- In a large saucepan, combine the water, sugar, vanilla and cinnamon; add peaches. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until peaches are tender. Remove peaches with a slotted spoon; cool to room temperature. Discard cooking liquid. Halve, pit and peel peaches; refrigerate until chilled., In a small bowl, beat the cream cheese, confectioners' sugar, chocolate chips and orange juice until blended. Pipe or spoon into peach halves. Sprinkle with additional cinnamon.

ENDIVE SPEARS STUFFED WITH HERBED GOAT CHEESE

- In a medium bowl, cream the goat cheese with the back of a kitchen spoon. Add the cream, rosemary, thyme, parsley, chives, and pepper and mix until smooth and creamy. Add more cream if the cheese is particularly thick. Cover and refrigerate until ready to use. Bring to room temperature before assembling.
- Core the endive and separate into spears. Spoon the filling into 20 endive spears, filling each spear about halfway. Assemble on a plate and sprinkle with the paprika, if using. Cover and refrigerate.
STUFFED PEARS
My husband loves red pears and this is a recipe he came up with. My husband prefers to cut the top off of the pear and stuff them from the top. I, however, feel it's easier to slice the pears in half lengthwise.

Steps:
- Preheat oven to 375°F.
- Slice pears in half lengthwise and scoop out a little of the flesh to make bowls.
- Brush pears with oil. Sprinkle with salt, pepper and thyme.
- Roast pears for 15 minutes and then take out of the oven.
- Combine cheese, bacon and nuts. Fill pears with mixture.
- Put the pears back in the oven and roast 15 minutes more.

- In a large skillet, heat butter over medium heat. Add pears and 2 tablespoons brown sugar; cook and stir until pears are tender, 4-6 minutes. In a bowl, mix cream cheese, cranberries and pecans., Place half the bread slices in a greased 13x9-in. baking dish. Layer with cream cheese mixture, pear mixture and Brie. Top with remaining bread slices. Whisk together next 5 ingredients and remaining brown sugar. Pour over bread. Refrigerate, covered, overnight., Preheat oven to 375°. Remove from refrigerator while oven heats. Bake, uncovered, until top is golden brown, 35-40 minutes. Let stand 10 minutes before serving. If desired, serve with syrup.

- Stir juice cocktail into dry gelatin mixes in large saucepan. Bring to boil on medium-high heat, stirring frequently until gelatin is dissolved.
- Add pears; partially cover pan with lid. Reduce heat to medium-low; simmer 25 min. or just until pears are tender, stirring every 5 min. Remove pears from liquid; discard liquid or reserve for other use. (See Tip.)
- Refrigerate 1 hour. Cut pears in half. Using the tip of a paring knife or a melon baller, carefully remove seeds. Mix cream cheese with remaining ingredients. Spoon 2 Tbsp. cream cheese mixture into center of each pear just before serving. Refrigerate leftovers.

- Peal the pear and slice it in half lengthwise. With a small spoon, scoop out the core and seeds, leaving an indentation for the stuffing. Place the pears in a baking dish.
- In a small bowl, mix together the dried cranberries, walnuts, and coat cheese. Divide evenly among the pear halves, mounding it on top of the indentation.
- Whisk together the apple cider and maple syrup. Pour over and around the pears.
