- Preheat oven to 425 degrees. In a large bowl, whisk flour, cornmeal, sugar, baking soda, salt, and pepper; make a well in center of flour mixture. Add buttermilk and eggs to well, and whisk to loosen eggs. Gently incorporate dry ingredients, then mix in cheese.
- Place butter in a 9-inch cast-iron skillet; bake until butter is melted. Remove from oven, and tilt to coat bottom and sides.
- Pour batter into prepared skillet; bake until golden and a toothpick inserted in center comes out clean, 20 to 25 minutes. Let cornbread cool in skillet at least 15 minutes before cutting. Serve warm or at room temperature. Wrap completely cooled bread in plastic, and store at room temperature up to 1 day.

SHEET PAN MEATLOAF

- For the meatloaf: Preheat the oven to 400 degrees F. Coat a half-sheet pan with cooking spray and sprinkle with the breadcrumbs, which will absorb the juices during cooking.
- Pour the milk over the bread in a bowl and allow it to soak up the milk. Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, parsley and pepper in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.
- Pat the mixture evenly into the prepared sheet pan, spreading all the way to the edges and corners.
- Next, make the glaze: Whisk together the ketchup, brown sugar, balsamic vinegar and Worcestershire sauce in a bowl until well combined. Brush the mixture evenly over the top of the meatloaf. Sprinkle with the bacon.
- Bake until the meat is cooked through and slightly browned, 20 to 25 minutes.
- Remove from the oven, then cut into squares and serve with the mashed potatoes. Garnish with the chopped parsley.
BACON-CHEDDAR MEATLOAF

- Preheat oven to 400 degrees F.
- Cook bacon in a medium nonstick skillet over medium-low heat, until crispy and fat renders, about 10 minutes. Remove bacon with a slotted spoon to a paper towel-lined plate, reserving renderings in the skillet. Cook the onions and garlic in the pan drippings until brown, about 15 minutes. Let cool.
- Meanwhile, in a large bowl whisk the eggs, mustard, hot sauce, Worcestershire, cream, salt, and pepper. Add the meat, cheese, parsley, and cooked onion. Chop and add the bacon. Mix with a fork until evenly blended. Whisk the glaze ingredients together in a bowl.
- Dampen hands with water and on a foil-lined cookie sheet, pat mixture into a loaf shape. Bake until an instant-read thermometer inserted into the center of the loaf registers 155 degrees F, about 1 hour. Spread the glaze onto the meatloaf after about 50 minutes. Let loaf rest for at least 10 minutes before serving.

- For the cake: Preheat the oven to 350 degrees F. Line a 9-by-5-inch loaf pan with parchment, allowing it to hang over the sides. Spray the parchment with baking spray and set aside.
- In a large bowl, combine the cake mix, milk, melted butter and eggs until smooth. Fold in the chocolate chunks. Add the batter to the prepared loaf pan. Place the loaf pan on a sheet pan and bake until a cake tester comes out clean, 40 to 45 minutes. - Combine milk, water and 3 tablespoons margarine in a saucepan. Heat over low heat until liquids are very warm (120F to 130F degrees). Margarine does not need to melt.
- Place 6 cups flour, sugar, salt and yeast in bowl. Attach bowl and dough hook. Turn to speed 2 and mix about 1 minute. At speed 2, gradually add cheese then warm liquid mixture, about 30 seconds. Continue to mix at speed 2 until dough clings to hook, and starts to clean bowl, about 3 to 5 minutes.
- Continue on speed 2, add remaining flour, ½ cup at a time until dough loses stickiness clings to hook and cleans sides of bowl. Knead a little bit longer on speed 2 until dough is smooth and elastic. Stop kneading.
- Place in greased bowl, turning to grease top. Cover: let rise in warm place free from draft, until doubled in bulk, about 40 minutes.
- Punch dough down. Divide dough into 32 equal pieces. Shape each piece into a smooth ball. Arrange 16 balls in a well-greased 10-inch tube pan. Brush with melted margarine and sprinkle with half of the caraway seed. Arrange remaining balls of dough on top. Brush with melted margarine and sprinkle with remaining caraway seed. Cover: let rise in warm place, free from draft, until double in bulk, about 45 minutes.
- Bake at 375 degrees for 40 minutes or until done. Remove from pan and cool on wire rack. Best served warm.
THREE-SEED CROWN LOAF

