CHOCOLATE CHERRY TRUFFLES
My cherry truffles were the delicious result of a kitchen experiment involving a bottle of kirsch I'd received as a gift and some dried cherries I had on hand. They won a blue ribbon at the Wisconsin State Fair! -Gerry Cofta, Milwaukee, Wisconsin

Steps:
- In a small bowl, combine cherries and brandy; cover and let soak for 1 hour or until cherries are softened., Place dark chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in extract and soaked cherries with liquid. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until firm., Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave, melt milk chocolate; stir until smooth. Dip half of the balls into milk chocolate, allowing excess to drip off. Place on waxed paper; let stand until set., Melt dark chocolate; stir until smooth. Dip remaining balls into dark chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Drizzle with melted chocolate and decorate with pearl dust as desired. Store in an airtight container in the refrigerator.

CHERRY SQUARES
I got this recipe from my mother--she used to make it for club meetings and church functions when I was younger. Now my kids like it too! One thing to note--there is no baking soda or baking powder in this recipe--the beaten eggs make it rise.

Steps:
- Cream butter and sugar; add eggs and beat until fluffy. Add all other ingredients except cherry pie filling and beat well. Spread batter into a 10 X 15 jelly roll pan that has been greased and floured or sprayed with cooking spray. Spread cherry pie filling on top of batter in spoonfuls making 4 rows the length of the pan. Bake in a 350 degree oven for 35-45 minutes. May sprinkle with powdered sugar or drizzle with powdered sugar icing when done baking.

CROWD-PLEASER CHERRY SQUARES
This is my favourite bar-type cookie from Company's Coming! After you've tried it, you'll understand why.

Steps:
- FIRST LAYER: Crumble ingredients together well.
- Press into ungreased 9 x 9 inch pan.
- Bake in preheated 350F oven for 15 minutes.
- SECOND LAYER: Beat eggs slightly; add remaining ingredients in the order listed.
- If using maraschino cherries, drain well.
- I prefer using candied cherries- at Christmas, I use a mixture of red& green.
- Spread over first layer& return to oven for 25 minutes.
- Let cool completely.
- TOP LAYER: Beat ingredients in a small bowl, adding more water if necessary to make a more spreadable mixture.
- This makes a minimum amount of icing to spread over top.

- In a small saucepan, bring the cream, butter and sugar to a boil, stirring constantly. Remove from the heat; stir in chocolate until melted. Cover and refrigerate for at least 4 hours or until easy to handle. , Pat cherries with paper towels until very dry. Shape a teaspoonful of chocolate mixture around each cherry, forming a ball. Cover and refrigerate for 2-3 hours or until firm., In a microwave, melt chocolate and shortening; stir until smooth. Dip cherries until coated; allow excess to drip off. Place on waxed paper to set.

- Heat oven to 350°F. Cut cookie dough in half crosswise. Cut each section in half lengthwise. With floured fingers, press dough in bottom of ungreased 13 x 9-inch pan to form base. Bake at 350°F. for 12 to 16 minutes or until light golden brown. Remove from oven. Cool 45 minutes or until completely cooled.In medium microwave-safe bowl, combine chocolate chips and butter. Microwave on HIGH for 1 to 2 minutes or until melted and smooth, stirring every 30 seconds. Add cocoa, corn syrup and milk blend well. Add powdered sugar mix until smooth. Press over cooled base. Top with cherries gently press into filling.In small microwave-safe bowl, combine vanilla chips and shortening. Microwave on HIGH for 1 to 2 minutes or until melted and smooth, stirring every 30 seconds. Spoon and spread over filling. Refrigerate 20 minutes or until set. Cut into squares or diamond-shaped pieces.
