Steps:
- Separate noodles, then toss with 1 teaspoon peanut oil.
- Stir together 1/2 cup stock, oyster sauce, soy sauce, sugar, and rice wine.
- Heat a wok over high heat until a bead of water dropped onto cooking surface evaporates immediately. Add remaining 1/4 cup peanut oil, swirling wok to coat evenly, and heat until it just begins to smoke. Stir-fry noodles, tossing frequently, until soft and translucent, 3 to 4 minutes (noodles will stick together). Add snow peas and scallions and stir-fry until snow peas are bright green and crisp-tender, about 1 minute. Add pork, garlic, and ginger and stir-fry 1 minute.
- Add stock mixture and bring to a boil, stirring, then add remaining 1/4 cup stock. When mixture boils, stir cornstarch mixture and add to wok, then boil, stirring, until sauce is thickened and noodles are well coated, about 30 seconds. Stir in bean sprouts and remove wok from heat. Season with sesame oil and pepper.
BARBECUED PORK WITH CHOW FUN
Chow Fun is a smooth, slippery rice noodle. This Cantonese dish can be served for breakfast, lunch or dinner.

Steps:
- Cut noodles into pieces, 1 1/2" long and 1/2" wide.
- Set aside.
- Heat 2 tbsp of oil in wok to 400°F.
- Add Chow Fun, and stir-fry quickly until it is well heated.
- Add 1/2 tsp salt and the soy sauce.
- If it's too dry, add the chicken stock.
- Remove from wok.
- Heat 2 tbsp of oil in wok to 400°F.
- Stir-fry pork for 1 minute.
- Add bok choy, sprouts, and scallion, and 1/2 tsp salt.
- Stir-fry for 2 minutes (may be prepared in advance to this point).
- Add chow fun and stir until heated throughout.

- Toss pork with cornstarch and 1 teaspoon salt.
- Heat 2 tablespoons oil in a wok or 12-inch heavy skillet over medium-high heat until it shimmers. Stir-fry pork until pale golden and almost cooked through, about 4 minutes, then transfer to a plate. Add 1 tablespoon oil to wok and stir-fry snow peas with garlic until crisp-tender, about 1 minute. Transfer to plate.
- Add mushrooms to wok with water and remaining tablespoon oil and cook, covered, until softened, about 5 minutes. Add pork, snow peas, and teriyaki sauce and stir-fry until pork is cooked through, about 2 minutes.

- Add the oyster sauce, soy sauce, sesame oil, & water to a bowl or jar. Whisk or shake to combine. Set aside or store in an airtight container in the refrigerator for up to 1 week.
- If using fresh rice noodles, slice into 1×3-inch pieces. If your fresh rice noodles are refrigerated (as they often are here in MN), let the noodles come up to room temperature before using or cover with a damp paper towel & microwave for 1 minute to soften. Set aside. Note: See Recipe Notes (below) for guidance on dried rice noodle prep.
- Add 1 tablespoon of the avocado oil to a large wok or skillet over medium-high heat. Once hot & shimmering, add the Spam or char siu pork. Cook 2-3 minutes per side, stirring occasionally, until golden & browned. Add the ground pork to the skillet. Brown 3-4 minutes or until cooked through, using a wooden spoon to break up the ground pork into bite-sized crumbles as it cooks. Transfer the pork to a plate & set aside.
- As needed, add 1 tablespoon of the avocado oil to the same large wok or skillet used to cook the pork. Once hot & shimmering, add the yellow onion. Cook 3-4 minutes, stirring frequently, until softened & browned. Add the garlic & ginger & cook, stirring frequently, until fragrant, 1 minute more. Add the green onions & bean sprouts & cook, stirring frequently, until slightly softened, 2-3 minutes more.
