  • Cook pasta according to package directions. Meanwhile, in a large saucepan, saute garlic in butter for 1 minute. Stir in flour and pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Reduce heat; stir in 2 cups of cheese until melted. Remove from the heat. , Drain pasta; add pasta and 1/3 cup bacon to cheese sauce. Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 30 minutes. Uncover; sprinkle with remaining cheese and bacon. , Bake 5-10 minutes longer or until cheese is melted.

Steps:

  • Preheat oven to 350°F. Cook pasta according to package directions. Meanwhile, in a small nonstick skillet coated with cooking spray, saute onion until tender. Add garlic; cook 1 minute longer. Set aside. In a small saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in 1 cup cheese until melted. Drain pasta. Add pasta, bacon and onion mixture to the sauce; stir to coat. Transfer to a 3-cup baking dish coated with cooking spray. Sprinkle with remaining cheese. Bake, uncovered, at 350°F for 15-20 minutes or until cheese is melted. Yield: 2 servings.

  • Cook pasta as directed on package, omitting salt; drain.
  • Heat oil in Dutch oven or large deep skillet on medium heat. Add garlic; cook and stir 1 min.
  • Reserve 1 Tbsp. parsley for later use. Add remaining parsley to skillet along with all remaining ingredients; cook 3 to 5 min. or until Neufchatel is completely melted and pasta sauce mixture is heated through, stirring frequently.
  • Add pasta; cook and stir 2 to 3 min. or until heated through. Sprinkle with remaining parsley.

Bacon and Parmesan Penne Pasta image

Steps:

  • Place the chopped bacon and onion in a skillet over medium heat, and cook and stir until the bacon is crisp and the onion is beginning to brown, about 10 minutes.
  • While the bacon and onion are cooking, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through, but is still firm to the bite, about 11 minutes. Drain pasta, transfer to a large serving bowl, and stir in the olive oil to coat the pasta.
  • Drain the bacon grease from the skillet, leaving a couple of tablespoons or to taste. Stir the cooked bacon mixture into the pasta, and sprinkle the Parmesan cheese over the pasta. Stir to mix in the cheese, and serve.

Baked Penne with Farmhouse Cheddar and Leeks image

Steps:

  • Lightly butter 15x10x2-inch baking dish. Melt 1/4 cup butter in heavy large saucepan over medium heat. Add leeks; stir to coat. Cover saucepan and cook until leeks are tender, stirring occasionally, about 12 minutes (do not brown). Uncover saucepan; add flour. Stir 2 minutes. Add milk; bring to simmer, stirring often. Add cheese, mustard, and pepper sauce. Stir until cheese melts. Remove from heat. Season cheese sauce to taste with salt.
  • Whisk eggs in medium bowl. Gradually whisk in 1 cup cheese sauce. Stir egg mixture into cheese sauce in saucepan.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain. Return to pot.
  • Stir cheese sauce into pasta in pot. Transfer to prepared baking dish. do ahead Can be made 2 hours ahead. Let stand at room temperature.
  • Preheat oven to 400°F. Bake pasta until cheese sauce is bubbling around edges and some ends of pasta are golden brown, 25 to 30 minutes.
  • Let stand 15 minutes. Serve hot.

Steps:

  • Bring a large saucepan of water to a boil. Then add pasta and cook according to package directions.
  • Meanwhile, cut bacon into bite-size pieces.
  • Heat a large, wide frying pan, preferably non-stick, over medium heat.
  • Add bacon and stir often until bacon is browned and crispy, from 4 to 5 minutes. Drain fat from pan, if you wish.
  • Then stir in drained tomatoes.
  • Using a wooden spoon, break up tomatoes and cook until hot and bubbly, about 2 minutes.
