CINNAMON HONEY WAFFLES
The entire house smelled fantastic for hours after I made these! The delicate taste of honey shines through and makes them a treat. Found in "Breads of New England" cookbook.

Steps:
- Combine flours in large mixing bowl. Add the sugar, baking powder, salt and cinnamon and whisk to blend thoroughly.
- In a separate bowl, whisk together the egg yolks, milk, honey and oil. Make a well in the dry ingredients and pour in the egg yolk mixture. Stir with a wooden spoon until well moistened. The batter will contain some lumps. Set batter aside.
- Preheat waffle iron. Meanwhile, whip egg whites until soft peaks form, then fold into the batter. The consistency should be quite thick.
- Brush or spray waffle iron grids with vegetable oil. Pour the batter into the center on iron, gently spreading the batter over the grid with a kitchen knife as needed. Close the iron and cook 3-4 minutes or until done. Serve immediately.

CAROL'S CINNAMON WAFFLES
If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!

Steps:
- Whisk flour, white sugar, brown sugar, cinnamon, baking powder, and salt together in a bowl until no lumps remain.
- Pour milk, vegetable oil, and vanilla extract into the flour mixture; stir until just combined.
- Beat egg whites until foamy in a large glass or metal mixing bowl until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak.
- Fold the the beaten egg whites into the batter.
- Preheat a waffle iron and coat with cooking spray.
- Pour batter onto waffle iron in batches and cook until crisp and golden brown, about 2 minutes; repeat until all batter is used.

- Preheat a waffle iron according to manufacturer's instructions.
- Whisk flour, white sugar, baking powder, and 1 teaspoon salt together in a large bowl. Beat warm milk, 1/3 cup melted butter, eggs, and 1 teaspoon vanilla extract together in another bowl. Add milk mixture to flour mixture and stir until batter is lumpy and just-moistened.
- Working in batches, ladle batter into preheated waffle iron and cook until waffles are golden and crisp, 3 to 5 minutes.
- Stir brown sugar, 1/2 cup melted butter, and cinnamon together in a bowl. Beat confectioners' sugar, cream cheese, 1/4 cup softened butter, 1/2 teaspoon vanilla extract, and 1/8 teaspoon salt together in another bowl.
- Place waffles on a plate and drizzle cinnamon mixture and cream cheese mixture over the top.

- To Make The Waffles
- Preheat a waffle iron according to the manufacturer's directions. Preheat the oven to 200°F.
- In a food processor, pulverize the pecans until finely ground. Add the eggs, butter, honey, vanilla, baking soda, and salt, and blend well.
- Grease the waffle iron using a partially wrapped stick of cold butter. Hold the butter by its wrapped end and rub the other end all over the waffle iron's cooking surface. Add 1/4 cup batter and cook for a few minutes, until golden brown. Set right on the oven rack to crisp up and keep warm while you cook more.
- To Prepare The Bananas
- Melt the butter with the oil in a sauté pan over medium heat. Add the bananas and cook for about 6 minutes, turning once, until golden brown. Set aside.
- Mix the honey and cinnamon until well blended.
- Place the waffles on warmed plates, top with the bananas, honey, and serve.
