Cheerios™ Banana-Raisin Muffins image

Steps:

  • Heat oven to 400° F. Spray 12 regular-size muffin cups with cooking spray, or grease bottoms only of muffin cups. Place cereal in food-storage plastic bag; slightly crush with rolling pin to make 1 1/2 cups.
  • In large bowl, mix cereal, flours, brown sugar, baking powder and baking soda. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
  • Bake 18 to 22 minutes or until golden brown. Let stand about 2 minutes in pan, then remove from pan to cooling rack. Serve warm if desired.

Apple and Cheerios™ Banana Muffins image

Steps:

  • To prepare the muffins: Preheat the oven to 350 °F.
  • In a container, combine the ground Cheerios™ with the quinoa flour, potato starch, cinnamon, baking powder, baking soda and salt.
  • In a separate container, combine the coconut oil and sugar. Add the egg and mashed banana.
  • Add the apples and incorporate to the Cheerios™ mix. Pour the batter into the individually-lined muffin pan.
  • To prepare the topping: Combine all the ingredients and drizzle about 1/2 teaspoon of the mix over each muffin. Bake for 30 minutes or until muffins are golden brown. Serve and enjoy!
