YUMMY SOUR CREAM CINNAMON LOAF

This is my creation formed by mixing a couple of loaf recipes until I got it the way everybody likes it. If you so desire, add a dash of cardomon to the batter. I think you will enjoy this loaf. Please let me know.

Yummy Sour Cream Cinnamon Loaf image

Steps:

  • To begin: Prehat oven to 350 degrees. Grease and flour a 9 x 5" loaf pan.
  • Batter:.
  • First, in a small bowl stir together the flour, baking powder, baking soda, and salt. Set aside.
  • In a medium size bowl, cream the softened butter and 1 Celsius sugar until fluffy (about 4-5 minutes). Add the eggs and vanilla flavoring and mix until blended.
  • Add the sour cream and the milk; blend at low speed and mix well.
  • Add the flour mixture and mix well until all is incorporated.
  • Cinnamon Mixture:.
  • In a small bowl, mix together the sugars, cinnamon, and allspice. Set aside 1/4 of this to go on top of the loaf.
  • Spoon half of the batter into the prepared loaf pan.
  • Spoon 3/4's of the cinnamon mixture over the batter in the pan.
  • Spoon the remainder of the batter over top.
  • Take a small spatula and cut through the batter and cinnamon mixture to form swirls.
  • Sprinkle the remaining cinnamon mixture over the top of the loaf.
  • Bake 50-60 minutes or until a toothpick comes out clean.
  • Cool 10 minutes before turning out of the pan.
  • Enjoy!

Steps:

  • Cream together butter and sugar in a large mixing bowl.
  • Add egg, stirring until blended.
  • Add flour, baking powder, and salt gradually to butter mixture, alternating with additions of sour cream.
  • Beat mixture just until blended, and add vanilla.
  • In a small bowl, mix together pecans, brown sugar, 1 tbsp of sugar, and cinnamon.
  • Pour half of batter into a greased and floured loaf pan, and sprinkle with half of streusel mixture.
  • Pour remaining batter on top, and sprinkle with remaining streusel mixture.
  • Bake at 350°F for 45-60 minutes or until toothpick inserted in the middle removes clean (if loaf starts to brown excessively, cover with foil during last 15 minutes of baking).
  • Cool in pan 10 minutes, then remove and finish cooling on wire rack.

In this loose interpretation of my mom's chocolate chip-sour cream bundt cake, sweet rice flour, all-purpose flour and a healthy amount of sour cream combine to create a rich, plush cake with a moist and structured crumb. Baked in a versatile 8-inch square pan and generously studded with melty semisweet chocolate chips, this snackable cake is simple but surprisingly decadent, a reminder that at the end of the day, cake should taste good and be a joy to eat. Enjoy a homey, comforting slice with your fingers or a fork - there are no rules here.

Chocolate Chip Sour Cream Snack Cake image

Steps:

  • Position an oven rack in the middle of the oven and preheat to 350 degrees F. Lightly grease an 8-inch square pan with nonstick cooking spray. Line the bottom with parchment, leaving a 2-inch overhang on the sides (to make it easier to remove the cake after baking) and grease the parchment.
  • Combine the all-purpose flour, sweet rice flour, baking powder, baking soda and salt in a medium bowl and whisk until combined.
  • Beat the butter in a large bowl with an electric mixer until smooth. Add the sugar and cream the mixture until light and fluffy, 2 to 3 minutes. Scrape down the bowl with a rubber spatula. Add in the eggs one at a time, beating after each addition until combined. Scrape the bowl once more, then beat in the vanilla. Sift half of the dry ingredients over the egg mixture and beat just until combined. Beat in the sour cream and milk, then sift in the rest of the dry ingredients and beat just until the batter is smooth. Fold in the chocolate chips.
  • Spread the batter into the prepared pan, smoothing the surface with a small offset spatula. Sprinkle additional chocolate chips on top. Bake the cake, rotating the pan halfway through, for about 40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 20 minutes, then gently loosen the edges with a small offset spatula and carefully transfer the cake (using the parchment sling to assist) onto a rack to cool completely.

