UNBAKED COOKIES
A very uninspired name, that's for sure, but I bet you'll remember them anyway once you've tried them! A recipe from 'The Mennonite Treasury of Recipes,' this is still a favourite among every Mennonite family that I know! My mom never wanted to make these for me as a kid, I guess because they're terribly sweet (and you know how bad sugar is for kids!!), but now that I don't live under my parents' roof anymore, I can make them as often as I want. Problem is, between my husband, daughters and I, even a double batch doesn't last very long!! I usually do use a little less sugar because mom was right, they are quite sweet. Freezes really well -- if they make it to the freezer! (Yield is approximate; depends how big you make your cookies.)

Steps:
- In a saucepan over medium heat, bring first 3 ingredients to a boil.
- Cook for 3 minutes, stirring constantly. Remove from heat.
- In a large mixing bowl, combine remaining ingredients and add milk/sugar/butter mixture.
- Mix thoroughly and drop by tablespoons onto wax paper-lined cookie sheets to harden. Place in fridge or freezer to speed the process.
CREAM OF WHEAT PUDDING (FROM THE MENNONITE TREASURY OF RECIPES)
This has been my Mom's specialty for as long as I can remember. This is another recipe that people not from Mennonite background look at and just shake their heads! (Pudding from CEREAL!!??!!)However, to me, it remains a childhood memory and a traditional Mennonite dish that reminds me of my heritage. My mom always served this with strawberry or raspberry sauce.

Steps:
- Beat egg whites until foamy.
- Add 2 tbsp sugar and continue beating until meringue stands in soft peaks and then set aside.
- Heat milk and salt to a full boil, slowly sprinkle in cream of wheat, stirring constantly until mixture thickens.
- Beat sugar and egg yolks and very slowly add to hot mixture.
- Continue cooking on low heat for 3 minutes longer.
- Lastly, fold hot mixture into meringue and add vanilla.
- Pour into serving dishes and cool.
- Serve with custard sauce or fruit sauce.

GERMAN PANCAKES (FROM THE MENNONITE TREASURY OF RECIPES)
These are very thin pancakes and they are a real favourite of my kids! I usually have to make a double recipe to make sure my husband and I will get some too! My kids love these and in Mennonite tradition these are eaten as a supper! Funny eh?

Steps:
- Mix all together with a mixer or by hand until free of lumps.
- Spray frying pan with "Pam" and heat over high heat until hot.
- Reduce heat and pour approx 1/3 cup of batter in center and tilt to cover entire bottom of pan.
- When small bubbles form and bottom begins to brown, flip and cook other side.
- We like to eat these sprinkled with sugar and rolled up.
CREAM OF WHEAT PUDDING

However, I find that it's difficult to keep the egg white from curdling at least a little bit when added into the hot cereal, so you may find soft little nubs of egg white throughout. If this won't bother you, add the whole egg. Using just the egg yolk seems to keep it a little smoother."

Steps:
- Bring the milk, water, and salt to a boil, then immediately reduce to a simmer. Whisk in the Cream of Wheat, whisking as you add it bit by bit. Turn the heat very low and let it simmer for about two minutes or until thickened.
- While it's simmering, whisk the sugar and egg yolk together in a small bowl, along with about a tablespoon of water to thin it. When the Cream of Wheat has thickened, put a couple big spoonfuls in the bowl with the egg yolk and whisk to temper the egg. Whisk the egg back into the pot of Cream of Wheat. Continue cooking on low heat for another couple minutes. Do not let it boil.
- Stir in the vanilla and a little grated nutmeg and serve promptly. If you're feeling indulgent, top with a splash of milk and a small pat of butter.
ROLL KUCHEN (FROM THE MENNONITE TREASURY OF RECIPES)
Oh, the memories of this recipe! This is a favourite Mennonite Tradition for a summer meal. This is my mom's favourite recipe for Roll Kuchen. I remember fondly the time my parent's spent making this and how they doubled and tripled the recipe for family gatherings. To non-Mennonites the idea of having these with watermelon strikes them as very strange--Watermelon and doughnuts??!!?? But for me and my family it is a food that we enjoy and look forward to having! Cook time is per batch of 4-6 roll kuchen.

Steps:
- Beat eggs well.
- Put into a 1 cup measuring cup and fill with milk. (This may end up being more or less than the 3/4 cup listed in the ingredients.)
- Add to remaining ingredients and mix to combine.
- Roll out very thin and cut into strips.
- Cut again so that pieces are approximately 1 inch long by 3 inches wide.
- Cut a slit in the middle and pull one end through to knot it.
- Fry four to six at a time, in deep hot fat until golden brown.
- Serve with Watermelon!
- A Mennonite summer tradition!
