Steps:
- Place the first 6 ingredients in a food processor; cover and process until blended. In a greased 3-qt. baking dish or 13x9-in. baking pan, layer half of the potatoes, tomato mixture and cheese. Repeat layers. Pour broth over the top. , Cover and bake at 325° for 1-1/2 hours. Uncover; bake 15 minutes longer or until potatoes are tender. Let stand for 10 minutes before serving.

CHEESY POTATO SKINS WITH SUN DRIED TOMATOES

Steps:
- 1. preheat oven to 375°
- 2. bake potatoes for 50 minutes or until tender. Let cool. Cut each potato in half. Scoop out the pulp with a spoon, leaving 1/4 inch of potato in each half. Cut each half in half again to form quarters.
- 3. Season to taste with salt and pepper. Place potato quarters in a pan and bake for 15 minutes. This will crisp them up so that they can be picked up easily.
- 4. Place potato pulp in a bowl and mash with a potato masher. Stir in sour cream, cheeses, tomatoes, green onions and parsley. With your hands, divided mixture evenly among the potato skins, pressing into the skins. Sprinkle with pepper and bake for 15 minutes. Serve warm. Makes 16 servings.

- 1. Scrub potato skins and bake until fork tender. Allow to cook in order to handle. Slice off a small amount of skin and flesh from both sides of the potato. Then cut out the middle with a spoon or knife.
- 2. Mix together cream cheese, grated cheese (I used smoked cheddar). Add red pepper flakes or any other spice or season you would like with your baked potato. I also added a little chopped cilantro, but green onion would have been good. Cooked crumbled bacon would be delicious too.

- 4. Once you have the meat ready, place the empty potato onto the meat about 1/3 way (you want to wrap the meat over the top of the potato). Then gently but firmly stuffed the potato with the cheese mixture.
- 5. Now fold meat over top of potato and roll up. Grill for about 5 minutes on each side.

- Heat the oven to 400. Wrap 2 asparagus spears with a slice of prosciutto. Place spears on baking sheet. Drizzle olive oil on the tips and ends of the asparagus (avoiding the prosciutto).
- Roast for 8-10 minutes, until the asparagus is cooked through and the prosciutto becomes crispy.

This was my first ever attempt at cooking steak, so i thought i'd experiment with what i had and see how it turned out!! As it happens it was VERY yummy!

Steps:
- Heat a blob of oil in a pan and fry onions and garlic until soft.
- Add steak and cook until browned, trying to keep most of the onion and garlic on top of the steak.
- Add red pepper, 1 tsp cumin, 2 tsp paprika, 2 tsp chilli flakes, herbs and s&p, covering the meat. (add seasonings according to taste, i didnt actually measure mine but i like it hot!).
- Fry on medium heat until steak is cooked as preferred.
- Stir in passata, making a sauce around the steak with the rest of the ingredients.
- Once sauce is hot through, serve with a good dollop of creamy mash!

Steps:
- Cut the steak into 4 portions and sprinkle with a pinch of salt.
- In a large skillet, heat 1 tablespoons oil over medium-high heat.
- Brown the steak on both sides and transfer to a casserole dish.
- Pour off any fat.
- Add the rest of the oil to the pan.
- Fry the garlic with a pinch of salt and 1/4 to 1/2 teaspoons red pepper flakes over medium heat until fragrant, about 30 seconds.
- Add the wine, tomatoes and rosemary, scraping up any brown bits and breaking up the tomatoes with a spoon.
- Pour the tomato/wine mixture over the steak.
- Cover tightly and bake in a 350 degree F oven for 1-1/2 to 2 hours.
- Remove the steak from the pan and transfer to a warm serving dish.
- Cook the liquid over medium-high heat, stirring occasionally, until reduced to the desired consistency.
- Spoon over the steak.
