CREAM CHEESE CANDIES

Steps:
- Mix cream cheese and extract until blended. Beat in 1-1/2 cups confectioners' sugar. Knead in remaining confectioners' sugar., Shape into 1/2-in. balls. If desired, roll in sugar. Place on waxed paper. Flatten with a fork. Let stand until firm, 1-2 hours. Store between layers of waxed paper in an airtight container in the refrigerator.

These little candies are so easy to make and a staple for weddings, parties, and candy trays. Cook time is hardening time.

Steps:
- In a mixing bowl, combine cream cheese and extract.
- Beat in 1 1/2 cups confectioners' sugar.
- Knead in remaining confectioners' sugar until smooth.
- Shape into 1/2 inch balls.
- Roll in colored sugar if desired.
- Place on an ungreased baking sheet and flatten with a fork, or shape with a candy mold.
- Let stand for 1 hour to harden.
- Store in an airtight container in the refrigerator.
- Can also freeze these for up to 3 months in an airtight container on sheets of wax paper.

BUTTERCREAM CANDIES
These are little Chocolate Covered Buttercream Balls that are similar to a truffle except the filling is made from cream cheese and best of all these are pretty easy too. Recipe came from the inside of a package of butter.

Steps:
- Filling:.
- Combine butter and cream cheese in a large bowl and beat at medium speed until smooth.
- Add vanilla and continue beating until mixed well.
- Reduce Speed to low and gradually add all of the powdered sugar and blend well.
- Roll mixture into 1-inch balls and place onto waxed or parchment paper - lined cookie sheets. Cover Loosely and refrigerate until firm. (2 hours or overnight)**** If dough is too soft to handle, refrigerate it for about an hour or until it's firm enough to roll into balls.
- For Coating: In a 1 quart saucepan or double broiler, melt chocolate chips and shortening over low heat, stirring constantly, until smooth. Remove from heat and keep warm.
- Poke a toothpick into each buttercream and dip buttercreams into chocolate mixture, let excess drip off, and placed onto parchment/waxed paper - lined cookie sheets and refrirgerate until coating sets. (at least 1/2 hour)Remove toothicks and serve.
- Store refrigerated. Cook time is chill time.

We usually make this candy for Christmas,but I have also made this candy for Baby and Bridal showers. Very Creamy and smooth, Delicious!

Steps:
- Combine Cream cheese and Butter in heavy bottom sauce pan. Stir over low heat till both are soft. Add Powdered sugar. Stir until well combined. Add flavoring. Seperate candy into small amounts and add food coloring to each amount.
- Shape into small balls and press with a fork. Or be creative and make different shapes or use candy molds. Put onto wax paper and let dry till set. Put into a covered container.
- I make mine with peppermint flavoring or Butter flavoring. Very rich and delicious.
- Servings vary depending on how big or small you make the mints.

CREAM CHEESE MINTS
This recipe was given to me by a coworker. I normally don't like mints, but these are great. She says that the batter is a little dry, but never add more liquid than what is needed. She also said the light cream cheese doesn't work well. She uses candy molds for her mints.

Steps:
- Mixture will be dry.
- Mix ingredients in a bowl (best if use dough hooks on your mixer).
- Remove from bowl and knead.
- You may add food coloring if you desire.
- Roll in small balls and then roll the balls in granulated sugar.
- Press into molds or slightly flatten balls.
- Remove from mold.
- Lay on wax paper to dry at least overnight.
- Turn over and dry on other side.
- Usually dry 24 hrs on each side.
- If keeping longer than a couple of weeks, they need to be frozen.

Steps:
- In a mixing bowl, beat cream cheese until soft.
- Add desired food coloring and flavoring.
- Gradually add icing sugar, mixing and kneading until mixture has a putty-like consistency.
- If you want a firmer texture, just add more icing sugar.
- Roll mixture into balls the size of a marble.
- Dunk one side of ball in a small amount of sugar, granulated or the coloured crystal sugar used on xmas cookies; try to match the colour with the colour and flavour of the balls.
- Place ball, sugar side down, into cavity of a plastic candy mold, pressing from edge of mold to centre.
- Immediately unmold onto a waxed-paper lined tray.
- To make chocolate candies, add 3 tsp cocoa and 1/2 tsp of pure vanilla extract.
- Let candies stand out in the open to harden for at least 24 hours to become firm, then place in freezer or refrigerator.

Could also be the fact that this is the easiest candy recipe around! If stored in airtight container, these can be frozen for a couple months.
