COLLARD GREENS WITH TAMARIND

Cooked leafy greens figure prominently in West African soups and stews. This is our take on stewed collard greens using flavors and ingredients found in the West African kitchen, including dried shrimp for an "umami" quality, and tamarind for the acidic kick normally found in Southern greens.

Collard Greens with Tamarind image

Steps:

  • 1. Heat the oil in a Dutch oven or large heavy pan over medium heat. Add the onions and cook until soft, about 5 minutes. Add the ginger, dried shrimp, garlic and habaneros and cook, stirring, about 2 minutes. Add the tomatoes and cook until they soften and start to break down, about 4 minutes. Add the collards, chicken broth, salt and black pepper. When the broth comes to a boil, cover the pan, lower the heat and simmer until the collards are completely tender, about 30 minutes. Stir in the tamarind and season with additional salt and pepper.
  • 2. Serve with a generous portion of steamed rice.

2 tablespoons peanut or vegetable oil
1 yellow onion, diced
1 tablespoon minced ginger
1 tablespoon small dried shrimp, roughly chopped
2 cloves garlic, minced
1 habanero or Scotch bonnet pepper, halved (seeds removed if you don't want it too spicy)
2 large tomatoes, diced
1 pound collard greens, ribs removed and leaves sliced into 1/3-inch ribbons
1 1/2 cups chicken broth
2 teaspoons kosher salt
Freshly ground black pepper
1 teaspoon tamarind concentrate
Serving suggestions: steamed rice

TASTY COLLARD GREENS

A classic recipe for collard greens that uses smoked turkey to add some flavor. Greens are simmered in chicken stock, then spiced with a dash of red chile flakes.

Steps:

  • Heat olive oil in a large pot over medium heat. Add garlic, and gently saute until light brown. Pour in the chicken stock, and add the turkey leg. Cover the pot, and simmer for 30 minutes.
  • Add the collard greens to the cooking pot, and turn the heat up to medium-high. Let the greens cook down for about 45 minutes, stirring occasionally.
  • Reduce heat to medium, and season with salt and pepper to taste. Continue to cook until the greens are tender and dark green, 45 to 60 minutes. Drain greens, reserving liquid. Mix in red pepper flakes if desired. Use liquid to reheat leftovers.

GRANDMA'S COLLARD GREENS

These are without a doubt, the best collard greens I have ever eaten (and I have had my share). My grandma used to make this recipe in the summer when her collards in the garden were ready. If you don't like these, you don't like collard greens ... guaranteed!! Add more red pepper flakes if you like it spicy.

Steps:

  • Cook onion and bacon in a large pot over medium-high heat until onions are soft, 5 to 7 minutes. Add chicken stock, vinegar, brown sugar, and pepper flakes and cook and stir until brown sugar has completely dissolved, 2 to 3 minutes.
  • Add 1/2 of the collard greens, reduce heat to medium, and cook until greens are slightly wilted, about 10 minutes. Add remaining greens, toss to combine, and simmer over medium-low heat until tender, about 30 minutes. Season with salt and pepper.