3/4 cup (105 grams) all-purpose flour
1/2 cup plus 2 tablespoons (105 grams) sweet rice flour, such as Mochiko

My son loves this treat for snacking after school, and it's easy enough for him to make if he wants to. It makes a great addition to a brunch menu, and when we make it for snacks it's gone within an hour!

Steps:

  • Preheat oven to 350 degrees. Lightly spray a 9x5-inch loaf pan with a spray vegetable oil such as Pam, then dust with flour. Shake out excess flour.
  • Set aside the packet of cinnamon swirl and the packet of topping from the muffin mix. Place muffin mix, sour cream, egg and 3 tablespoons water in a large mixing bowl. Beat with electric mixer on low speed for 30 seconds. Stop and scrape down sides of bowl. Increase mixing speed to medium and beat 1 more minute. Scrape again, if needed. The batter should be well-combined and thick. Pour 1/2 - 2/3 of batter into prepared loaf pan.
  • Knead packet of cinnamon swirl with your fingers several times, then open it and squeeze contents evenly over the batter. With a rubber spatula, spread remaining batter over the batter in the pan. Place pecans, if using, in a small bowl and stir in the topping mix. Sprinkle the topping over the loaf.
  • Bake for 43-47 minutes until it springs back when lightly pressed with a finger. Remove and put loaf pan on a wire rack to cool for 15 minutes. Dust with confectioners' sugar. Then run a long, sharp knife around the edge of the loaf pan. Remove loaf from pan or serve right from the pan. Can be served warm or at room temperature.

SOUR CREAM CHOCOLATE CHIP NUT LOAF

At any point during the 1980s, you could've opened the middle pantry drawer in our kitchen and discovered a treasure trove of baked goods from our supermarket's Entenmann's display: fudge-frosted doughnuts, mini chocolate chip cookies, thick-glazed cupcakes. My father had--and still has--an epic sweet tooth that deserves a three-hundred-page volume all to itself. The king of the drawer, though, was the Sour Cream Chocolate Chip Nut Loaf, because it only made rare appearances at the supermarket, and, much to our dismay, eventually disappeared from shelves across the country. (We never did find out why.) My father and I were the biggest fans of the loaf, and in the twenty-five years since I've seen it, I don't think I've ever walked by the Entenmann's section without secretly hoping I'll spy one amid the doughnut holes and crumb cakes. Until then, I have this homemade version, which comes about as close as you can get.

  • Preheat the oven to 375 degrees F. Butter a 9-by-5-inch standard loaf pan.
  • Make the cinnamon sugar: In a small bowl, mix together the sugar and cinnamon
  • Make the batter: In a large bowl, using an electric mixer at medium speed, beat the eggs until frothy, about 3 minutes. Add the sugar and vanilla, beating until smooth. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Add the melted butter and sour cream to the egg-and-sugar mixture; beat until well combined. At low speed, add the dry mixture to the wet mixture a spoonful at a time, beating just until smooth. Fold in the chocolate chips.
  • Spread half of the batter in the prepared pan and sprinkle evenly with about two-thirds of the cinnamon sugar. Sprinkle with the walnuts. Top with the remaining batter, spreading evenly, then sprinkle with the remaining cinnamon sugar.
  • Bake for 50 to 55 minutes or until a knife or skewer inserted in the center comes out clean.

Whisk in the oil, sour cream, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients, then whisk to completely combine. Avoid over-mixing. You will have about 3 cups of batter.
  • Pour/spread half of the batter into prepared loaf pan. Sprinkle almost all of the cinnamon sugar evenly on top (reserve about 2 Tablespoons for topping). It’s a very thick layer of cinnamon sugar. Carefully pour/spread remaining batter evenly on top. The top layer of batter will want to stick to the cinnamon sugar filling, making spreading a little tougher to do, but use a spoon to carefully spread it out as best you can. Sprinkle with the rest of the cinnamon sugar. Using a knife, make a large swirl down the loaf pan, as shown in the video tutorial above. Avoid over-swirling, which will mix the layers together too much.
