- Using a small sized scoop (Pampered Chef), place filling into tart shells.
- Sprinkle with a small amount of paprika.
- Bake for 16-18 minutes, or until slightly brown on top.
CRAB & SHRIMP PHYLLO TARTLETS
This is a favorite appetizer, if you don't want to bother with the Phyllo Tart shells, you can just mix up the filling and serve with crackers.

Steps:
- Brush one sheet of phyllo with melted butter, place next sheet on top, brush with butter, repeating until all four sheets are used, do not brush top sheet with butter.
- Cut into 24 equal squares.
- Place each square into ungreased mini muffin cups.
- Bake at 350 5-7 minute until brown.
- Beat cream cheese with electric beaters, until creamy.
- Add ketchup, horseradish, hot sauce, and worcestershire sauce, mix through.
- Add onion,crab, and shrimp.
- Stir to mix trough.
- Put a heaping tablespoon of mixture into each baked phyllo shell, garnish with one whole med shrimp and chives.
PHYLLO TARTLETS WITH SMOKE SALMON RILLETTES

- Preheat oven to 400 F. Place tartlett shells on a sheet tray and bake until golden brown. Let cool.
- Mince salmon in a food processor. In a medium bowl, mix salmon, onion, chives, capers, aioli and a touch of lemon. Season with salt and pepper to taste. Refrigerate until use.
- In a small bowl, mix yogurt, dill, lemon, salt and pepper. To serve, fill each shell with a spoon of salmon mixture. Top with a refined amount of caviar and tiny dollop of yogurt. Garnish with dainty dill sprig.

- In a large saute pan over medium heat, melt butter. Add the shallot and garlic, stirring constantly for 1 minute. Add the chopped mushrooms. Cook until the mushrooms begin to soften, about 5 minutes. Transfer the mushroom mixture to a food processor and add the goat cheese. Add the oil and parsley. Pulse until the mixture comes together. Season with salt and pepper and pulse again.
- Spoon mushroom filling into tartlet shells and place on a baking sheet. Bake in a preheated 350 degree oven for 10 minutes. Garnish with sliced mushroom and chopped chive before serving.

- In a small saucepan, combine the butter with 1/4 cup water over high heat. When the water comes to a simmer and the butter is melted, add the flour. Reduce the heat to medium and stir until the resulting paste pulls away from the sides of the pan, 1 to 2 minutes. Remove from the heat. Allow to cool for 5 minutes. Add the egg to the pan and stir vigorously until the egg is incorporated into the flour mixture. Stir in the mashed potatoes and let cool.
- Pour enough oil into a medium pot so that the oil comes 3 inches up the sides. Heat the oil to 350 degrees F.
- While the oil heats, gently fold the crab into the potato mixture; the lumpier the batter, the better. Using two soup spoons, shape the mixture into quenelles, or 2-inch footballs. (You should end up with about 35.) Roll in the panko. Deep-fry, working in batches and turning once, until crisp, brown, and heated through, 2 to 3 minutes. Drain on paper towels and season with salt.

- Line tartlet tins with the pastry (use boat-shaped tins if you have them). Bake blind in a preheated oven at 375 degrees for 10 minutes. When cold, brush the inside of the tartlet cases with the melted chocolate and leave to harden.
- Mix together the cream cheese and double cream until very smooth, then add the sugar and vanilla essence. Fill the tartlet cases with the cream mixture and arrange the fruit on top. Brush with the apricot or red currant glaze, depending on the fruit used, and leave to set.
- Sift the flour and salt together and rub in the butter and lard until the mixture resembles bread crumbs. Add the cheese, if using, and bind with a little cold water. Chill for 30 minutes and then roll out and use as above.

- Cut roughly cherry tomatoes, put on paper towels and let drain. In the meantime, in a bowl, mix mayonnaise, vinegar, terragon and tabasco. Add crabmeat and mix. Sponge up the tomatoes and add to crab mixture. (You can prepare this step in advance, cover it, and put it in the fridge until next day).
- If you want, put miniature phyllo cups on a baking sheet and heat in a preheated oven of 250 F for about 5 minutes. Put the phyllo cups in a serving plate and garnish each phyllo cups with about 1 teaspoon of crab mixture.

CRAB AND SHRIMP BOIL WITH NEW POTATOES

- Bring the water to a boil in a very large stockpot. Add the Old Bay, salt, garlic, chile flakes and parsley and boil for 10 minutes to infuse. Add the potatoes and cook another 10 minutes. Add the crabs; cook 10 minutes more, or until the crabs are cooked through. Carefully remove the crabs with tongs; then add the shrimp and cook for 2 to 3 minutes, or until just opaque. Drain immediately. Serve the crab, shrimp and potatoes with melted butter, toasted bread and lemon wedges.
SHRIMP PHYLLO TARTS
These little spicy/tangy appetizers are a breeze to make using frozen phyllo shells. I like to boil my shrimp in Zatarain's crab boil for 3 minutes which gives the shrimp a little extra "zing". The serving size is 2 per person, but I've found from experience most people eat 3-4 so you may want to adjust accordingly.

