Steps:

  • In a large deep dish, nonstick skillet or pot, brown ground beef with onion and salt.
  • Add tomatoes, beans, chicken broth, water, chilies, chili powder and garlic, stir together and bring to a boil.
  • Reduce heat and let simmer on low heat for 20 minutes.

Chunky Pork Chipotle Chili image

Steps:

  • Chop the onion. Mince the garlic. Cut the pepper into 1/2 inch chunks. Cut the pork into 3/4 inch cubes.
  • Heat the oil in a large saucepan. Add onion and garlic and cook 3 minutes.
  • Toss the pork cubes with the cumin and chili powder until well coated.
  • Add the pork to the saucepan and cook until the pork is browned, about 3 minutes.
  • Add the bell pepper, beer, picante sauce, and 1 tablespoon of the chipotle chilis. Bring the mixture to a boil. Simmer about 5 minutes or until pork is tender. Taste and add more chipotle if desired.
  • Add the beans and heat through.
  • Serve topped with sour cream and cilantro, if desired.

EMILY'S CHIPOTLE CHILI

The chipotle peppers give this slow cooker chili a subtle, smoky flavor. Add more minced chipotle peppers to taste. Serve with sour cream, sharp Cheddar cheese, and chopped fresh cilantro.

Emily's Chipotle Chili image

Steps:

  • Cook sausage and ground beef in a large pot over medium-high heat until lightly browned and crumbly. When the meat has released its grease, and has begun to brown, drain off accumulated grease, and season with chili powder, cumin, and coriander. Cook and stir for 1 minute until fragrant, then stir in the garlic and onion. Cook until the onion has softened and turned translucent, about 4 minutes.
  • Stir in the diced tomatoes, tomato sauce, kidney beans, chipotle peppers, salt, and pepper. Bring to a simmer, then pour the chili into a slow cooker. Cover, and cook on Low for 8 to 10 hours. Stir in tomato paste an hour before the chili is done.

Chipotle Chicken Chili image

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the garlic and onions and cook for a few minutes until the onions soften. Add the chicken and cook until lightly browned. Add three-quarters of the beer, reserving the rest, then cook for a couple of minutes to reduce. Add the black beans, kidney beans, pinto beans, tomatoes, chile powder, cumin, salt and chipotles and stir to combine. Bring to a simmer, then cover the pot and cook for 1 hour.
  • Combine the masa harina with the rest of the beer and stir to make a paste. Add this into the chili, along with the lime juice. Stir and cook until thick, 10 more minutes.
  • Serve with the grated cheese, sour cream, diced tomatoes, cilantro and lime wedges for squeezing.

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and sausage in the hot skillet until some of the fat renders, 2 to 3 minutes; add onion and garlic and continue to cook and stir until the meats are browned and crumbly, 5 to 7 minutes more. Transfer beef mixture to a slow cooker.

Steps:

  • In a large pot, heat oil over medium-high heat. Cook turkey with salt and pepper, stirring, until browned, 5 to 10 minutes. Add carrots, onion and garlic; cook, stirring occasionally, until carrots soften, 3 to 5 minutes. Stir in chili powder. Add tomatoes, cherries, chipotles, bay leaves and 1/2 cup water; bring to a boil. Reduce to a simmer; cook, stirring once or twice, until chili thickens, 10 to 15 minutes. Add beans; cook 2 minutes. Chipotle Chicken Chili - Spicy image

Steps:

  • In a soup pot, add celery, onion, red peppers, canned tomatoes, chicken broth, tomato paste, pureed chipotle chili (puree in blender with the adobo sauce. It might work better if you add some of the chicken broth), chili powder and cumin. Cook at a low boil for an hour or so.
  • Puree half a can of dark red kidney beans in a blender or food processor and add to the soup pot. Add the remaining 1 ½ cans of kidney beans, red beans and black beans to the pot. Simmer for at least 2 hours.
  • If it is not "hot" enough add as much Tabasco sauce as you need to achieve the "heat" you desire.
  • If you are making it a day ahead (If you do the flavors will blend well), turn off the heat and add the chicken. (It works well to use an already cooked rotisserie chicken.) After it cools, refrigerate. When you are ready to serve, heat to boiling. (You don't want to cook it for very long after you add the chicken to avoid having the chicken fall apart.).
  • If you plan to serve it right away, add the chicken 15 or twenty minutes before serving and heat to boiling.
  • Optional: Serve with grated cheese, cilantro, sliced green onions and sour cream as toppings.

Steps:

  • Cut beef into ¾" cubes.
  • In a 4-quart Dutch oven, brown meat, half at a time, in 1 tablespoon hot cooking oil.
  • Remove meat, reserving drippings in pan.
