CHICKEN IN GARLIC WHITE WINE CREAM SAUCE
I have had chicken in white wine cream sauce at a local restaurant and found it was probably my favorite chicken dish. I have searched in vain for a recipe that would include all the ingredients I now only vaguely remember. So, in desperation, I found a basic recipe and have adapted it. I have made this a few times and found it very close to what I remember. The only missing ingredient is cheese. I have yet to remember what cheese was used (other than it was a white cheese). Eventually I will experiment with adding cheese, but for now I am really pleased with this version. I hope you like it too.

Steps:
- Lightly brown both sides of chicken in olive oil.
- Add onion, garlic, mushrooms, and butter and saute about 4-5 minutes until onions start to become translucent.
- Add wine and Worcestershire sauce and cook an additional 2 minutes.
- Lower heat and add cream, salt, pepper, basil, and parsley.
- Too high of heat will cause the cream to curdle.
- Simmer on low 20-25 minutes until done.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Clean chicken breasts and season with salt, pepper and garlic powder (or whichever seasonings you prefer) on both sides of chicken pieces.
- Bake for 25 minutes, then add cream of chicken soup and bake for 10 more minutes (or until done). Serve over rice or egg noodles.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Season chicken breasts with oregano, basil, salt, and black pepper.
- Cook the chicken breasts on preheated grill until no longer pink in the center and the juices run clear, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Melt butter with vegetable oil in a saucepan over medium heat. Cook and stir garlic in the butter mixture until fragrant, about 2 minutes. Stir flour through the butter mixture; cook and stir until flour is incorporated, about 1 minute more. Pour heavy cream and chicken broth into the saucepan; stir. Continue cooking until the mixture thickens, 3 to 5 minutes. Add Parmesan cheese and cream cheese to the saucepan; cook, stirring occasionally, until the cheese is melted into the sauce, about 5 minutes.
- Plate the chicken breasts. Spoon sauce over the chicken. Serve extra sauce on the side.

CHICKEN IN CREAMY WHITE SAUCE-EASY
My roommate in college could cook one recipe, and this was it. It is incredible. Everyone who has ever had it loves it. Also, it is amazingly easy--4 ingredients, no prep, just mixing in 1 dish. Make lots of rice, you will want to eat just the sauce over rice-TRUST ME! Great left overs. I always use extra sherry-it cooks off.

- Mix in Sherry until smooth.
- Wash and dry chicken.
- Submerge chicken in mixture.

QUICK AND EASY CHICKEN IN A PARMESAN WHITE SAUCE
I don't recall where I got this recipe but this is a quick and easy weeknight dinner. My family loves this dish. You can also just make the noodles and use as a side dish. Also freezes well.

- Cut chicken into bite size pieces.
- Marinate chicken in the 8 ounces of ranch dressing. Marinate for 30 minutes. I normally marinate for about 8 hours (I leave it in the fridge while I am at work).
- Cook chicken until done.
- While chicken is cooking, cook egg noodles according to package directions.
- Drain and add butter.
- Add the ranch packet, half and half and parmesan cheese and mix well.
- Add chicken to noodle mixture and serve.
- If you want a creamier sauce add more half and half. Or if you like more cheese, add it.
- This also freezes well if you undercook the noodles before freezing.
- When ready to cook, thaw in the fridge the night before and reheat in the microwave. You may need to add more half and half when reheating.

- Preheat oven to 350.
- Dice chicken and brown in a large skillet, remove from heat.
- Add soup, sour cream, yogurt, and chilis and stir til well combined.
- Place about 1/4 Cup of the chicken mixture into tortilla and roll up.
- Place evenly into a 9X13 pan.
- Spread the remaining chicken mixture over the top of the rolled tortillas in the pan making sure to completely cover the top of them.
- Bake for 30 minutes, covered.
- Remove from oven, sprinkle with shredded cheese and put back into the oven to bake for 10 minutes more or until the cheese melts.

- Slice the chicken into thin strips and toss in the seasoned cornflour.
- Heat the oil in a pan and fry the chicken pieces until golden brown.
- Add the mushrooms and cook until tender,about 2 minutes.
- Remove the chicken and mushrooms and keep warm.
- Pour the wine into the pan, bring it to the boil, and then add the cream. Cook for 1-2 minutes, until the sauce is thick and creamy. Season to taste.
- Pour the sauce over the chicken, sprinkle with fresh parsley and serve.
