skillet over medium heat until foam subsides.
- Add onions and oregano; sauté over medium-low heat until onions are golden (8-l0 minutes). Add chayote; sauté 3 minutes. Cover and cook until chayote is crisp tender (approx. 8 minutes).

- Heat oil in large skillet on medium-high heat. Add chayotes; cook and stir 5 min. or until evenly browned. Cover; cook on medium-low heat 7 min. or until crisp-tender, stirring occasionally.

- Combine first 7 ingredients in large pot. Bring to boil. Reduce heat and simmer 10 minutes to blend flavors. Strain liquid into bowl; return to same pot. Discard solids in strainer.
- Bring liquid in pot to boil. Add squash; reduce heat and simmer until squash are crisp-tender, about 7 minutes. Stir in lemon juice. (Can be made 6 hours ahead. Cover and chill. Rewarm over medium heat, if desired.) Stir in parsley. Serve soup hot or chilled.
