CORNFLAKE CHOCOLATE CHIP COOKIES
This is a recipe I've had around on a piece of paper and want to get it posted before I lose it. Update: Just made these today and I got 26 cookies using a 1 1/2" cookie scoop. Baked for 11 minutes.

Steps:
- Beat butter and sugar together.
- Add egg and vanilla.
- Combine flour and baking soda.
- Gradually beat flour mixture into butter mixture.
- Stir in cornflakes and chocolate chips.
- Drop by rounded tablespoons onto ungreased cookie sheet.
- Bake at 350° for 11-15 minutes.
- Cool on wire rack.
CHOCOLATE CORNFLAKE COOKIES
Got this recipe from a magazine a few years ago. This recipe is simple and yet so delcious, and to top it all off they look fantastic when made. Chocolate melts are used (not chips) but white chocolate melts are not accepted in the ingredients.

Steps:
- Preheat oven to 180dg Celsius Lightly grease and line 2 baking trays.
- Using a mixer, beat butter, sugar and vanilla until pale and creamy. Add egg and mix well. Stir in flour and add sultanas and cornflakes.
- Drop tablespoons of the mixture onto the trays, allowing room for spreading. Bake for 15 to 18 minutes, swapping the trays after 10 minutes, or until the cookies are a light golden colour. Stand for 10 minutes on the trays.
- Transfer to wire rack until cooled completely.
- Stand wire rack over a sheet of baking paper. Dip one side of each cookie into melted chocolate. Place cookies back onto rack (chocolate side up) and set aside for 30 minutes to set.
- Drizzle white chocolate over the cookies, and allow them to set before serving.

- Cream together butter and both sugars in the bowl of an electric mixer fitted with the paddle attachment on medium-high, 2 to 3 minutes. Scrape down sides of bowl and add egg and vanilla; beat for 7 to 8 minutes.
- Reduce speed to low and add flour, salt, baking powder, and baking soda. Mix just until dough comes together, no longer than 1 minute. Scrape down sides of bowl with a spatula.
- With the mixer on low, add cornflake crunch and chocolate chips; mix until just combined, 30 to 45 seconds. Add mini marshmallows and mix until just incorporated.
- Line a baking sheet with parchment paper. Using a 2 3/4-ounce ice-cream scoop or 1/3-cup measuring cup, portion dough out onto prepared baking sheet. Pat tops of cookie domes flat. Wrap baking sheet tightly with plastic wrap and refrigerate for at least 1 hour and up to 1 week. Do not bake cookies from room temperature or they will not hold their shape.
- Preheat oven to 375 degrees. Line additional baking sheets with parchment paper or nonstick baking mats.
- Arrange chilled dough at least 4 inches apart on prepared baking sheets. Transfer to oven and bake until puffed, cracked, spread, and browned on the edges, about 18 minutes. Let cool completely on baking sheets.

- Children: Weigh out the ingredients. Older children can do this by themselves with supervision and little ones can help to pour or spoon ingredients into the weighing scales. Put 50g butter, 100g milk or dark chocolate, broken into chunks and 3 tbsp golden syrup in a saucepan or microwavable bowl. Put 100g cornflakes in another large bowl.
- Grown ups: Melt the weighed butter, chocolate and golden syrup in the saucepan over a low heat or briefly in the microwave. Allow to cool a little before pouring over the cornflakes.
- Children: Stir the ingredients together gently using a wooden spoon. Spoon the mixture into 12 cupcake cases arranged on a muffin tray (or baking sheet, if you don't have one). Grown ups will need to do this for younger children or simply arrange on a tray and let the mess happen. Put in the fridge to set.

CORNFLAKE CHOCKY ROCKS (CHOCOLATE CHIP COOKIES
My mum always cooked these delicious cookies when I was a child. I believe the recipe was originally published by Kellog's on the back of the cornflake cereal box (in Australia). My favourite way to eat these is raw. If I eat them cooked I like them so they are still gooey in the middle. I dont like them cooked for too long as they go crunchy and loose all of the gooey goodness.

- Cream butter and sugar until light and creamy.
- Add eggs, mix well.
- Add vanilla, sifted flour, choc chips and 2 cups cornflakes.
- With the remaining cornflakes cover them with plastic and smash them up slightly with the back of a rolling pin or other hard object.
- Roll dessert spoonfuls of mixture into balls and roll in extra cornflakes. (In this raw state they are delicious).
- Place on greased baking tray.

- In a heat proof bowl, combine chopped chocolate and butter. Melt in a microwave for 30 seconds on high heat. Remove and stir for about 10 seconds until everything is melted. If you still see chunks of chocolate and/or butter, heat in the microwave again in 10 second intervals, stirring well in between, until melted and smooth. OR, melt over a pot of barely simmering water. Make sure the bottom of the bowl is not touching the surface of the water. Stir occasionally while the steam gently melts the ingredients (this takes around 5 minutes).
- After melting the chocolate and butter mix, add your cornflakes while it's still warm. Stir to coat all of the cornflakes in chocolate.
- Using 2 spoons or a large ice cream scoop, portion the chocolate covered cornflakes into cookies and place on your prepared baking sheet. Repeat until all of the chocolate covered cornflakes are portioned out.

- Line cookie sheets with parchment paper or the Silicone Baking Mats to prevent the cookies from sticking.
- Pour the cornflakes into a large mixing bowl. Then pour about 1/2 of the tempered chocolate over them. Use a rubber spatula and mix until the cornflakes are coated evenly with chocolate. The tempered chocolate will immediately being to set up. Once the chocolate has set, repeat with the remaining melted chocolate to give a second coat on the cornflakes.
- Using a small ice cream scoop or two soup spoons, scoop the chocolate cornflakes into small mounds onto the prepared cookie sheets.
- If your kitchen is very hot, you can place the cookie sheet in the refrigerator for about 5 minutes to allow the chocolate to harden. Do not leave the cornflakes in the refrigerator for more than 10 minutes; if they get too cold, condensation will form on them when they are removed from the refrigerator because of the difference in temperature between the cold chocolate and the warm air. This will cause the chocolate to turn white. While this doesn't affect the taste, it does ruin the appearance.
