CHOCOLATE SHORTBREAD
Always wondered about the name here -- Where's a recipe for longbread, anyway! Wherever the one is found, this particular recipe was located in the Taste of Home's Chocolate Lover's Cookbook, Vol 2, 2003!

Steps:
- Preheat oven to 300 degrees F.
- In a mixing bowl, cream the butter, then add vanilla & mix well.
- In another bowl, whisk together flour, sugar & cocoa, then add to creamed mixture, beating about 3 minutes or until dough holds together.
- Pat the dough into a 9-inch by 4-inch rectangle, then cut into 2-inch by 1 1/2-inch strips.
- Place strips 1 inch apart on ungreased baking sheets.
- Prick each strip several times with a fork.
- Bake 20-25 minutes or until set.
- Set sheets on wire rack(s) to cool for 5 minutes, then remove shortbreat to wire rack(s) to cool completely.
CHOCOLATE SHORTBREAD

Steps:
- Preheat oven to 300 degrees. With an electric mixer, beat butter until creamy. Add flour, sugar, and cocoa; mix just until combined. (Chill dough in the refrigerator 10 minutes if it is too soft to handle.)
- Pat dough into an 8-inch round cake pan; press edges down with the tines of a floured fork. Bake until firm, 30 minutes. Immediately score into eight wedges; cool completely. Turn out of pan; break wedges apart. Decorate with icing.

- Cream the buter and castor sugar until light and creamy.
- Add in the water.
- Add in the sifted flour and work into a manageable.

CLASSIC VANILLA BOURBON BALLS
Steps:
- In a food processor, finely grind the shortbread. You should have 2 cups crumbs. Add the pecans and confectioners' sugar and pulse until the nuts are chopped. Transfer to a large bowl.
- In a small saucepan, bring the bourbon to a boil. Remove from the heat and add 3/4 cup chocolate chips. Stir until smooth. Pour into the pecan mixture and stir until well-combined. Form into sixteen 1/2-inch balls.
- Place the remaining 1/4 cup chocolate chips in a resealable plastic bag. Microwave in 20 second increments until melted, squeezing the chocolate in the bag to evenly melt. Snip a small hole in one corner and drizzle the chocolate onto the balls. Refrigerate in an airtight container until firm, at least 2 hours and up to 1 week.

- Cream butter and sugar, add flour and vanilla.
- Pinch of 1/2" balls of dough, roll in sugar and place on cookie sheet.
- Use the tines of a fork to flatten cookies.
- Bake at 350°F for 12-15 minutes.
- Remove from baking sheet, cool 10-15 minutes.
- Dip half of each cookie into melted chocolate.
- Chill to set chocolate.

- Cream butter and sugar in a large bowl until light and fluffy. Combine flour and cornstarch; gradually add to creamed mixture and mix well. Stir in chocolate. , Shape into 1-in. balls. Place 1 in. apart on ungreased baking sheets. Flatten with a glass dipped in confectioners' sugar. , Bake at 300° for 25-30 minutes or until edges are lightly browned. Remove to wire racks to cool.

CHOCOLATE SHORTBREAD
Honestly, what could be better than chocolate and shortbread in one cookie?? The original recipe called for the cookies to be rolled in balls then flattened (I have included those instructions below). HOWEVER, I have always used my cookie press to make spritz cookies out of these (the baking time needed some tweaking, so please see the seperate instruction if your wish to do spritz cookies as well). I can only hope you enjoy these as much as I do

- Preheat oven to 300 degrees F. Soften butter to room temperature.
- Cream butter until soft and fluffy. Beat in icing sugar.
- Stir in flour, salt, and cocoa, and mix well. If very soft, chill in refrigerator for 1/2 hour.
- For ORIGINAL Recipe:
- Shape into 1 inch balls and place on an ungreased cookie sheet about 2 inches apart. Flatten balls with a fork. Bake for 20 - 25 minutes. Remove from oven, cool slightly and remove from pan.
- For use with COOKIE PRESS:
- Using a cookie press, spritz the dough about 2 inches apart onto an ungreased cookie sheet (NOTE: the dough will probably feel softer than regular shortbread dough, but this is normal and it will work good). Bake for 15 - 18 minutes. Remove from oven, cook slightly and remove from pan.

- Using basic shortbread or hazelnut shortbread dough, roll into 1-inch balls with your hands; chill.

- Mix the butter and sugar together with a wooden spoon. Stir in the flour and cocoa, followed by the chocolate chips - you'll probably need to mix it together with your hands at this stage. Halve the dough and roll each piece into a log about 5cm thick. Wrap in cling film and chill for 1 hr or for several days. Can be frozen for up to 1 month.
- Heat oven to 180C/160C fan/gas 4. Slice logs into 1cm-thick rounds, transfer to a baking tray lined with baking parchment and bake for 10-12 mins. Cool on the tray.

SCOTTISH CHOCOLATE SHORTBREAD TRUFFLES
A melt in your mouth mixture of dark chocolate,Scottish shortbread,and whisky, this is the easiest truffle recipe I've ever made...the Drambuie is subtle so if you prefer a strong taste of it, double the measurement.Chocolate should be 55-70% cocoa solids. Steps:
- Melt chocolate and butter together over low heat, then stir in the shortbread crumbs and Drambuie until mixed thoroughly.
- Transfer to a shallow bowl and leave to cool,then chill for a couple of hours to firm up.
- Spoon out some of the mixture and shape it into balls with the palms of your hands, at first the mixture will be stiff,but it softens quickly in your hands.
- Roll each ball in Cocoa powder and set aside until all have been dusted.
- The truffles will keep for several days in an airtight tin.
