ORANGE-CRANBERRY BUNDT CAKE

Steps:
- Preheat the oven to 350 degrees F. Grease and flour a bundt pan.
- Mix together the orange zest and juice, orange liqueur and eggs in a large bowl and set aside. In a smaller bowl, toss the cranberries with 1 tablespoon of the flour and set aside.
- In a stand mixer with a paddle attachment, add the sugar, baking powder, salt, baking soda and remaining 2 1/2 cups flour and mix to combine. On low speed, slowly add the butter 1 tablespoon at a time and continue to mix until a pea-sized crumble texture is achieved. Turn the speed to medium and slowly stream in the egg/orange mixture until combined. Increase the speed to medium high and beat until light and fluffy, about 2 minutes. Gently fold in the cranberry mixture. Pour the batter into the prepared bundt pan and smooth out the top.
- Bake until a cake tester inserted in the cake comes out clean, 50 to 55 minutes. Let cool in the pan for 20 to 30 minutes, then remove the cake and serve.
EASY CRANBERRY AND APPLE CAKE

- Preheat the oven to 325 degrees F.
- Combine the cranberries, apple, brown sugar, orange zest, orange juice, and 1 teaspoon of the cinnamon in a medium bowl. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs on medium-high speed for 2 minutes. With the mixer on medium, add 1 cup of the granulated sugar, the butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.
- Pour the fruit mixture evenly into a 10-inch glass pie plate. Pour the batter over the fruit, covering it completely. Combine the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, until a toothpick inserted in the middle of the cake comes out clean and the fruit is bubbling around the edges. Serve warm or at room temperature.

- Preheat oven to 350 degrees; prepare bundt or tube pan by greasing & flouring.
- Mix together flour. salt & baking powder.

APPLE CRANBERRY FILLED WALNUT CAKE ROLL

- Preheat oven to 375 degrees F. Grease a jellyroll pan, line with waxed paper, and grease the paper.
- Combine apples, cranberry sauce, sugar, water, apple juice, lemon juice, cinnamon, and nutmeg in a non-reactive heavy-bottomed saucepan. Cook over medium heat, stirring until mixture thickens, about 6 minutes. Set aside to cool.
- For cake, sift together flour, baking powder, and salt on a piece of waxed paper, set aside. Beat eggs in medium bowl for 2 minutes. Gradually beat in sugar until thick and pale, about 5 minutes. Stir in water and vanilla. Fold in flour mixture and ground walnuts.
- Pour into the prepared pan spreading evenly. Bake for 12 minutes.
- Loosen cake around the edges with a knife. Invert the pan onto a clean towel dusted with powdered sugar. Remove from the pan. Carefully peel away waxed paper. Starting at short end, roll cake and towel together. Cool on a wire rack about 30 minutes.
- When cake is cool, unroll carefully. Spread roll evenly with prepared fruit filling, leaving a 2-inch border along the short side, which will be the outside seam. Reroll the cake from short end, using towel as an aid. Place roll, seam side down, on serving platter.
- Whip together frosting ingredients. Place into a pastry bag fitted with a star tip. Pipe whipped frosting around edges and on top of cake roll.
APPLE-CRANBERRY BUNDT CAKE (EGG-FREE, FAT-FREE)

- Preheat oven to 350°F.
- Prepare a 10-cup bundt pan by spraying with fat-free cooking spray and lightly dusting with flour.
- In a large bowl, stir together sugar and applesauce. Into a small bowl, wisk together cornstarch and warm water (the mixture will be quite dense but smooth). Add cornstarch mixture to applesauce mixture and whisk until combined. Then whisk in non-fat milk and vanilla.
- Combine dry ingredients in a separate bowl and whisk together well. Slowly add into wet mixture, whisking until thoroughly combined.

- Preheat oven to 350 degrees F (175 degrees C). Spray 9 or 10 inch Bundt pan lightly with cooking spray and dust with flour.
- In a medium bowl, combine flour, baking soda, salt, cinnamon, and allspice.
- In a large mixing bowl, cream 1/2 cup butter, white sugar, and 3/4 cup brown sugar. Mix in eggs, 1/3 cup rum, and vanilla. Mix in flour mixture in three additions alternately with applesauce, ending with flour. Stir in dried cranberries. Spoon batter into prepared pan.

- Beat the oil, sugars and eggs in a large mixing bowl.
- Combine the next six ingredients in a separate bowl.

Wonderfully rich and moist with a "jam" like center. I used the half white flour and half all purpose like the recipe called and it came out great. I didn't have cranberry juice so I used orange juice. This will be a regular for Thanksgiving from now on. I got the recipe from the December issue of Eating Well magazine.

- Preparing filling:.
- Combine cranberries, brown sugar, juice and allspice/pumpkin pie spice, in a small nonreactive saucepan. Cook over medium-high heat, stirring until the sugar is melted. Continue to cook, stirring occasionally until most of the cranberries have burst, 5 to 6 minutes. Set aside.
- Preheat oven to 350 deg. F. Coat a 10-cup Bundt or tube pan with cooking spray.
- Preparing Cake:.
- Whisk whole-wheat flour, all purpose flour, baking powder, salt and baking soda in a medium bowl. Combine yogurt and vanilla in a small bowl.
- Beat butter, oil and granulated sugar in a large mixing bowl with an electric mixer on medium-high speed until well combined. Add eggs, one at a time, beating after each addition until just incorporated. Scrape down the sides. Add the dry ingredients alternately with the yogurt mixture, starting and ending with the dry ingredients and beating on low speed just until incorporated after each addition, scraping down the sides as necessary. Fold in apple (or pear) and walnuts.
- Spoon half the batter into the prepared pan. Spoon the filling on top of the batter leaving a little border of batter on both sides. Top with the remaining batter and smooth the top.
- Bake the cake until light brown and toothpick inserted in the center comes out clean, about 1 hour (check at 55 min.). Let cool in the pan for about 15 minutes. Run a knife around the edges and center, then turn out onto a wire rack to cool completely for about 2 hours.
- Preparing Glaze:.
- Place confectioners' sugar in a small bowl. Add 1 tablespoon water and stir until smooth. Add more water as needed to achieve a thick glaze consistency. Paint the glaze over with a pastry brush.