- Preheat oven to 400°F. Place a sheet of phyllo on a flat surface such as a cutting board; spray lightly with spray and sprinkle with 1 tbsp sugar. Cover with another sheet of phyllo. Repeat three times, finishing with spray and sugar. Using a pizza cutter or a very sharp knife, cut the phyllo into 3-inch squares. Place each square in a cup on a muffin tin, pressing in gently and fanning phyllo layers so corners don't overlap. Bake 7 to 10 minutes or until golden. Whip yogurt in a small bowl. SOUR CHERRY TARTLETS

- Make pastry:
- Mix first 4 ingredients in medium bowl. Add butter. Rub in with fingers until butter is size of small peas. Add egg; mix until dough comes together. Gather into ball. Shape into 5-inch-long log. Wrap in waxed paper; chill 1 hour.
- Make pastry cream:
- Whisk yolks and 1/4 cup sugar in heavy small saucepan. Whisk in flour, then milk. Add lemon peel. Bring to boil over medium-high heat, whisking constantly. Remove from heat. Whisk in vanilla. Transfer to bowl. Press plastic wrap onto surface. Chill until cold, about 1 hour. (Pastry and pastry cream can be made 1 day ahead. Keep chilled.)
- Preheat oven to 375°F. Cut dough into twenty 1/4-inch-thick slices. Roll out 1 dough slice between sheets of floured plastic wrap to 3 1/2-inch round. Transfer to 3-inch-diameter tartlet pan with 1/2-inch-high sides. Repeat with 9 more dough pieces and tartlet pans.
- Remove lemon peel from pastry cream. Spoon 1 tablespoon pastry cream into each crust. Top each with 2 teaspoons jam. Roll remaining 10 dough pieces out between sheets of floured plastic wrap to 3 1/2-inch rounds. Place 1 round atop each tartlet. Pinch dough edges together to seal.
- Place tartlets on baking sheet. Bake until pastry is golden on top, about 30 minutes. Using small knife, loosen tartlets from pans. Remove from pans. Transfer to rack; cool. Sift powdered sugar over.
FRUIT TARTLETS IN PISTACHIO PHYLLO SHELLS

- Preheat oven to 375°F and butter four 1/2-cup muffin cups.
- Melt 2 tablespoons butter and cool. In a shallow baking pan toast pistachios in middle of oven, shaking pan occasionally, until golden, about 10 minutes. Cool nuts and finely chop.
- On a work surface stack phyllo sheets and cut out four 6-inch squares (for a total of 12 single-sheet squares), discarding scraps. Stack phyllo squares between 2 sheets of wax paper and cover with a kitchen towel. Line each buttered muffin cup with 1 phyllo square, pressing into bottom (don't worry if pastry rips). Fold in pastry overhang and brush inside and edges with some melted butter. In a small bowl stir together 1 tablespoon nuts and 1 tablespoon brown sugar. Sprinkle bottom of each pastry shell with ‚ teaspoon mixture. Make 2 more layers of phyllo, butter, nuts, and sugar in same manner. Bake shells in middle of oven until golden brown, about 10 minutes. Carefully lift shells out of pan and transfer to a rack to cool slightly.
- While shells are baking, cut peach into 1/2-inch-thick wedges and halve wedges crosswise. In a bowl toss peach and berries with honey, lemon juice, and vanilla and let stand at room temperature, stirring occasionally, at least 15 minutes.
- In a small bowl stir together sour cream and remaining brown sugar to taste. Just before serving, divide sour-cream mixture among shells and with a slotted spoon fill shells with fruit.
- Drizzle fruit and serving plates with some of remaining fruit juices in bowl. Sprinkle remaining nuts over tartlets.
MUSHROOM PHYLLO TARTLETS
These are really easy, can be made ahead, frozen etc... and are quite tasty warm or cold. If you are intimidated by phyllo dough (don't be, phyllo is your friend, and very forgiving) you could use Crescent dinner rolls, rolled and cut into squares, for the pastry.

- Heat oven to 350°F.
- Melt 2 tbsp butter in a large skillet over medium heat.
- Add mushrooms, shallots and garlic & flour; mix well.
- Cook 5 minutes or until tender, stirring frequently.
- Add cream and cheese; mix well.
- Cook 2 to 3 more minutes or until most of the liquid has evaporated, stirring frequently; set aside.
- Melt remaining butter in a small dish in microwave.
