FONDUE BROTH

Denis and I have had the most wonderful evenings with friends over our fondue pot. Lots of wine and great conversations. Some evenings lasting 4 or 5 hours. Hope you will all try this recipe and enjoy it as much as we do!

Steps:

  • In a bowl dredge the cheese in flour. Rub the inside of a caquelon or other fondue pot with halved garlic clove and add wine. Heat on stovetop until warm but not boiling. Add a little lemon juice. Begin to add cheese by handfuls, stirring constantly with a wooden spoon until cheese melts to a creamy sauce consistency. Add Kirsch and season with salt, pepper and nutmeg. Let mixture come to a boil, then take to table and set over a lighted burner. Serve with toasted bread cubes -- either Swiss peasant bread or French or Italian.;

1 pound Emmenthaler cheese, shredded
3 tablespoons flour
Garlic clove
1 1/2 cups white wine, preferably Swiss Neuchatel or other dry, delicate white such as Chablis
1 tablespoon lemon juice
3 tablespoons Kirsch
Salt, pepper and nutmeg

Steps:

  • Slice onion in half. Stick cloves into the onion. Roughly chop all other vegetables. Add all veges and spices to a stock pot filled with the water and soup bones. Bring to a boil, then simmer for one hour. Add the wine. Simmer for 1 to 3 hours until the quantity of liquid is down by half. Strain out all vegetables. Salt to taste. TO SERVE: Place stock in a fonue pot and keep over heat. Place raw beef and vegetables on platters to pass at table. Serve individual ramakins of sauce for dipping, such as bernaise and port wine reduction. After the meal, the broth can be frozen and reused once more, or used as a soup base.

1 large onion
1 green cabbage
2 medium leeks
3 carrots
3 celery stalks
soup bones (if desired)
4-8 cups of water
whole cloves
whole peppercorns
whole garlic cloves, to taste

AUTHENTIC SWISS FONDUE

A few years ago, while travelling through Freiburg in Switzerland, I tasted the best cheese fondue that I had ever had or have since. Unlike most of the uninspiring fondues that I had sampled before, this was a delightful blend of subtle flavours that complimented each other perfectly. I have prepared this dish a dozen or so times now to family and friends and it has never let me down.

1/2 lemon, juice of
150 g emmenthaler cheese (grated or thinly sliced)
150 g gruyere cheese (grated or thinly sliced)

pepper
nutmeg (to season)
