Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
  • Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

Easy, freezes well (raw), and can be tripled. If you sub in ground turkey, that is good too. While I was still working I would put meatloaf in oven (frozen) with baker potatoes (wrapped in foil) and baked carrots in the morning before I left the house, and set up my delay bake cycle on my oven and come home to a nice meal. If you do have leftovers, you can cube the leftovers up and add to spaghetti sauce or make yourself a sandwich.

Steps:

  • Mix first nine ingredients.
  • Put half of meat mixture into loaf pan.
  • Top with shredded mozzarella.
  • Then cover with rest of the meat mixture.
  • Bake at 350°F oven for 1 hour and 15 minutes.
  • If you freeze it (raw), double wrap in foil.
  • To make in crockpot (which I have not done yet)--put 3 heavy duty foil strips, each measuring 18 X 3 inches in a crisscross so they resemble spokes of a wheel in crock pot. Place meatloaf in the center of the strips. Pull the foil strips up and over the meatloaf. Cover. Use the foil as handles to lift out. Estimating time at 8 hours on LOW or 4 hours on HIGH. Also, read that you can cut up two potatoes, into finger size pieces and put that underneath the meatloaf in crock pot. Ummm.

  • Position an oven rack in the upper third of the oven and preheat to 375 degrees F.
  • Mix together the breadcrumbs, milk, parsley, eggs, 1/4 cup of the French Style Dijon Balsamic Vinaigrette and 1/4 cup of the ketchup in a large bowl. Set aside until the breadcrumbs have absorbed the liquid, about 3 minutes.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

Dad's Cheesy Bacon Wrapped Meat Loaf image

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon.   • Pre-heat oven to 400 degrees.
  • Spray bottom of casserole dish with non-stick cooking spray or rub with oil.
  • Pour in uncooked rice. (You may need more than 1/2 cup, but there should be JUST enough to cover bottom of the dish). Add 2-3 pads of butter on top of rice.
  • Lay thin slices of potatoes over rice layer, and then a layer of onion rings.
  • Add small pads of butter and sprinkle some of the salt, pepper and Italian seasoning over the layers.
  • Repeat layers of potatoes and onions, butter, then sprinkled seasonings 2 more times.
  • Season uncooked ground beef with Italian seasoning and spread out over top of all layers.
  • Top the ground beef with enough spaghetti sauce to cover completely.
  • Add more Italian seasoning if desired.
  • Cover casserole dish with foil and bake for 1 hour.
  • Remove dish from oven, remove foil, and top with cheese.
  • Place back in oven for 15 minutes.
  • Cut, serve, and enjoy!

I like to stuff the meatloaf with Mozzarella and top it with marinara sauce, making it sort of an Italian theme. You can also use a Mexican blend of cheese and top with salsa, so there are many ways to go with this recipe! I sometimes use croutons that you can buy at the store instead of the saltines.   • Preheat oven to 350 degrees.
  • Spray a loaf pan with non-stick spray.
