CREAM CHEESE STUFFED GARLIC BURGERS
I got this recipe from a grilling cookbook. I thought I was in burger heaven when I took a bite of this hamburger. The cream cheese just seeps out of these garlic burgers. Mmmm... their good!

Steps:
- Put hamburger meat in a bowl and add garlic, salt and pepper.
- Mix together with your hands until just blended.
- Make 12 patties no more than 1 inch thick.
- Spread cream cheese in the center if 6 patties, approximately 1 oz. per patty. (Don't spread all the way to the edge).
- Put remaining patties on top of the cream cheese and seal the ends all the way around with your fingers. (Don't pinch too hard or the ends will be too thin).
- Grill on high to your desired taste. (About 8-10 minutes).
- Note: It takes a little longer than normal for the meat to cook inside because of the cream cheese.

- 1. Divide the ground beef into eight equal portions and lightly form into balls. Flatten the meat into patties and press a divot into 4 of them - these will be the bottom of the burgers. Place 1 tablespoon of the herb cheese into each divot. Cover with a second patty, pressing to seal around the cheese to the edges and taking care there are no air pockets. Repeat to make 4 burgers total.
- 2. Heat a griddle or grill over medium-high heat. Brush lightly with oil. Evenly sprinkle the patties all over with salt and pepper. Cook the burgers, turning once, until well-browned and an instant-read thermometer inserted sideways into the burger registers 145 degrees F, 8 to 10 minutes. Put the burgers on the bottom buns, top with lettuce and tomato. Cover with the top buns and serve.

STUFFED ROASTED GARLIC PASTE AND BLUE CHEESE HAMBURGERS

- Preheat the grill. In a bowl, mix the meat. Form 4 (3-ounce patties) by using a scoop. Push them down and make little indentations in the middle to hold the flavors. Place a teaspoon of garlic paste in the middle of each patty and add a little chunk of blue cheese tucked right on top of the garlic paste. Add a good twist of black pepper. Take another 3 ounce scoop of meat, make it flat in your hand and place right on top of the other half.
- Take your fingers and just seal the 2 patties up and refrigerate until you are ready to grill.
- Meanwhile: Split the pieces of bread, and pull out some of the soft center to make a hole for the burger. Place the bread face down on the grill to toast.
- Place the burger in the bread, and top with your favorite condiments.
- Preheat the oven to 375 degrees F.
- Heat an ovenproof saucepan on the stovetop. When it's hot, add the extra-virgin olive oil. Next, add the cloves and season with salt and pepper. Let the cloves begin to caramelize, then put the pan in the preheated oven.
- Roast cloves in the oven for about 30 minutes or until they are nicely browned. (Starting the garlic on the stove will save at least 20 minutes of roasting time). Let cool.
- When cool enough to handle easily, put the roasted garlic into a small bowl, mash with a fork and add oil from the pan until a paste forms. Store, tightly covered, in the refrigerator, for up to 1 week.
MOLTEN CHEESE-STUFFED BURGERS

- Heat the oil in a frying pan over a medium heat and fry the onion with a good pinch of salt for 15 mins until soft and translucent. Add the pancetta and cook for 5 mins more, then add the garlic and thyme, and cook for 2 mins. Remove from the heat and leave to cool for 15 mins.
- Tip the mince into a large bowl. Massage with your hands for 5 mins to tenderise the meat, then add the cooled onion mix, the breadcrumbs and egg yolk. Season generously. Divide evenly into four, weighing for accuracy, if you like. Mix the cheddar and mozzarella together. Form the beef portions into patties, patting each into a 10cm round. Divide the cheese mixture into four, and, in your hands, form each portion into a firm ball, then press into a roughly 4cm disc. Working one at a time, put a cheese disc into the centre of a beef patty, then bring the meat around the cheese to cover. Lightly pat with the palm of your hand to flatten slightly, then chill, covered, for at least 30 mins or up to 48 hrs.
- Make the sauce by whizzing the mayonnaise, mustard and herbs together in a small food processor. Stir through the gherkins, then cover and chill until ready to use.
- Light the barbecue. When the flames have died down, grill the burgers on each side for 4-5 mins until charred (if you don't have a barbecue, see tip, below). Wrap individually in foil and leave on the barbecue for 5-7 mins so the cheese centre melts.
- Grill the buns, cut-side down, for 1-2 mins until toasted. Spread all the cut sides with the sauce, then fill with the beef patties, lettuce, tomatoes and crispy onions.

GARLIC LOVER'S BURGER
If you're like me, you just can't get enough of that beautiful bulb, garlic. This recipe produces a savory burger with an interesting flavor that is sure to please the palate. This recipe should work equally well with ground turkey, though I haven't tested that. Please note the variations listed in the ingredients and directions. Note: I *LOVE* herbs, so if the cilantro, garlic, etc., seems a bit strong to you, vary to your taste.

- Mix all ingredients together (except ground pepper) and form into patties of your preferred size and thickness.
- Grill burgers to your preferred doneness (rare to well-done). Crack fresh ground pepper over the burgers as they grill.
- If desired, salt burger to taste and top with cheese in the last minute or so of grilling so that it melts down over the burger. Burger already has soy sauce, so I find that salt is unnecessary.
- Place burger on your favorite bun, add toppings, and dig in!
- Options: Add any of the optional ingredients to the mix before grilling. Fresh minced onions add alot of flavor, but not everyone likes onions. Adding black beans is an easy way to bulk up the mix and add some great fiber and nutrition. You might wish to try just half a can the first time, if you're unsure you'll like them. For burgers that verge on meatloaf, add about 1/4 cup of spaghetti or pizza sauce to the mix (and/or top the formed patties with additional sauce when grilling).

KITTENCAL'S JALAPENO-CREAM CHEESE STUFFED HAMBURGERS
You may omit the jalapeno if desired and you may use whatever else you want to flavor your burgers with just do NOT omit the cream cheese in the middle and add in the onion soup mix and garlic to the hamburger mixture --when I make these I use 2 scant tablespoons of cream cheese for each burger, you may want to reduce to 1 tablespoon if desired --- these may be fully prepared covered with plastic wrap and refrigerated until ready to grill --- these burgers are very good!

- Set grill to medium heat.
- Oil the grill grates.
- In a bowl stir together the softened cream cheese with jalapeno pepper; mix until combined.
- In a bowl combine the ground beef with onion soup mix and garlic, then add whatever other seasonings you desire, egg, breadcrumbs, Worcestershire sauce, etc (do not add in any extra salt to the ground beef mixture as the dry onion soup mixture already has enough salt).
- Divide into 16 equal portions.

- Spoon 2 tablespoons of the cream cheese into the center of 8 patty (do not spread out the mixture).

- Preheat a grill for medium heat. When hot, lightly oil the grate. In a medium bowl, stir together the jalapenos and cream cheese.

- In a bowl, combine beef and 1 teaspoon garlic powder. Shape into six thin patties. Pan-fry until no longer pink. Meanwhile, cut bread in half lengthwise.
