DOUBLE CHOCOLATE AND FRUIT BREAKFAST PASTRY RECIPE BY TASTY
Here's what you need: ready-made puff pastry, chocolate spread, chocolate, banana, strawberries, flaked almond, egg yolk, dark chocolate, icing sugar

Steps:
- Roll out the sheet of puff pastry. Using a sharp knife, cut in half diagonally and then again horizontally to make 4 squares. Then cut each square diagonally to make 8 triangles.
- Layer the triangles on a lined baking tray to make a star shape. In each triangle, spread on the chocolate spread (about ½ tablespoon per triangle will be enough).
- Then, in the middle, scatter on the grated chocolate, banana, strawberries, and flaked almonds in a circle shape.
- Fold over the triangles to meet in the middle. Glaze with some egg wash.
- Bake in the oven at 180°C (350°F) for 25 minutes.
- Cut out each triangle to make a serving.
- Drizzle on some dark melted chocolate, icing sugar or with leftover strawberries and banana. Enjoy!

CHOCOLATE CARAMEL FROZEN PARFAITS

Steps:
- Bring milk and 1/2 cup cream just to a boil in a small heavy saucepan, then remove from heat and keep warm, covered.
- Bring water and 1/2 cup sugar to a boil in another small heavy saucepan, stirring until sugar is dissolved and washing down any sugar crystals on side of pan with a pastry brush dipped in cold water. Boil syrup, without stirring, gently swirling pan, until mixture is a deep golden caramel. Remove from heat and carefully add warm cream mixture (mixture will steam vigorously and caramel will harden). Cook over low heat, whisking, until caramel is dissolved.
- Whisk together yolks, remaining 1/4 cup sugar, and a pinch of salt in a metal bowl, then add hot caramel mixture in a slow stream, whisking. Transfer custard to saucepan. Cook custard over moderately low heat, stirring, until thickened and registers 170°F on thermometer (do not let boil).
- Pour custard through a fine-mesh sieve into bowl of standing mixer, then beat at high speed 10 minutes (mixture will be completely cool, thick, and pale). Beat in melted chocolate and vanilla.
- Whisk remaining cup cream in another bowl until it just holds stiff peaks, then whisk about one fourth of cream into chocolate mixture to lighten. Fold in remaining cream gently but thoroughly and divide mixture among paper cups, smoothing tops. Cover each cup with foil and freeze parfaits at least 12 hours.
- To serve, carefully tear off each paper cup and invert parfaits onto plates.
CHOCOLATE PARFAIT
Steps:
- Whip the egg yolks until light in color and thickened. Add vanilla, set aside. Melt 1-ounce pastilles in a double boiler, add cocoa powder, and coffee liqueur. Combine mixture with the yolks. In double boiler, whisk until smooth over a low flame. Whip heavy cream to stiff peaks. Fold in sugar and then fold in cream into the yolk mixture. Pour in parfait glasses.

Steps:
- Peel oranges and separate into sections.
- Wrap sections in plastic wrap so they do not dry out.
- Rinse strawberries under cold running water, do not remove the stems.
- Pat berries completely dry with paper towels.
- Set fruit aside.
- Fruit should be at room temperature for dipping.
- Place peanuts in a small bowl.
- Into a double boiler top, not over water, grate semi sweet chocolate squares.
- Set candy thermometer in place, set aside.
- Heat water to boiling in double boiler bottom; remove from heat.
- Place double boiler top over hot water; melt chocolate, stirring constantly with rubber spatula, until temperature reaches 130 degrees.
- Immediately discard hot water from double boiler bottom and refill with cold water to come one-third of the way up the side of the double boiler.
- Set top in place and cool chocolate, stirring constantly, until chocolate temperature reaches 83 degrees.
- Remove double boiler top and replace cold water in bottom with warm water (about 85 degrees).
- This will keep the chocolate and dipping consistency longer.
- With fingers, hold one piece of fruit at a time and dip it into chocolate, leaving part of fruit uncovered.
- Shake off excess chocolate or gently scrape one side of fruit to remove excess.
- Place on waxed paper.
- Working quickly, stir peanuts into leftover chocolate in pan.
- Drop mixture by tablespoonfuls onto waxed paper.
- Let chocolate covered fruit and peanut clusters stand until chocolate is set (about 10 minutes) before removing from waxed paper.
- Serve dipped fresh fruit same day.
- Store peanut clusters in tightly covered container; use within one week.
- Note: Chocolate can be easily melted in the microwave as well.
- Break chocolate into chunks and microwave in increments of 20-30 seconds, stirring in between each session.
CHOCOLATE-AMARETTI PARFAITS
Steps:
- Melt 1 1/2 ounces finely chopped bittersweet chocolate in the microwave; let cool. Mix with 1 1/2 cups mascarpone cheese and 1/3 cup sugar. Layer in glasses with raspberries and crumbled amaretti cookies.
FRENCH SILK CHOCOLATE PIE (OR PARFAIT)
Although eaten refrigerated, not frozen, this rich dessert melts in your mouth like ice cream! One of it's special assets is being able to make it ahead and freeze to have on hand for special occasions. Mother made this often, and it is still my favorite dessert. Cooking time includes chilling time. Variation: For Gluten-intolerant people: Omit pie crust and spoon filling into individual parfait glasses and garnish with whipped cream and chocolate shavings!

- Bake pie crust according to package directions for a pie that will contain a refrigerated filling. Filling is not cooked.
- Cool.
- Melt 1 ounce baking chocolate (See NOTE below).
- With an electric mixer, cream butter and sugar together for at least 5 minutes until sugar is dissolved.
- (This step is very important to the final texture of this dessert).
- Add melted chocolate and vanilla extract and mix well.
- Wash and dry the two raw eggs. Add two eggs, one at a time, beating 5 minutes after each addition, until mixture is thick and creamy.
- Pour into baked pie crust.
- Garnish with shavings from the 1/2 ounce chocolate square.
- Or melt chocolate and drizzle over the pie.
- Chill at least 1-2 hours or until well set.
- Because this is very rich, cut into at least 12 slices.
- This pie freezes well for up to 3 months.
- Just thaw several hours in the refrigerator and serve.
- For real decadence, spread a layer of non-dairy topping over filling before garnishing with chocolate.
- NOTE: Easy Way to Melt Chocolate: Place chocolate in a small bowl; place bowl on drip coffee maker burner until melted.
- It is just the right temperature to melt chocolate without scorching it, unless left on burner much too long.
- Note: Because of the raw eggs. this pie is not recommended for very young children, very elderly people, or people with impaired immune systems.
PEANUT-BUTTER CHOCOLATE PARFAITS
This classic flavor combination makes a perfect parfait; use our Chocolate Pudding as a base.

- In a medium bowl, whip 1 cup cream along with sugar until soft peaks form. Reserve.
- Place peanut butter and remaining 1/2 cup (unwhipped) cream in another medium bowl; whisk until smooth. Add reserved whipped cream; gently fold in with a rubber spatula until combined.
