Here is another copycat recipe that I received in my email today. Sounds almost too easy to be true...

Hardee's Peach Cobbler - Copycat image

Steps:

  • Preheat oven to 375 degrees F.
  • Spread the pie filling into a square baking pan. Put the slices of butter on top of the pie filling, placing them as evenly as possible.
  • Carefully remove the pie crust from the pan it is in, and place it carefully on top of the pie filling and butter. You will need to cut off the edges that hang over and make them fit on the square pan. Sprinkle liberally with cinnamon and sugar. Bake for about 20 to 25 minutes, until pie crust is lightly browned.
  • Serve with a scoop of vanilla ice cream.

Steps:

  • Drain peaches, reserving 1 cup of syrup for recipe.
  • Combine peaches, syrup, cinnamon, nutmeg & tapioca in large sauce pan.
  • Bring mixture to a boil, and boil for one minute.
  • Remove from heat and cool.
  • Prepare 9x13 pan lined with pie crust.
  • Prepare lattice topping for cobbler.
  • Place peach mixture in crust lined pan.
  • Dot mixture with butter portions, spaced evenly.
  • Arrange lattice topping, crimping into top edge of crust.
  • Sprinkle crust with cinnamon-sugar mixture for color.
  • Place, uncovered, in 450°F oven for 10 minutes. Reduce heat to 400°F and bake 60 minutes, or until golden brown.
