MEXICAN CHILI BUTTER

Use this butter on chicken breasts & broil them. Also use on Bread or Bolillos (Mexican buns) or put a dab on your veggies.Great on Hamburger buns or steaks. Many used and it will keep in the freezer for over a month.

Mexican Chili Butter image

Steps:

  • Place ancho chili in a small bowl and pour the boiling water over it (if using fresh jalapeno omit this step) Drain the chili& place chili in a blender with 1 1/2 tbsp of the soaking water, discard the rest of the soaking water, and process until very smooth, cool completely (with the jalapeno just process until smooth) Beat butter until fluffy.
  • Beat in the garlic& oregano.
  • Graduallybeat in the chili to blend throughly.
  • Mold into a small bowl, cover& refrigerate to firm.

1 dried ancho chilies, toasted,seeded,chopped in small pieces or 2 fresh jalapenos, seeded and chopped but they are not as good
1 cup boiling water
1/2 cup butter, at room temperature
2 cloves garlic, minced
1/4 tso dried oregano

Steps:

  • Purée broth, tomatoes with their juice, chiles, onion, garlic, cilantro, peanuts, cumin, and salt in a blender until smooth, about 2 minutes.
  • Heat oil in a wide 3- to 4-quart heavy saucepan over moderately high heat until hot but not smoking, then pour in sauce and boil, uncovered, stirring occasionally, 5 minutes.
  • Meanwhile, coarsely shred chicken, discarding skin and bones.
  • Stir chicken and beans with their sauce into chili, then reduce heat to moderately low and simmer, covered, 10 minutes.

1 1/4 cups reduced-sodium chicken broth (10 fluid ounces)
1 (14- to 15-ounce) can stewed tomatoes
4 dried New Mexican or guajillo chiles, stems and seeds discarded and chiles torn into pieces
1 (3/4-inch-thick) crosswise slice of a medium white onion
2 garlic cloves, peeled

1/4 cup dry-roasted peanuts
1 teaspoon ground cumin

CHI-CHI'S DIABLO SAUCE

I worked at Chi-Chi's for 16+ years. My favorite sauce over all those years was called Diablo Sauce. My favorite food to eat there was the Soft Taco Enchilada style with Diablo Sauce. A little shredded lettuce and pico de gillo on both sides. Yum!

Steps:

  • Brown ground pork, onions.
  • Add diced chilis, La Victoria salsa.
  • Add 3 cups water.
  • Add Ortega taco seasoning.
  • Add 1/2 tsp salt.
  • add 2 tbsp cumin.
  • combine 2 tbsp corn starch and 1/4 cup water and add too sauce.
  • continue to simmer till thickened.

2/3 cup chopped white onion
1 (4 ounce) can diced green chilies, with juice
10 tablespoons la victoria green chili salsa
jalapeno (x-tra hot)
3 cups water
1 (1 1/4 ounce) package Ortega taco seasoning (Hot & Spicey)