- Measure the water and honey in a bowl and sprinkle the yeast on the top. Let the yeast sit for a couple of minutes to activate it. Add 2 cups of the flour, salt, gluten, dough enhancer, and 4 tablespoons of the sunflower oil to the yeast mixture and mix well. Slowly add the rest of the flour (approximately 6 cups) to the mixture until a soft, moist dough is formed and the dough no longer clings to the outside of the bowl. You may need a little more or less flour. Knead the dough until gluten is formed (it is critical that the gluten be formed or you will get a heavy bread). The dough should be smooth and spring back when pressed, about 8 to 10 minutes. You can also check to see if gluten is formed by doing the "window test". The window test is when the dough can be stretched and it doesn't break, but will stretch and create a translucent membrane or window.
- Rub 1 teaspoon of sunflower oil around a large bowl. Turn the dough in the oil, then cover the bowl and let dough stand until double, about 1 hour.
- While dough is rising, lightly grease a 12-inch deep Dutch Oven. When dough has doubled, turn out dough and shape it into a round even ball. Cut the ball into 8 equal wedges. Combine 2 of the wedges into a ball and place in the middle of the Dutch oven for the larger middle ball of the crown. Form the remaining 6 wedges into individual balls. Lightly beat the egg in a small bowl to make the egg glaze. Brush each of the balls in egg glaze and then dip 2 balls in poppy seeds, 2 balls in sesame seeds, and 2 balls in sunflower seeds. Place each set of balls on the opposite side of the middle ball so that you have the different balls alternating around the outside of the middle ball or Dutch oven (eg. Going around the circle, it may go poppy, sesame, sunflower, poppy, sesame, and sunflower.) Let the dough rise until just about double again inside the Dutch oven. Preheat oven to 350 degrees F. Bake until golden brown, about 40 minutes to 1 hour.
- Notes: To get lighter dough you can substitute about 1/2 of your whole-wheat flour with white flour. However, you can still get remarkably light dough using all whole-wheat flour if you add the dough enhancer and gluten and make sure your gluten is properly formed during the kneading process. Adding the enhancer and gluten were tricks learned from my mother who raised us on home made whole-wheat bread. I have yet to find a better way to get whole-wheat bread as light and fluffy as this.
CHEDDAR AND BACON LOAF RECIPE

- Snip the bacon into strips and dry-fry in a pan until crisp, then cool.

TRADITIONAL COTTAGE LOAF - OLD FASHIONED RUSTIC ENGLISH BREAD
Just the shape of this traditional loaf of bread is reminiscent of ploughman's lunches and warm cottage kitchens! A delightfully shaped loaf of bread, which represents all that is rustic and rural in Britain, but especially England. This bread keeps well and makes lovely, if odd shaped sandwiches! Cut the loaf into wedges and serve with freshly churned butter and a hunk of mature Cheddar cheese, maybe with a pickled onion or two. Quintessential British bread at its best. This reminds me of baking days in my grandmothers' old cottage, sitting in her warm and cosy kitchen; she would have baked this in her wood burning Aga stove, as I sometimes do in the winter when my Godin wood burning stove is working. I often leave the first batch of dough to prove and rise overnight - leave it in a cool but NOT cold place, and then continue shaping and proving it next morning. We used to call this wooden spoon bread when we were little, as you push a wooden spoon down through the two loaves to stick them together before baking! Preparation time includes the proving of the dough - but NOT the overnight method!

- Sift flour and salt into a bowl, stir in sugar and yeast. Make a well in the centre, stir in the tepid milk and water to make the dough. (If using fresh yeast - put the yeast in a jug with a little of the milk and water mixture, and allow it to dissolve and become frothy - mixing thoroughly, then add it to the flour.).
- Tip the dough onto a lightly floured surface and knead for 10 to 15 minutes until smooth and elastic.
- Put the dough in a large, clean, oiled bowl. Cover with oiled clingfilm and leave in a warm place until it has doubled in size.Then knead the dough for 1 minute and divide it into two-thirds and a third. Shape the pieces into rounds. Cover them and leave for 5 minutes.
- Put the smaller round on top of the larger one. Push a floured wooden spoon (or your fingers) through the centre of both rounds, to join them together. Take a very sharp knife and make cuts all around the top round and the bottom round - see my photos. Put the cottage loaf on a lightly floured baking tray, cover and leave for about 45 minutes, or until it has doubled in size. Meanwhile preheat the oven to 220C/440F/Gas 7.
- Beat the egg with a tablespoon of water and a pinch of salt. Brush the glaze over the cottage loaf and bake for about 35 to 45 minutes, until dark golden brown and hollow sounding when tapped beneath.
- Cool before slicing. Delicious served with butter, jam, cheese, cold meats or make sandwiches or toast for picnics and breakfast!

This is an old standby vegetarian recipe from the 70s. It is from "Diet For A Small Planet" by Frances Moore Lappe. It's a nice alternative if you want a meat-free entree, or you can use it as a side dish as well. Very good on a cold fall evening. I use my cuisinart to grind the walnuts.
