Official Contest Entry: Simply Potatoes 5Fix. An easy, delicious candy for any holiday. My mom started making this candy in the 1960's and so far these have been enjoyed by four generations of our family.

Coconut Mashed Potato Candy #SP5 image

Steps:

  • Combine cold mashed potatoes and confectioner's sugar in a large bowl. Thoroughly combine. Mixture will begin as a stiff dough and loosen up as the sugar mixes with the potatoes. Add the coconut and vanilla and mix thoroughly.
  • Form into triangular peaks, using about 1 rounded teaspoon of mixture for each. Put on waxed paper lined cookie sheet. Let dry for 20 minutes.
  • Melt chocolate in bowl over simmering water (or in microwave in one minute intervals until melted).
  • Dip base of each candy in chocolate. Let stand on waxed paper to set.
  • Store in covered tin in the refrigerator.

5-Ingredient Fix Contest Entry. This has become a staple Sunday dinner recipe. I often serve it with a simple herb and pork roast and a simple baby green salad. The casserole is an adaptation of one that I found on line but was very pricey to make. If you can't find Gruyere cheese, Swiss is fine but I would really try the Gruyere. It's expensive but is well worth it because the other ingredients are relatively cheap. This also freezes beautifully and is very easy to make in big batches. Hope you enjoy it as much as my family has.

Cheesy Artichoke and Potato Casserole #5FIX image

Steps:

  • Thaw potatoes in a colander until completely thawed. Place in a large bowl. In a smaller bowl combine cream cheese, condensed soup, Gruyere cheese and mix well. Add this cheese mixture to the potatoes and add the artichoke hearts as well. If the mixture looks too thick you can add some artichoke liquid to thin it a bit.
  • Pour into a grease 9×13 pan and bake 30 minutes in a 350 degree oven. Serve hot and enjoy! We have used any leftovers for breakfast the next day as well.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 1/2 quart casserole dish.
  • Place whole potatoes in their skins into a large pot of boiling water; cook for 25 to 30 minutes. Remove potatoes, and discard water. When cool enough to handle, peel potatoes, and grate into a medium bowl.
  • Melt 1/4 cup butter in a large skillet over medium heat. Stir in soup; cook until soup begins to bubble. Remove from stove, and mix in sour cream, green onion, and cheese. Stir in potatoes. Pour mixture into casserole dish.

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.
