Steps:
- Place beans in a Dutch overn or soup kettle.
- Add water to cover by 2".
- Bring to a boil.
- Boil for 2 minutes.
- Remove from heat.
- Cover and let stand for 1 hour.
- Drain beans and discard liquid.
- Return beans to Dutch oven.
- Add cranberry juice.
- Bring to boil.
- Reduce heat.
- Cover and simmer for 1 hour or until the beans are almost tender.
- Drain, reserving cranberry liquid.
- Palce beans in a 2 and 1/2 qt casserole or bean pot.
- Add remaining ingredients and 1 and 1/2 c cranberry liquid.
- Cover and bake at 350 for 3 hours or until beans are tender and of desired consistency, stirring every 30 minutes.
- Add reserved cranberry liquid as needed.

This is another one of those recipes where I just had to try it because it sounded so strange. If you like the taste of cranberry sauce, I think you will enjoy this. The cranberry taste is fairly subtle.

MAMA NEELY'S BAKED BEANS
Pat: Every Fourth of July, Mama Neely made her famous baked beans: she'd brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We've found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama's way is best.

- Preheat the oven to 350 degrees F. Heat the oil in a Dutch oven set over medium- high heat. Once it's hot, toss in the onion and garlic, and saute until the onion is tender, about 3 or 4 minutes. Add the sausage, and continue to cook until the meat has browned, about 4 minutes more. Stir in the pork and beans, ketchup, molasses, sugar, vinegar, mustard, and hot sauce. Bring the beans up to a simmer, then put in the hot oven for 45 minutes, uncovered, until the mixture is bubbly and thick.
ROCKIN' BAKED BEANS

- Coat an oven-safe pot with olive oil and put over medium-high heat. Add the onions, peppers and crushed red pepper flakes. Season with salt, to taste, and cook until the onions and peppers are soft and aromatic, about 8 to 10 minutes. Add the garlic and cook for another 2 to 3 minutes.
- Preheat the oven to 375 degrees F.
- Add the sausage and use a spoon to help break it apart. When the sausage is brown, add the tomato paste and cumin and cook for 4 to 5 minutes. Stir in the Dijon, apple cider vinegar, and molasses, then add in the beans and 1 1/2 cups of water. Taste and season with salt, if needed. Bring to boil, then reduce the heat and simmer the beans until they are nice and thick and taste really good, about 15 to 20 minutes. After 20 minutes, add the remaining cup of water.
- Top the beans with the bacon slices. Bake until the beans are nice and thick and the bacon is crispy, about 25 to 30 minutes. Remove from the oven and serve.
FRENCH CANADIAN (NOT BOSTON) BAKED BEANS
Steps:
- Pour the beans onto a plate, and pick-over looking for bad beans, or stones. Place beans in bowl, cover with water by at least 2 inches, and soak overnight.
- Preheat oven to 250 degrees F.
- Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. Bake covered, approximately 8 hours. Check each hour to see if water needs to be added. You can add more maple syrup in place of water for flavor, if desired.
- Serve the beans with brown bread, franks, or ham. For breakfast, serve with eggs, bacon, and home-fries.
CRANBERRY BEANS IN OLIVE OIL

- Wash and pick over the beans. Place in a pot, cover generously with water and bring to a boil. Reduce the heat to medium-low and cook, covered, until the beans are done in the center but not too soft, about 1 hour. Drain and rinse in a colander.
- Heat the oil in a large skillet, add the onions, season with salt and pepper, and saute until onions are soft, 5 to 7 minutes. Add the garlic and saute another minute to release the aromas. Stir in the beans, and saute until beans are heated through, 3 to 5 minutes. Stir in the parsley, adjust the seasonings, and remove from the heat.
- Transfer beans to a large serving bowl, drizzle with additional olive oil and serve with lemon wedges. Serve warm or room temperature.

