Steps:

  • Line a baking sheet with parchment.
  • Add the goat cheese, sour cream and salt to the bowl of a food processor and process until smooth, about 30 seconds. Using a tablespoon, scoop out some of the mixture and roll it into a ball to form a truffle. Place on the prepared baking sheet and repeat until you have 24 truffles. Transfer to the freezer to firm up, about 10 minutes.
  • Put the dill and sesame seeds into separate small bowls. Mix the walnuts and cherries in a third small bowl.
  • Roll 8 of the cheese balls in the dill, 8 in the sesame seeds and 8 in the walnut and cherry mixture. Transfer the truffles to a serving platter. Insert a pretzel stick into each truffle. If making ahead of time, cover and refrigerate the balls without the pretzel sticks, then insert the sticks right before serving.

Two 8-ounce logs goat cheese
1/4 cup sour cream
1 teaspoon kosher salt
1/4 cup minced fresh dill
1/4 cup toasted sesame seeds
2 tablespoons chopped walnuts
2 tablespoons chopped dried cherries
24 pretzel sticks

CHOCOLATE GOAT CHEESE TRUFFLES B-S

This is from another site and this is what the posters had to say about this recipe: "I know what you are thinking -- Goat Cheese in a truffle?? Trust me, these are sooo good! If you hate goat cheese, I wouldn't suggest them. There is a slight tangy aftertaste, but primarily it is a sweet, chocolatey and tangy flavor that I am addicted to. The consistency is killer." I don't know how many this makes. It all depends on the size of the truffles.

  • Add the goat cheese, mascarpone cheese and butter to a medium bowl. Using your hand mixer, beat the ingredients together until well combined. Add the powdered sugar and vanilla extract and beat until completely smooth. Then using a spatula, stir in the cranberry sauce. Cover the truffle filling and refrigerate it until it’s well chilled, about 1-2 hours.
  • Line a rimmed baking sheet with wax paper. Using your hands, form/roll approximately teaspoon sized amounts of the truffle filling into small balls. The warmth from your hands will help you to shape the filling, but don’t over-handle it to the point where it gets soft. As you make the balls, place them on your wax paper-lined baking sheet. Once you’re done, transfer the baking sheet to your freezer for 20-30 minutes to chill the balls.
  • Gently melt the chopped chocolate in a small saucepan over low-medium heat, stirring frequently. Remove from the heat.

DARK CHOCOLATE GOAT CHEESE HONEY TRUFFLES | NEUROTRITION
We made these delectable truffles with food sensitivities in mind. Many people are sensitive or intolerant to cow dairy. So we’ve used goat cheese to craft these little chocolate treats.. You see, it’s lactose (milk sugar) in dairy that many people cannot tolerate. But goat dairy is much lower in lactose than cow dairy, which makes it far easier on your gut (and brain!).
