This is a wonderful cheese ball. It is very easy to make and simply delicious. Whenever I make it for gatherings or work it always gets great reviews. Serve with an assortment of crackers.

- In a large bowl, mix together cream cheese, Cheddar cheese, and dressing mix. Form into one large ball or two smaller balls. Roll in chopped pecans to coat surface. Decorate the top with pecan halves. Refrigerate for at least 2 hours, or overnight.

PIMIENTO CHEESEBALL

Steps:
- Add the Cheddar, mayonnaise, hot sauce and garlic to a food processor and pulse to combine, making sure the cheese remains coarse. Add the cream cheese and pulse until combined. Add the chopped pimientos and pulse twice, just to incorporate into the mixture.
- Line a small bowl with plastic wrap then press the cheese mixture into the bowl. Cover the top with the overhanging plastic wrap and refrigerate for at least 2 hours or overnight.
CHEESE BALLS
Steps:
- In a large pot of boiling salted water, cook the pasta to al dente according to the package directions.
- Meanwhile, bring the heavy cream to a simmer in a large saucepan and slowly add in the Cheddar, mozzarella, Swiss cheese, American cheese and white Cheddar, stirring, until smooth and creamy. Season with salt and pepper.
- Drain the pasta and add to the cheese mixture. Stir until all the pasta is well-coated. Place in the refrigerator for 10 to 15 minutes.
- Scoop the pasta into balls, rolling until uniform and about 3 inches in diameter. Set aside.
- Place the flour, beaten eggs and panko into separate shallow bowls. Roll each individual pasta ball first into the flour, then the eggs, then the panko.
- Fill a deep saucepan with 3 inches of canola oil and heat to 350 degrees F. Line a sheet pan or platter with paper towels. Carefully drop several pasta balls into the oil (do not crowd; fry in batches) and fry until golden, about 3 1/2 minutes. Remove and drain the balls on the paper towels. While still hot, sprinkle with the Parmesan and serve.
CHEESE BALL
This is a very tasty cheese ball recipe that I got from my cousin. You can make it with lower in fat cheese. I usually use the lower in fat cheese and you can't tell a difference.

THE BEST CHEESEBALL
Super simple and delicious. I made 1 cheeseball, but this recipe makes 4 cheeseballs. Feel free to cut the recipe back if you don't want quite that much delicious cheeseball floating around. - Place finely chopped pecans in a shallow dish and set aside.
- In a large bowl (or the bowl of a stand mixer fitted with the paddle attachment), mix the cream cheese until smooth.
- Add the cheddar cheese and mix until just combined.
- Lightly sprinkle all the seasonings and sauces over the cheese mixture and mix until thoroughly combined.
- With lightly greased hands, portion the cheese mixture into 4 pieces and roll each section into a round ball.
- Coat in pecans.
- The easiest way to do this is to hold the cheeseball in one and and scoop up the pecans and press them onto the cheeseball with the other, turning the cheeseball as you go and letting the excess pecans fall back into the dish (this helps the pecans go farther).
- Cover each cheeseball in saran wrap and refrigerate until ready to serve.
DILL PICKLE CHEESEBALL

- In a large skillet, melt the butter over medium-high heat. Add the shallow and cook until soft, about 3 minutes. Add the cauliflower rice and cook until tender, about 4 minutes. Season with 1/2 teaspoon each salt and pepper.
- Transfer the cauliflower rice mixture to a bowl along with the cream cheese, cheddar, Parmesan and Worcestershire sauce. Beat with a mixer until smooth, then cover and chill until firm.
- Roll the cheese mixture into a ball, then roll in toasted almonds, pressing gently to coat. Serve with crudites and crackers.

- In the base of a blender or food processor, combine the soaked (and drained) cashews, cream cheese, nutritional yeast, olive oil, soy sauce, dill, garlic powder, onion powder, salt + pepper. Add in the water starting with just 1 tablespoon and add a little more if your mixture becomes too thick to properly blend.

- Process the cream cheese. Place the cream cheese in the bowl of a food processor fitted with a metal blade. (Alternatively, use a handheld electric mixer and large bowl.) Process or beat until light and fluffy in texture, 30 seconds to 1 minute.
- Mix in the second cheese. Add the grated cheese and process or beat for 30 to 45 seconds. Stop the machine and scrape down the sides of the bowl. It should be very smooth and completely combined. If it is not, process or mix another 30 seconds.
- Mix in the liquid flavoring. Add the garlic, lemon juice or alcoholic spirit, and Worcestershire. Process or beat until the mixture is completely smooth, there no lumps or bits, and the mixture is thick and fluffy, one full minute or more. Stop the machine and scrape down the side of the bowl.