BAKED BRANDIED CRANBERRIES

- Place the cranberries in a glass 13x9x2-inch baking dish.
- Cover the cranberries with the 2 cups of sugar, but do not stir.
- Cover baking dish tightly with aluminum foil.
- Bake 50-55 minutes in a 350º oven; until the cranberries burst.
- Remove baking dish from the oven.
- Remove the foil and stir.
- Let stand 10 minutes, then drizzle with the brandy.
- Stir in the 1/3 cup of sugar.
- Cool to room temperature; then refrigerate.

- Place beans in a large bowl and cover with 4 cups water; let soak overnight.
- Drain beans and transfer to a medium saucepan; cover with water by 2 inches. Bring water to a boil, reduce heat and skim foam from surface. Continue simmering beans until tender, 30 to 45 minutes, adding more water as necessary. Season beans with salt and set aside to cool in their liquid.
- Preheat oven to 350 degrees. In a medium, heavy-bottomed skillet heat 1/4 cup of olive oil over medium heat. Add onion, carrot, and celery; cook until tender, about 10 minutes. Add garlic and sage, and season with salt; let cook 5 minutes. Stir in tomatoes; cook 5 minutes more and remove from heat.
- Drain beans, reserving liquid. Transfer beans to skillet with vegetables; stir to combine. Pour bean mixture into a medium gratin or baking dish; season with salt. Add enough bean cooking liquid to almost cover. Drizzle with olive oil and top with toasted breadcrumbs.
- Transfer gratin dish to oven and bake for 40 minutes, checking occasionally to make sure the gratin has not dried out. If necessary spoon a little of the bean cooking liquid into the side of the gratin, to avoid wetting the breadcrumbs.

KERI'S BAKED BEANS (THE WORLD'S BEST!)
I was trying to find a good baked bean recipe to bring over to a friends house for a party. I love barbecue, and I frequent a website called The Smoke Ring. The members on the site kept saying over and over again that Keri's Baked Beans were the best, so I decided to give them a try. Let me tell you, they are the BEST. - Brown pork sausage and remove from pan. When cooled, break into smaller bits.
- Brown bacon and remove from pan.
- Saute onion and green pepper in bacon grease and remove from pan.
- Mix all ingredients into a large baking dish and bake at 325º for 1 hour, or simmer on stove top in large pot for 30 minutes if you don't have time to do them in the oven.
- This is a rather spicy recipe due to the chipotle/cayenne powder. Feel free to leave it out if you'll be feeding those who prefer a less spicy taste.

- Cover beans with water in a large pot and allow to soak for 6 to 8 hours. Drain and rinse under cold running water.
- Cover soaked beans with fresh water about 3 inches above the top of the beans and bring to a boil over medium-high heat. Add bay leaf and 1/2 of the bouillon cube. Reduce heat and simmer until beans are al dente, about 45 minutes.
- Drain beans and reserve the liquid. Discard bay leaf.
- Heat olive oil in a large pot. Add onion and bell pepper; cook until soft and translucent, about 5 minutes. Add drained beans and stir to combine. Add remaining 1/2 bouillon cube, tomato sauce, tomato paste, sugar, mustard, vinegar, chipotle flakes, and paprika. Stir and simmer until sauce has cooked down and beans are soft but not mushy, about 20 minutes. Add some of the reserved bean stock if necessary to keep it from burning, but not too much to make it soupy. Serve warm.

- Wash leek greens well in a bowl of cold water, then lift out and drain well. Tuck bay leaves and herb sprigs into leek greens and tie tightly in a bundle with string to make a bouquet garni.
- Bring water, bouquet garni, onion, and chile to a boil in a 5-quart heavy pot and simmer, partially covered, 20 minutes. Add beans and simmer gently, stirring occasionally and adding 1 tablespoon kosher salt toward end of cooking, until tender, about 25 minutes for fresh beans or 50 minutes to 1 1/4 hours for soaked dried. Discard bouquet garni, and discard onion and chile if desired.
- Just before serving, transfer beans with a slotted spoon to a dish and season with kosher salt. Drizzle with oil and sprinkle with mint and thyme.
